there is many way to do it, for exemple duplicate the leaf and in edit mode slect the leaf on top and delete them than rotate rest of leaf until you get the best result.
of course there is too many polygons, but my idea it's show you how modifiers can make tasks easier and save time, for low poly plant i have a tutorial in my youtube channel you can check out, enjoy.
Looks like magic 😮 🪄 probably it will take 7 hours or so to learn this skill(7min long video) myself., trying to figure out each small errors, coming to frustrated and painful realization on each step 😢

Plane axes it not working
0:16 doesnt work for me, i can only make the circle bigger or smaller :(
You may have already figured it out but: The cursor (or circle) is too big, covering the entire object. scroll down to make it smaller.

I know what happens what you have to do is press the "S" on the keyboard
you have to press "s" then "x" to scale on the x axis

How to randomize distance leaf, for example I want more leaf down and less on top?
