The reason for the sugar is to make a sweet cornbread instead of a more traditional cornbread. If you want it to be fluffier use buttermilk instead of regular milk. The acid in the buttermilk reacts with baking soda to produce carbon dioxide bubbles, which leaven the batter resulting in a fluffier texture. Great vid, keep 'em coming.

How good are those trivets Mal makes? We bought a couple of them, so handy. Some polenta is course, you would want the finer milled one for these recipes I think? (I’ve done the same thing, didn’t realise at the time). Can be hard to find proper cornmeal, usually health food shops will have it. We’ll try the cornbread sometime, looks tasty. Buck polenta and cornmeal are the same ingredient BUT cornmeal is ground finer, it's not as course as polenta. Would probably help with the texture you mentioned. Instant polenta is ground a bit finer, for next time.
We call corndogs pogos and they are available in the frozen food section at the supermarket. Love them with ketchup. There's a donut shop on my bus route I pass 15 times a day. They sell cornmeal muffins. I stop in a couple of times a week and buy one. They are a bit sweet.
