    Check out Rose Red Homestead's video of Dr. Pam Cantrell's Data logger testing of the various digital electric canners. The 9.5 quart Nesco/Carey passed with flying colors. Pam's Data logger measures the temperature inside the jar during the canning process measures it every minute. Pam shows you the printed out results that show what temperature it reached and for how long. The Carey is the same company as Nesco.

    Thank you for the step by step instructions! This was my first time to can. I just followed everything you said. What I loved about your instruction was your relaxed personality. You didn't get all technical on me which made it easy to focus on just what needed to be done. Success my first canning experience and it was ground beef too!

    I know you don't care about the green pressure limiting valve, but if it makes you feel any better about dropping it, you saved me some trouble. My canner arrived today and I was very excited (first time canner and I fully qualify as elderly) but could not find the green valve anywhere and I'm at about 5,000 feet, so that was going to be a problem. To make matters worse, when I called Nesco to tell them, their offices were already closed. Well, when yours hit the floor on the video I ran to take another look and voila! The green valve was stuck up there in the styrofoam. Not the greatest/smartest place for them to pack it, but all's well that ends well. So thanks for "finding" my valve, thanks for all the very helpful videos and I covet your apron.

    This is the only one that remains in the kill zone long enough to kill botchulism. I am a food scientist and have spoken to the man who invented the Carey which is exactly the same as the Nesco. It's also pressure cooks steam cooks and slow cooks along with canning and it is the only one I would ever recommend right now for people to use for canning.

      Hmm...you're a food scientist who doesn't know how to spell botulism?! Rose Red Homestead is a scientist and she spoke to the man who invented the Carey. She also performed the tests that show that these electric canners stay in the kill zone long enough. Anyone interested should check out her channel especially if you are considering buying an electric canner.

      I love my Instapot Max. I just bought a this Nesco for quart jars. My IP actually let’s me know the temperature inside the canner throughout the canning process, which the Nesco doesn’t.

    new sub here..I love my elec canner for small batches it sets on my counter like a best friend though the winter months😂 durning the summer harvest I pull out my big gun canner's but I find this one helps when you have a 1 or 2 jars left over no need to worry about not having a full load for my stove canner

      The USDA says 1 year. Having forgotten that, I just ate 2+ year old chicken without issue. I recooked it well, though.

    Only thing to change would add 1/2" interior height so it could use regular mouth QT jars.

    That steamer tray will let you pressure seal two layers of pints. The weight is for the thinner atmosphericpressure over 5k feet so you need more pressure higher up to compensate for sea level pressure..

    Hi. Thank you for this video. it was really helpful. I followed the directions but today when I came in to wipe down and label my jars I noticed condensation in the 1" headspace area. The jars popped and sealed so they seam fine otherwise. I waited an hour after cooking to lift the lid and then I waited 10 min more before I took the jars out of the canner. Are these still ok? this is my first attempt at canning. It's pretty nerve racking!

      If the lids popped, it should be fine, but if there is ever a concern, reheat to an internal temp of 212 for 10 minutes to kill any botulism spores.

      Anything that involves ground beef. I'll just add it to spaghetti sauce sometimes for a quick easy meal. Or au gratin potatoes to make them sort of a casserole.

      It does do that the whole time! Don't worry, you're not doing anything wrong - but don't skimp on the required water! It didn't bother me, since the beauty of this one is that I don't have to stay in the room and babysit it.

      Oh no! Mine has worked great so far, I love the convenience and not being tied down to watching that gauge. They are not cheap, though. Amazon has them, though, and have always been very good to me about returns for damaged items.

    What does the ground beef taste like? After canning does it change the texture? I’ve never had canned ground beef.

      I didn't notice a difference with the ground beef. Big difference with chicken, though.

    If you are canning the pints at 85 minutes, how long do you recommend pressure cooking the quart jars with meat for? Thanks in advance!

      The regular time is 90 minutes, so I would probably do an additional 12. So 102 minutes in an electric canner.

      It was, at first I was worried that it wasn't sealing right, but then I figured it's weighted and regulating itself. And the jars all popped, so I feel good. :) So much easier (lazier?) than a traditional canner.

      you hit "high". That threw me off, too. I had to double check and reread the instructions, but it says "pressure cook" not "pressure can," and that is NOT the function for canning. It's misleading.

    What is the shelf life of electric pressure canned ground beef? I am learning to can for long term storage should we have no electricity for the freezers. If this only has a short shelf life, what would you recommend for long term storage for meats, beef and chicken specifically?

      18 months is the usual.
      BUT, gotta be stored in cool/dry/darkest area--where you can check the tops by thunking the lids.

