I wish my bar sold enough unique cocktails to justify having so many different garnishes and fresh fruit. A grapefruit will go bad behind my bar counter the most complex drink ever ordered is a long island. I can't even justify having mint for mojitos.

Your videos are great! I am trying so hard to figure out what ice wells, side tables, and sinks you guys use in your setup. It looks very efficient but i can't find any ice wells that have dividers like that. Any information would be greatly appreciated.

Or what do you mean? What is Ice wells? Maybe you speak about bar-station^ the place where we keep ice cubes? If so, you need to make a layout and to find a tinsmith which can implement it.
Yeah like the actual brand of bar station that holds your ice and your bottles and speed rails. And the brand of the sink you guys use in the setup. So a tinsmith created the custom divider for you guys? Thank you for your response!
Mike Fasano Yes. All this staff under the order, although maybe a sink you can buy separetly and set it up in you bar station. but i dont sure that our sink has brand on it.

Mr tolmach I'm just curious, why do certain drinks require egg whites? I'm just wondering what role they serve in drinks.
They act as an emulsifier which textures the drink making the liquid silky to something we call "mouth-feel" ( love that phrase) but it makes a big difference to how we perceive a drink.
They can also soften out some flavours making for a smoother beverage.
One of the most famous examples is a Ramos Gin Fizz. Created in New Orleans during their cocktail revolution. Gin, Lemon, Lime, Egg white, Cream, soda creates a sharp drink with the sour thats softened out with the egg and cream and the soda to keep it light and fluffy. - Many things came from this such as the dry shake and reverse dry shake that both are the same thing but one the opposite way. Aeration is created inside the shaker fluffing up the egg white just like you would milk in for a cappuccino. this allows for a head on some drinks like the Brandy Crusta.
I love egg whites in drinks. Its all about the science of food and it shouldn't (but does) put people off. It adds no flavour but enhances so much. I always say think about cakes, meringue all aren't possible without the science behind egg whites.
Although there are now some good substitutes on the market that can recreate the same effect for people who don't consume eggs.
Very nice bar and nice drinks, but 5 minutes??!! Here in Hollywood you need to make those drinks in under one minute. Good luck to you if you move that slow on a Saturday night.

Good use of both hands. next step already thought about. nice technique and clean as you go ability. However I have to criticise the lack of using a double strain on the middle drink being served straight up! Tiny ice shards everywhere in that drink. Seems as though they nearly made he same mistake again on the final but corrected just about. Only a little thing but very 101 basics. Never serve a shaken drink served straight up without fine straining out ice shards.
Be nice to know some ingredients?
