I still wonder why it had to rest in refrigeration with salt for a couple hours when it's Waygu? It's texture is already perfect, and salt will change that as well as tenderize it fast. I know it wasn't much. Yes, I did hear your reasoning. It does look very good! Happy Birthday, God Bless!
I don’t have a lot of experience with wagyu so I treated like how I normally treat a steak. Dry brine isn’t recommended for a wagyu steak? If that’s the case, next birthday, I won’t make the same mistake :) Thanks for watching!
@@googanbbq ...I guess there is nothing wrong with it if it isn't too much salt, and not on it too long. But you did use coarse salt, and it was just an hour or two right? My point it is so good it is already perfect. Many use salt to tenderize, and I have seen it where it fell apart when about to be cooked. Bottom line is, it looked good in the end. I use salt and the dry brine to really dry out the surface of the meat so I can get a good sear. But I probably didn’t do justice to this steak lol.
