    Thanks a bunch my whole family loved it!! Super flavorful with only 1 spice, moist, beautiful color (i substituted light brown sugar with dark brown sugar, great contrasts). I put about 20-30 grams less sugar for the icing.

    I just baked a carrot cake with this recipe but with less sugar (100g white 100g brown) and it came out absolutely amazing! Very moist and fluffy! Thank you so much for the recipe💛

      I did 90g caster, 100g brown with a tbsp or 2 of maple syrup and I think it's still too much sugar.

      Pineapple I've never heard of that in it it sounds so disrespectful to say pineapple and carrot cake in the same sentence lol

      Carrot cake can have pineapple- very common in USA. I use crushed pineapple so just a hint of it, not chunks.

      Hummingbird is banana and pineapple, not carrot....traditional Southern cake.

      @@EaterOfBaconSandwiches I think it is, you can sometimes add apple sauce instead of pineapple puree, so that batter does not get thick

    I've made this like 4 time already, and my family is still obsessed with this. Seriously guys, go for it! The only thing to watch out for is the baking time. For me, it didn't need the whole 1 hour, just start checking it around the 50 min mark.

    Love this recipe, I don’t like cinnamon so I skipped that but I added candied orange peels (almost the same amount as the nuts) for a different texture and topped with the frosting, chopped pecans and walnuts and a few candied orange peels. It was amazing ❤

      was it supposed to have the fan on!!?? she never said in the video, nor in the written instructions, ah man!, no wonder it took longer to bake for me. I don't have the habit of using the fan because I'm from the States, where fan ovens aren't that common, but now I live in France where all ovens have them

    This recipe is similar to one I used to make some years ago but, sadly, lost I made this cake yesterday, with a few modifications; if you don't mind me telling you what they were. No. 1 I toasted the nuts. No.2 I added lemon zest (1) to the cake mix and No.3 I added lemon juice, to taste and used salted butter to the icing. My family were utterly delighted with the cake and more to the point, so was I. Happy memories! Just saying......!

      This is the dye in the chicken feed! Organic eggs are not so bright orange because they do not contain any additives in their feed. This is how you can recognize organic eggs.

    This is by far the most perfect carrot cake I have ever made. Every thing is so well balanced and the cake is moist, fluffy and delicious. I highly recommend it.

    I have recently in lockdown have been binge watching Jemma and sally and they never fail to impress I have tried a few of the recipes and the carrot cake is one of my all time favourites, I even made the maple pecans with it and it may be a minor thing to do but it makes a major difference.

    Made this for a friend who loves carrot cake. Personally carrot cake would not be a choice for me. However I followed the recipe and it turned out beautifully I asked for honest feedback from my friend who said it was a winner. She froze slices and said it really improved with the keeping. The pecan nuts were a hit too.

    I made this today! But, I added 1 cup of mashed bananas to give it a twist and reduced the amount of sugar! Turned out so amazing and delicious!

    Can i just say that I tried this recipe and my word ... it made a huge log, we were eating it for 4 days .. the frosting was amazing, and set beautifully in the fridge. I now crave it and made it again, with 26 degrees heat outside ...

    Thanks for the recipe. Made this at the weekend. Taste great and perfect for freezing as can't eat a whole one to myself...maybe. Definitely making again and again. I used an 8" square tray for easy slicing and portion sizes

    First time I went to London I sat at a lovely coffee shop/book shop and had a tea and carrot cake. It was awesome! Such a good memory!! (I am Brazilian - here our carrot cake is a bit different, usually we beat it in the mixer). Loved the recipe! I will try it this weekend!

    I never comment but I made this today despite never being a carrot cake fan - and hands down this has me converted!! I added a touch of honey for extra fragrance and sweetness and that made it pure perfection. I will try the maple pecans next time :)
