    I like that you use the Nesco Canner. I have one and really struggled for awhile to get comfortable with it because there were SOoo many people trying to tell me that you can't use an electric canner (it's not safe they would say). I finally just shut them all out and carried on. I'm so happy that I did that because now I use it for everything - even canning leftovers for future meals. Thanks Kristin! :)

      Thanks for this Chuck!! I get messages asking if it is safe all the time because they had a similar experience to yours! I usually send them this message below. I'm sure there are others that have this question but don't comment to ask. 💕
      There is no specific research on the Nesco/Carey or any other canner (including stove top). There is however a specific set of requirements that a pressure canner must meet to be deemed safe. The Nesco/Carey meets all of these requirements including having interchangeable pressure gauges that are customizable for your altitude 🙂

    I can my old free range laying hens, husband butchers like a duck. I get back skin free chicken. Put it in a jar, no water and a tsp salt per quart. Pressure can and it is the best chicken ever, expressly for old hen or a rooster.

    I've never roasted them, but I have put them in my smoker for an hour. Adds a lot of flavor

    Great video. I liked that you roasted it in the oven first. I thought quarts were 90 minutes. What made you go with the pint size time.

      Thank you so much Crystal! Great question, bone-in chicken actually has different time standards than boneless chicken. This is the NCHFP tested safe time for bone in chicken.

    Great video Kristin. Cool information. Can't let my wife watch it though or she will be mad at me. That wedding ring you got on your finger makes the simple band i got my wife look like a prize i got out of a box of cracker jacks.

    Why did you increase the amount of water? 4cups to 8 cups?
    Is it Nesco 9.5 quart model?

      Nesco recently upgraded their manual to say 8 cups. Some people were having issues with their canner running dry for a long processing times, when it does that it shuts down and gives you an error code. I haven't had any issues using the four cups, but since they upgraded the manual I would add 8 cups go forward. This doesn't affect anything that you've canned before in there as long as it went through the full-time and then gave you the off symbol. It is very apparent when you get the error code cuz it stays on that code and beeps relentlessly LOL

      You are very welcome! They will last up to 18 months with the new flats ( I typically use mine within 3-6 months to keep a good rotation though). You can keep them on the shelf in your pantry, no refrigeration needed. 💕

    How are you able to do both quart and pint together?
    I use the regular pressure canner and I never put those together because of the time difference. Can I?

      You just process for the largest size.

    I notice you didn't poke around the chicken to get the air out. Does it cause any issues not doing that? I noticed the chicken is packed in pretty tight.

      Great question!! When canning with liquid, air pockets are less of a problem because they are pushed out when you add the liquid.

    I have canned raw chicken drumsticks in my Carey before but was not a fan of the taste. However, I did them raw (Not baked first). I am going to try your method now. Also where did you obtain the chart for canning that you displayed briefly in the video?

    Are the steps for the Carey the same as the Nesco? I bought a Carey about a year or so ago, but I haven't used it.

      Yes Mary, Exactly the same. They are actually the same unit with a new label since the Nesco company bought it from Carey.

      Hi Mary. Don't be afraid to use it. It works just as well as the stovetop canners. I use mine all the time now.

      I add them to a tomato mushroom sauce I make, heat all the way through and serve over rice 🍚 😋 I've also just browned them in the oven under the broiler for a bit for a quick chicken leg dinner.
