I'm glad you mentioned the apple cider possibility for the psyllium husk - I'll pay attention to that. My PH recipes sometimes turn out purple and sometimes not. I read it had to do with the baking powder but that hasn't proved the pattern for me. It always still tastes good! Thanks for another great video!

The BEST low carb bread is “Diedre’s For Real Low Carb bread” on TH-cam - it’s her original creation. It’s a yeast bread that smells, feels, and tastes incredible like real whole wheat bread!! It’s the only thing that has kept me from cheating even once in 8 months. The dough is SO versatile for rolls, pizza, croutons etc. She makes it in a bread machine which I do also…so so easy. But she has a version without a bread machine.
I love that loaf (keto king makes that loaf too). I used my bread machine just for the kneading, then shaped it, baked it in my oven. I made tons of it while losing my 45 lbs. Now, I use the carbonaut bread. I find it the closest bread to "pre keto bread", but if I wasn't able to get that, I'd make the other loaf.

Made this bread and it’s delicious! I didn’t have ricotta so I used cottage cheese. Friend came and made it with ricotta and it was just as good. We used everything bagel seasoning. Thanks for posting.
I can tell you this is still the best bread on keto. I tried it first was pleasantly surprised. Then I tried many many others and…came back to Ludmila’s ie. this one. It is as good as it gets on keto.🇦🇺
I'm also wondering about adding vital wheat gluten to this recipe. Not just because I am not gluten intolerant, but also because I have a supply of it that will likely outlive me. I'm going to try poppy seeds on top, because I have some and I don't know why.
@@Gigi_1977I have started adding the vwg to just about all my baking. One tablespoon per cup of whatever flour you're using. Really helps with texture!
Use whole husks or add 1/4 tsp of lactic acid per tbsp psyllium powder to avoid the blue. You can also use lemon juice. When using powder, you run the risk of using too much, and the anti oxidant in it turns it blue.
I've made this bread 4 times and it always turns out purple looking. I've even used all the brands of ingredients she recommended but it does taste really good.
I've yet to find a satisfying Keto bread recipe. I did make one very similar to yours, but was extremely dense. Almond flour always creates a denser and heavier product just for the fact it doesn't have gluten in it. I'm glad you two like your new bread recipe. But I have found that there is great Keto bread offered in my store now and can enjoy a few slices of actual good tasting Keto bread in the morning or for a sandwich! Finally!

This is now a staple in our home! My kids can't eat gluten, and this is far better than any bread you can buy at a grocery store or even gluten free bakeries! We typically add garlic and fresh rosemary. Toasted is amazing too! We did an egg wash over the top for an even better rustic look and crunch
I tried a similar recipe and it also turned purple. Mine didn’t have vinegar or ricotta so I think it must be the phylum husk powder that did it. Was good texture and tasted good. The picture of the one I tried looked white also.

@@Dtabshere Ludmila and Victoria both have excellent bread recipes. Ludmilla’s is for me the one that never ever fails. Victoria’s in theory is brilliant and I did manage it once but after that each one (and it is expensive) , each was a total disaster massive air pocket at top and bottom wet inedible goo. I will keep trying though as I agree it can work.
Love your videos! I made a bread that was very similar to this, it was good. I have a theory about why psyllium husk turns purple. I think it might be oxidation. you know like apples & avocados turn dark. I bought a brand of Psyllium husk that wasn't supposed to turn purple. The husk was very light the first time I used it. It was a while before I used it again. I noticed that it looked darker. When I baked with it I got purple bread. Now I but the whole husk and grind it right before I use it or use it whole. No more purple bread.

FYI Rye is the grain used to make rye flour. Caraway seeds are the nasty bits put on/in some rye breads. I’d definitely change up the spice used but I’m glad you found this recipe. Love the channel overall.

There is a bread from Keto King channel that uses vital wheat gluten with yeast and you have to let the bread rise. I’ve tried it. It’s good but time consuming. There’s a stretchiness to the bread, too. This bread looks good. Have to try it. 😊
Caraway seeds are amazing. I just made keto bread croutons toasted in an olive oil slurry of dry herbs, white pepper, and caraway. Theyre almost too good.

