Love your down home cooking. So much of what I was raised on. Why not drain off most the oil, and use the pan drippings and added butter for the gravy? That’s what my southern Grandma taught me to do.
She likes it this way. We all do, what we love. I wondered about using the left over flour mixture, with salt/pepper and corn starch in it? See, I would use that with butter. It had red meat in it, but boiling it, would kill off any issue. We do what we want.

I’m 66 and husband is 67 we live in Iowa and have never made chicken fried steak, I don’t know why we love it and do all home cooking from scratch everyday. Looks good enough to eat! Makes me want to make chicken fried steak and gravy. In fact I have some beef cutlets in the freezer right now! I grew up on this stuff and I still love it. Those brussel sprouts look delicious too. Velveeta comes in handy for a lot of dishes. Works great on broccoli or cauliflower too! I made queso dip the other day with Velveeta and a can of Rotelle. So good.
I’m making this tomorrow. Thanks, Talli. I remember as a child, Velveeta cheese was very economical. A huge block was less than $2.00. Now it’s over $10.00. I don’t buy it. I use mostly white cheeses. Swiss cheese is low in calories and sodium compared to just about all other cheeses and I love it. I have it sliced paper thin at the deli. I rarely, if ever use mozzarella on my pizza. If I do, it’s always mixed with another cheese like Jack, cheddar or even Colby which is pretty greasy. Tastes good, though. Pretty much the only time I use orange cheeses.
My aunt loved my cream gravy so much I tried teaching her how to make it and talking her through it and she just couldn't do it so until she died I had to go to her house and make her my gravy when she was having fried potatoes 😂, good thing about that was I got to eat my aunt's wonderful cooking when I had to do it. My momma made wonderful cheese sauce for broccoli and any veggies, it was butter, flour, milk, shredded sharp cheddar cheese (not pre shredded) pepper, garlic powder and onion powder, she often would buy the frozen California blend or Japanese blend vegetables for it.
I don't believe I have seen prettier Brussel Sprouts. Amazing. Also, I'm really glad that you did this video tonight on that Country Fried Steak. I have never been able to find that meat that thin. Mine has always been on the thick side and then it is tough. After trying to make some tender, I finally gave up a few years ago. But I sure miss it. And I made my gravy from a little bit of oil that was left in the skillet. Yours turned out simply beautiful.

Also, there’s a place up in Oklahoma called Del Rancho, and they make Chicken Fried Steak, either in a sandwich called The Steak Sandwich Supreme, or you can get it as a dinner with the white gravy and your choice of fries or mashed potatoes and a side. We call those cuts of beef cubed steak. The way they cut cross marks on them actually tenderizes the tougher steaks. I'm in New England.
We call them cube steaks also. I'm in Texas, born and raised!
P.S. I grew up with Velveeta cheese. It makes the best grilled cheese sandwich to go with a hot bowl of Campbell's tomato soup!
