Shrimp Scampi & Pasta - Linguine With Lemon Butter Garlic White Wine Sauce

  • Shrimp scampi is a delicious pasta dish with a lemon, butter, garlic, and white wine sauce! Join Eric from Simply Elegant Home Cooking as he demonstrates this easy but delicious recipe! One of the keys is to avoid over cooking your shrimp! That will cause them to become rubbery. The shrimp scampi is taken to the next level by the addition of an Italian white wine, as well as red pepper flakes for a little bit of heat!
    Ingredients:
    -1 lb large shrimp
    -1 lb pasta (linguine or spaghetti work best)
    -4 tb extra virgin olive oil
    -4 tb butter
    -1 lemon
    -1/3 c Italian white wine
    -3 cloves garlic
    -1/4 ts red pepper flakes
    -1 large handful chopped Italian parsley
    -Salt & pepper
    Directions:
    -Remove the shrimp from the fridge 30 minutes before you plan to cook. During this time, remove the shell but leave on the tail, and remove the vein from the shrimp.
    -Preheat a large pot of water on high heat until a rapid boil is reached. Generously salt the water, and add the pasta. Cook according to the directions for al dente.
    -The shrimp and sauce can be cooked at the same time as the pasta. Once the pasta is cooking, preheat a large pan over medium heat. Once the pan comes up to temperature, season your shrimp generously with salt and pepper, add 2 tablespoons of olive oil to the pan, and cook the shrimp for about 2 1/2 minutes, stirring often. It is very important not to overcook the shrimp as they will continue to cook once added back to the sauce.
    -Once cooked mostly through, remove the shrimp and set aside on a plate. Turn off the heat and add an additional 2 tablespoons of olive oil to the same pan. This will bring down the temperature which is important to avoid burning the garlic. Add in the sliced garlic and red pepper flakes and turn the burner back on but only to medium low heat. Cook for about 1 1/2 minutes, stirring constantly.
    -After garlic is cooked but not browned, deglaze the pan by adding in the Italian white wine. Turn the heat up to medium and bring to a light boil.
    -Once a boil is achieved, zest the lemon into them sauce, then juice half the lemon into the sauce.
    -Once the linguine is cooked, turn off the heat on the pasta water and transfer pasta into the sauce. Do not rinse or drain! Be sure to stir everything around as you go.
    -Add back in the shrimp, and add in the butter and most of the chopped Italian parsley. Turn heat down to low and stir until butter is emulsified into the sauce.
    -Serve the shrimp scampi and garnish with the remaining parsley
    -Enjoy!

    I just made this recipe and it came out great!!! It's so simple. I don't even have to write the recipe down, I can remember it by heart!!!I looked at Gordon Ramsey's video to compare and decided your was easier and I had all the ingredients already, except the wine and parsley. I just added a little apple vinegar, fish sauce, and scallions instead. Eating and writing now. It's delicious! Even my mom likes it and she usually refuses to eat anything I cook the first time.     This was truly delicious. Thank you. Wish that I could show a picture. I topped our steaks with noodles (twisted around my hand for presentation) with the shrimp and sauce on top. It was great! The only thing I will cut back on next time is the red pepper flakes as mine was just a little too overbearing to enjoy the other flavors this dish deserves. But hey, my fault as I never measure anything when I cook - LOL. Thank you again for sharing and helping in this meal.

    I don't have a zester or whatever it is called to zest a lemon. I do have lemons for the juice though. Will the result be the same if I choose to not add lemon zest? If not I will totally get one

      It won't ruin the dish if you don't use the zest but the zester is only a few dollars so I'd recommend getting one. And they are great for other applications too!

      That is an All Clad Copper Core pan and the shape of the pan is called their Essential Pan. It is perfect for making sauces then adding in the pasta to finish in the sauce. It is top of the line but you can sometimes find 20% off sale on the pan at Williams Sonoma.

    The dish was beautiful. Can I please make a suggestion though...when you are eating could you please turn your microphone off?       Frozen is fine but I would recommend starting with raw shrimp for best results.

      I don't think pasta can be considered a health food but if you want a healthier option you can use zucchini noodles in place of the pasta. I have a video for that version too.

    Best tip folks, add your butter once the wine reduces a bit, whisk it to make an emulsion THEN add your pasta shrimp and some reserved pasta water. This looks really dry

      Hmm it might have just been the camera angle or something, they were large shrimp according to the seafood counter.

    I don't add salt because the butter is salted

      Yea it is a personal taste. There is also salt in the pasta water so you can omit the extra salt if you feel it has got enough already from the butter.

      You can definitely do that but some people really don't like mixing cheese with seafood.

    Mine turns out failed because I didn’t drain the pasta right and it’s too watery

      Don't be afraid to let it thicken in the pot once you combine the sauce with the pasta. That is how I remedy when it looks a little watery.

    I think it needs butter sauce. Looks really dry. If you are adding butter go full in.

      There was plenty of butter in there, I just add it at the end so that it emulsifies.

    That was perfect until the horrible smacking sounds of eating it.
    There's something about this tendency in people to eat on mic on TH-cam.
    Beautiful dish, violence inducing smacking.

      No, but thank you for your video because seriously; the mere look of the finished product is so craving inducing.
      It's funny about the eating sound thing though, because I recently saw that it's a whole thing on TH-cam (I know, what is going on in the world?)
      Anyway, apparently there are people who eat on camera, up close... & people watch/listen to it.
      Unbelievable, but that's where we are!
      By the way, my shrimp scampi came out tasting pretty amazing, but bore zero resemblance to your lip smacking masterpiece:))