I've noticed when I use psyllium husk in gluten-free recipes the end result is chewier and breadier if I mix the dough longer. Something to try, perhaps.
When I used to make Acorn bread, it would be purple like that due to the PH of the acorns, so I think it might be the cider vinegar and nut flours combined that does it to your bread.

You need to try the egg white bread that is yeast raised. It won't be like Styrofoam. Certain brands of psyllium husk turn purple naturally. It's nothing to do with vinegar. I use the Now brand, and it never turns stuff purple.

Oh twins of the thermogenic arts. Do you have a thought on the consequence of using lupin flour versus almond flour? Also, mixing some of the flour used, whether almond or lupin, with flax meal? I've made this bread twice and really like it. The first time I substituted sour cream for the ricotta cheese (due to a lack of ricotta cheese in the house). I'm making it again today using ricotta, to see the difference, if any. Thanks for all your videos.
Have you ever tried Diedre's Kitchen bread or I Don't Sugar Coat's Lupin flour version of the same? I hate flax so I prefer the lupin one 1 1/4 cup VWG 2/3 cup lupin 1/2 cup oat fiber (or bamboo fiber) (Those are the main ingredients, then butter, xanthan, yeast, salt, sweetener etc)
Interesting! How would it be just using ground flax seed for the dry "flours"? I have taken an almond flour tortilla recipe and just used flax seed........generally OK for my use as I am aiming for a good Omega 3 situation.

I wish I had all the time to cook that much, locally the Arnold bread company makes a keto friendly bread, think sandwich slices, hot dog buns and hamburger buns, and of the many brands I've tried, they were the best.

There's another 'rustic' bread recipe from, I think, Lowcarb/Nocarb that uses oat fiber flour. It's not purple. No nut flours either. It's good. It calls for quark, but I use queso fresco (I tried with ricotta but it was too wet).

I just made this yesterday! So far, I like it! I used a glass bread baking dish, and still did the 3 slashes. It came out great .

If you make your own psyllium husk powder from whole psyllium husks, your baked goods should not turn blue/purple.
Made this tonight and added everything but the bagel on it. So good! Thank you. Next time I’ll add fresh garlic to the dough.

Yes, the psyllium powder makes the mix purple. If you used just the husk (not powdered) it would not be purple.

Phyllis husk can sometimes give a purple/blue hue. Doesn't affect the taste though.

If im remembering correctly, the psyllium husks can cause the bread to have a bluish tint. It doesn't effect the flavor just turns it blue😊

I always get the NOW brand of Psyllium Husk because I have heard that other psyllium husk powders may give the baked good a purple hue.

Have you ever tried Diedre's Kitchen bread or I Don't Sugar Coat's Lupin flour version of the same?
I hate flax so I prefer the lupin one
1 1/4 cup VWG
2/3 cup lupin
1/2 cup oat fiber (or bamboo fiber)
(Those are the main ingredients, then butter, xanthan, yeast, salt, sweetener etc)

It is the psyllium husk that turns it "blue," usually purple. There are a few brands that don't do that. You really should be on Rachel Ray's show!

Interesting! How would it be just using ground flax seed for the dry "flours"? I have taken an almond flour tortilla recipe and just used flax seed........generally OK for my use as I am aiming for a good Omega 3 situation.

To avoid blue, psyllium husk needs to be whole but then grinded
I wish I had all the time to cook that much, locally the Arnold bread company makes a keto friendly bread, think sandwich slices, hot dog buns and hamburger buns, and of the many brands I've tried, they were the best.
I'm going to try it with garlic and scallions and eat it with cream cheese and salmon. Probably with sliced tomato, onion too.

Can you recreate Victorias keto kitchen bread recipe? Her recipe looks and behaves closest to bread. I haven’t made it yet because it has ingredients that I don’t currently have.

There's another 'rustic' bread recipe from, I think, Lowcarb/Nocarb that uses oat fiber flour. It's not purple. No nut flours either. It's good. It calls for quark, but I use queso fresco (I tried with ricotta but it was too wet).
Looks like it would be interesting. The cheeses probably would lighten it up somewhat. I'd be willing to give it a try. Thx.

If you haven't tried it already you could also try out Mary's Test Kitchen keto bread it looks pretty much identical to bread and it says its only under 4 net carbs per roll also I would love to see what you think of it :)
