The problem with Gordon's isn't the ingredients. It's that he used a fireplace where he can't control the temperature. So he burned the bread while not melting the cheese. If he just used a stove like normal it would've been great

As a Swiss I have to say Raclette is my favourite type of cheese (besides Gruyère). It melts nicely, tastes like proper cheese (unlike the Emmentaler, that gets exported, it's way too young and tastes like nothing, proper Emmentaler tastes bitterish and has a hint of vomit), can be used as it is, melted or as coarsely grated on top of pasta.
I use it as an universally applicable type of cheese.

And it probably didn't help that he used firmer cheeses, which have a high melting point. Which is fine when baked on/in something but on a grilled cheese softer is better. American cheese for example (while I don't classify it as cheese) is a good choice. BUT don't choose something that'll melt TOO fast as by the time the grilled cheese is done the cheese will be in the pan and not on the bread like you want it to be. (I haven't finished the video so IDK if he explained this)

For me it would probably be cheese, well cooked onion with a drizzle of vinegar and a pinch of salt. The bread would be toasted just a bit first so I can grate some garlic into each slice (using the bread as the grater), finish with warm tomatoes and probably a light layer of non fat cream, again, warm so my teeth won't act up.

A really good grilled cheese sandwich is just white bread, a slice or two of American cheese and small spoon full of light brown sugar, fried on both sides with butter.
I was super skeptical when I first heard about it but it is actually super good!

As a French guy that grew up eating Croque Monsieurs / Croque Madames, that recipe was so weird lmao
First off, in France, we have Croque Monsieurs cheese directly in supermarkets, so for this part, I would say any cheese is good if you don't have the same thing.
Secondly, we don't make a sauce at all... at least where I'm from, the recipe is easy as :
Take your bread (pain de mie), you can put creme fraîche on the bottom if you want,
Then on top you put the Jambon de Paris, or ham, followed by your cheese, your bread, and a bit of Gruyere or Emmental on top.
Finally to cook it you either have a machine for it, or you simply put it in the oven for like 10 minutes.
And for the Croque Madame, you simply put a sunny side egg on top of it.
So... yeah, recipe felt weird but might have to try it :)

to use cheese as a bread like that, you have to use regular cheese. american has starch in it, which gets stuck to the pan when heated.

American cheese is usually bought in slices, with a plastic wrap around the slices, so it could be that, but its also decently shiny so

My favorite way to make grilled cheese isn't even by grilling it. I toast the bread, then, layer cheese onto each piece and bake it for about 5 minutes after until the cheese melts. I haven't tried putting butter or anything on the bread yet when I bake it, but it could be good. It's super easy and filling when you're hungry and lazy.

my favorite grilled cheese sandwich is done in 4 minutes and dirties nearly no dishes.
    - get 2 slices of toast bread and put them in a toaster (I think in america your normal bread is what we call toast bread, we wouldn't wanna eat that untoasted)
    - after toasting, get yourself a raclette slice and half it, then layer bread -> one half raclette on one side of the bread -> juicy ham -> the other half of the raclette on the other side -> bread, so you get a sort of ying-yang with the cheese. That's just so it's not too much cheese to melt and still nicely distributed
    - put it in the microwave and blast it 15-20 seconds so the raclette melts nicely without the toast going limp
that's all, and it's actually very tasty.
(side note, never eat raclette unmelted. It's an amazing melted cheese, but unmelted/cold it's awful)

In Korea we actually combine kimchi and cheese quite often but usually with stir fried kimchi, like kimchi fried rice with melted mozzarella on top. While combing raw kimchi and cheese is fine but stir fried kimchi will take it to the next level.

most common cheese i know of:
200g of eidam /edam/ softer (younger) cheese
    cover in fine flour,
    place in egg to cover,
    place in breadcrumbs to cover,
and do previous 2 steps again for edges to reduce chance of spillage.
fill pan with veggie oil to point where the cheese would be submerged, and fry untill golden.
usualy eaten with chips (aka french fries) and tartar sauce.

Kimchi and cheese are a great combo! Gordon just used the wrong bread and cheese imO. But I saw a recipe for toast with kimchi and some nice melty cheese years ago on the web, basically grilled cheese or you can melt it in the oven, and if you like kimchi, it is REALLY good.
