Brazilian here. We actually eat fruits with brigadeiro. Specially strawberries. I also highly recommend trying with banana and/or nuts, like cashew nuts, wallnuts, hazelnuts. Basically things you think would go well with Nutella, can have a really nice twist with brigadeiro.
As a Brazilian, I can say that you are completely correct, we also eat brigadeiros with fruit inside, mainly with grapes or strawberries. We eat another type of sweet that resembles brigadeiro, it is made only with condensed milk and coconut milk, this is called ''beijinho'' or ''grape surprise''
To make more traditional brigadeiros( this one has a not great texture from seeing the video): Start at a cold pan Add in the sweetened condensed milk, 1/2 a tablespoon of butter ( for 400g of condensed milk) and 2 tablespoons of chocolate powder ( you can use cocoa powder but if so I recommend doing a mix as just cocoa powder may end up too bitter, you want this sweet) Mix them up at the pan a bit and then turn on the heat, at the lowest heat possible Mix CONSTANTLY until the whole mixture starts to unstick from the pan ( If you tilt it sideways you see it moves very quickly as it is not stuck to it anymore) Now pour into a container , and let it cool completely. Butter your hands slightly, roll them and cover in whatever topping you want ( traditional is chocolate sprinkles) Be careful not to add too much butter ( it will ruin the texture), remember to add salt if you are using unsalted butter ( but you can use salted butter as a replacement) And don't just leave it in the pan . You need to babysit this. Do not turn the heat up. Do not stop mixing. ( It will take about 10 minutes) As it gets hotter you will need to mix more intensely. You can replace the chocolate powder and stuff for about 30-50 grams of chocolate ( but reduce the amount of butter as the chocolate will have some fat already ) Mixing at low heat is key to achieving the right texture! The final mixture will be extremely shiny and completely smooth. Enjoy.
The perfect texture for rolling brigadeiro is when you lift some of it with a spoon and drop it on the pan again, if that drop immediately combines into the brigadeiro on the pan it means that it's still not ready for rolling, but it's a great texture for eating it by spoon or using it as cake filling or a pretty loose frosting, if the drop takes time to combine to the rest it means that it's ready (idk how to explain this properly but i hope it made sense) Always remembering that it gets thicker as it cools down so whatever the texture is that you got in the pan, it's not going to stay like that (if it's too thick i recommend adding some milk or cream to it)
I was following the pizza recipe, but I ran out of ketchup, so I used water instead. Because ketchup is basically a tomato. And a tomato is basically a plant. and a plant grows with water which means water basically ketchup. But I ended up with a soggy cheese bread.

I use a similar dough for my favorite pizza rolls! 300g flour, 250g quark or greek yogurt, 2 tbs sugar, 6 tbs oil, salt and baking powder, mix in lots of shredded cheese and uncooked or cooked bacon bits. Split into 12 - 16 balls and bake 20 minutes at 200°C. It's actually 4 tbs sugar, but most find them too sweet, I recommend adding at least 1tbs!
Use brown sugar instead for the peanut butter cookies. It makes them 95× better. And dust white sugar on top when they 1st come out of the oven. Not sure if dusting the sugar makes a real difference, but the texture makes it more enjoyable

The perfect texture for rolling brigadeiro is when you lift some of it with a spoon and drop it on the pan again, if that drop immediately combines into the brigadeiro on the pan it means that it's still not ready for rolling, but it's a great texture for eating it by spoon or using it as cake filling or a pretty loose frosting, if the drop takes time to combine to the rest it means that it's ready (idk how to explain this properly but i hope it made sense)
