We have been without power and water ever since. Not sure when either will be restored. I’m down to my last clean pair of unmentionables. Been using bottled water to clean up. But we are so blessed. We made it through the first 3 days with no food and limited bottled water. Some people lost their lives. The death toll is way over 100 now. Yes, we’re stinky, but we are alive, and able to laugh about our situation. My husband has End stage emphysema but my sons college roommate drove all night Saturday night to bring a generator to run my husbands oxygen concentrator, so we don’t have to worry about it going out. We have been blessed and are continuing to be blessed everyday. We don’t deserve it, but we are . God is so good. Please remember the ones who are having a harder time than us. Prayer is the strongest medicine.

She’s 95 and I always share my home cooked meals with her , it saves her from having to cook and I know she’s eaten something good for her that she will enjoy ! Yellow corn tortillas my preference as well. No substitution for oil frying your corn tortillas for top drawer flavor, I only put them in raw when I'm being lazy. Recipe knocks my socks off! While we were in Texas for my mom's funeral, a friend brought over a chicken casserole. It was Delicious I never got to ask her for the recipe. I do believe this is it. She had corn tortillas in it, and it looked just like this. I'll have to make this and see if it's the one. Thank you.

Love King Ranch so much! It is a family favorite. Been making it for 45 years. Got the recipe after tasting it at a luncheon my first year of working in public schools in 1979. Your version sounds amazing and I will add the onions and seasonings next time I make it!

Talli Faye, I love King Ranch Chicken casserole too. Yummmm! I was gonna tell you another variation I've had that was delicious also. My best's friend's family always had a shrimp boil for their Christmas eve supper. Her Mama would freeze the peeled out leftover boiled shrimp and use them in a King Ranch casseole instead of chicken and that's what they ate for New Year's Day! She made a big, deep lasagna type pan of it to feed all their family and it was 3 layers deep and she added sour cream & evaporated milk to the soup mixture...thinned it with some broth. That was the only difference from your recipe, the sour cream. She always had a big salad made with homemade ranch dressing and hot yeast rolls. It's delicious and I still make it when I have boiled shrimp or even crawfish sometimes. You need to try it!😉

I use tortilla chips in my King Ranch Chicken. I like the little bi5 of crunch. But if you use tortilla chips you don’t add any salt to the dish. I’ve made it a few times.
That’s looks amazing. Have you tried cooking chicken and dumplings using flour tortillas for the dumplings? You cut them in strips as well. I tried it not expecting it to be taste just like dumplings but they did. I served them to my family and nobody had any idea. I’ll never make dumplings again. Lol