      We ❤ the versatility of precooked meat. I put an Easter dinner on the table in less than 1 hr.
      Lamb roast (last August)
      Couscous, fancied up.
      Squash & onions (qt from last year)
      Salad.
      Guest brought instapot & made mac&cheese. & desert.

    Once u take out jars do u let them sit on counter for 24 hours? Then take off rings n check sealing, then put away?

      Usually only because I'm lazy, but that's the end result. Since they usually sit in an unplugged canner overnight, I check the seals when removing them from the canner. The rings I sometimes remove at that point, sometimes a couple days later when they get moved to storage.

      I don't see why not. I know people who put a towel between jars when they don't have a full batch to make sure nothing falls over - I've done that in a regular canner. I don't see a difference.

    Why the correction on the time from 75 min to 85 min? The USDA 2020 food guide (sec 5.6) says 75 min for Hot pack.

      In the electric canner, it's taken the extra 10 minutes for every jar to consistently seal. To me, the extra time is worth it for 100% success rate. There must be some difference with a standard canner and electric to cause it, but I don't know it.

      Sure! It's fairly close to one pound per jar, you may have a bit of extra headspace, but not much.

    HELP!!! Yesterday afternoon I did 5 pints of hamburger but my canner had steam escaping the whole time. Everything seemed to work ok, the jars sealed and everything and the manual (Nesco) said that steam escaping is normal, but did yours do that the whole time too? I thought it would escape until I switched it to Airtight then maybe sputter out here and there but that was not the case. Now I'm concerned that maybe it didn't come to as high of pressure as it needed too. What are your thoughts (does mine sound broken?)

      They are one pound packages, that's exactly right. It does not have the preprogrammed buttons and timers that an instant pot does, and it maintains a specific pressure - which the instant pots do not. But it is an electric pressure cooker and I have absolutely used it like an instant pot. Your times may not be the same, though.

      @@homestead4life18 Thanks for your reply. I have the same canner. I bought it last November and haven't gotten the courage to actually use it yet. After watching your video, I have a little more confidence about it all. Is there are cookbook or a website that shows you how to use it like a regular pressure cooker? I've never done that either. Just getting my feet wet and feeling quite insecure. I plan on canning the ground beef, but was just thinking how nice it would be to use it as a cooker as well.

      You can, but ground meat should all be pre-cooked.

    I have been changing my valve at the beginning of the e10 cycle. I don't know if I saw this wrong in a video or misunderstood the instructions. I have been doing this since December. I am devastated.

      I don't know that it makes a difference, I know the instructions say to wait until it counts down, but I have had good seals when I switch it at e10 or 0. The timer doesn't start until the pressure is right - and that tells me that it's gotta be fine.

      Another channel comment said it was ok, don’t worry about it. Food should be ok. I just bought my Nesco and the instruction booklet sucks. These vids are the only that help!

      @Homestead4Life thank you... I thought I was going to have to empty about 300 cans of food. I have to have 2 major surgeries and hubs and I work 12 hour shifts in the winter and I was trying to get the upper hand plus his mom has dementia and can't cook anymore.

      @Crafts, Beauty and Life I would have been devastated! It's frustrating when 1 or 2 jars don't seal, but to TOSS that much? The wasted time and money - devastating. I can only imagine. Thank goodness it's not necessary!

      You can add anything, really, the salt even isn't required. I would caution that all flavors are a bit super-charged when canning though, so I would try it sparingly.

      I don't. I store the links in my favorites, print them (and lose them), screenshot them. Most are kinda willy-nilly anyway, so not much of a recipe for some.

      I've heard that, but I haven't been able to find the long term studies or instructions either way on different brands of lids. It would certainly save me a step!

    Question on time…in the beginning it was 75 minutes but afterwards it was noted the time was supposed to be 85? USDA is 75 - why did you change it to 85?

      Hey there. Ground beef in the electric canner has sealed consistently for me at 85 minutes. Rose Red Homestead has the equipment to test the pressure in her jars, and she does 85 minutes, 75 minutes didn't not have a consistent success rate. I would rather over cook it than waste it, so I'll stick with the 85, myself. But as long as yours seals at 75 minutes, that's what the USDA says it needs, so rock on :)

    I have had failures in each of my canning sessions. 1 jar in my first session and 2 in the 2 nd session. So far disappointed.

      oh no! How long did you run them in, and did you clean the jar rims? That's why I add 10 minutes to the processing time for anything with ground beef, I've had great success since then. Rose Read Homestead has a cool gadget where she tested the pressure and time and everything, so she actually proved the need to add it with ground beef.

      @@homestead4life18 they were beans only. I was testing the canner. I did a third batch and had another failure. I called them and spoke to them. I did trouble shooting to no avail. It was always on the same side of the canner. They ended up sending me a new canner. I was impressed with their customer service. I have not used the new one yet.
