    I can't wait to see your lunch meat video! I have a meat slicer that has never seen a turkey! 😁 I need to know this because of food allergies and we don't eat nitrates and nitrates. Loving your series!

    Am really enjoying your videos...and plan on defrosting a turkey and doing what you have done...but not the Turkey smoking...as we don’t have a smoker! Looking forward to the turkey lunch meat! Love my Nesco electric canner!

    I laughed out loud when you said some were using the jar lift upside down. I caught my husband starting to do that once. I nearly had a heart attack. I told him if you drop one of the jars you will have to clean up the mess. I am looking forward to the turkey slicing video too.

    Hi Kristin, I am new to your videos and have a Nesco canner. I couldn't find anywhere if it was safe to can ground beef, sausage, and pork. Could you please let me know? I love your videos.

    I know my comment is coming long after you uploaded this video but quart jars of poultry require 90 minutes of processing while pint jars are processed for 75 minutes. If you can both simultaneously then you would need to go with the quart timing. Love the series concept.

      Thank you so much for your comments! It's a great question, the quart size jars are for bone-in chicken that I did in a separate video. Quart size jars for bone-in chicken happens to be the same time needed for quart-size jars of boneless poultry. That's why I did them in the same batch.       Thank you for taking the time to make the videos. I always learn something new when watching how other people cook, can or preparing their food for eating or storage. I am more interested in the Deli meat, but any would be great. Hint, hint maybe you could do some videos on Christmas foods.

    K ristin in addition to your turkey lunchmeat and turkey jerky I would very much like to see how to can bone raw in chicken thighs. How much of the skin would I cut away?

      Thanks Larry! Are they store-bought or homegrown? I don't cut any of the skin off of the store-bought ones. The Homegrown drumsticks I cut a little bit of the bottom off just above where the feet are, it's a little cleaner that way. I'll definitely share a video in the next week on it 💕

    I always read that meets had to be done at higher pressure (50psi not 15psi) to make it safe.

    According to the usda guide, even at the lowest altitude the psi should be 11. Should the green valve (15psi) be used instead of the black one (10psi)?

      Thanks for your comment! When you use a dial gauge you would do 11psi below 1000' but with a weighted gauge you use the 10 lb (same for a standard stovetop canner)

    Why are you doing pints and quarts at 75 minutes not 90?

      Great question! The courts have chicken legs in them on the bone. Bone-in chicken in courts only need 75 minutes. It happens to be the same time that is needed for boneless chicken and turkey in pints, so I just lucked out that they were the same. If you are doing two different items/sizes at the same time you would have to process for the one that needs the longest time.

    So...I don't get it. You had quarts and pints but you pressurized it for 75 minute which is for pints. How does that work? What did I misunderstand?

      Hi Sharon! This is a great question, meat on the bone requires less time then meat on its own. So in this case the bone-in chicken drumsticks in quarts required 75min and that happens to be what plain meat in pints is as well.     Aren’t Quarts supposed to cook for 90 minutes? Pints for 75?

      That's a great question Grace! The canning times vary if you have bone in meat versus boneless meat. Check the nchfp website depending on what you are making. The quarts were bone in chicken that happened to need the same time as the boneless pints so I was able to process them for the same time.       This is a great question! The two quarts actually have bone-in chicken, those process for a shorter time since they have bone. They happened to be the same process time as the boneless turkey pints, that's why I did them together 💕
