    Ms Diva,
    I'm a male and had never roasted a turkey in my life. In fact, I had almost given up on eating turkey because the white meat is normally dry. But I have to admit that this was the best turkey that I have ever eaten or cooked. The guys that ate the turkey wanted me to cook another one. I will share this receipe with my wife and others.

    I made this last year with your recipe. My mother in law looked at me all crazy when I shoved an apple and an orange in there 😂 but she said the turkey was so moist and the best she's had. 💁🏽

      +jaybooty530 - OMG - this looks so amazing. I've never used a plastic bag. Normally I just use a big cooking pot. Looks Delicious..I do think a bigger cooking pan would be a good idea..

      jaybooty530 same exact situation with me that turkey was fully gone within 30 min my little brother went for seconds and he is super picky with food im going to be roasting this in an hour i put it in the brine yesterday morning.

      Im assuming there is no more salt needed i wish someone would confirm it..
      Because i see only the cavity monique said pepper and salt ,but what about for the rest of the turkey???

      No more salt. The brine is plenty enough. You can sprinkle a little bit of salt and pepper inside the cavity if you like.

      I tried it too today. The Turkey came out so juicy and moist. Usually turkey is so dry, but this is my second time making turkey. My turkey was better this year than last year. The buttermilk and the orange and apple really made that turkey nice and juicy.

    It was some balls of foil paper. My son used the inside roasting tray that came with it and made a jail for his cars....I haven't seen it since.

    I love an apple cider brine too but I think buttermilk is my fav so far. To me it makes the meat a tad richer and of course juicy. I'd love to try a sugar brine next year, I keep hearing great things about it.

    If I don't have a bag to marinate the turkey in, could I just marinate it in the bowl by itself?

    Update at 3:39. The thigh no longer has to be at 180-the new spec is 165.
    At 180, in the oven, when you pull the turkey out, it will continue to cook and rise in temperature by at least 10 degrees-that mean that the FINAL temp will be 190 and it's a mystery how your bird doesn't dry out!
    At 165, in the oven, the same thing will happen when you pull the turkey except it will go to "only" 175, which is still enough for a dry bird. For a 165 finish, I pull the turkey at 155 and let rest for 40 minutes.
    Don't let me sway you too much on this. If a 180 oven exit has worked for you all of these years, then there's no sense in messing with a tried and true method, no matter what anyone else says. I'm also thinking that the brining method produces a moist bird no matter WHAT temperature you pull it at, more or less.
    However, if you WOULD like to try something different, consider this. The next time you do a turkey, pull it out of the oven at 170, put it on the countertop (do NOT tent it) and leave it alone for 40 minutes ( as opposed to 20 minutes ). The turkey will achieve a 10 degree rise to 180 and it will most likely be even MORE moist than your current method!

    Let me just say that this recipe was so good. So tender and juicy. I wowed myself with this one. Not a dry piece of meat on the bone at all. So yummy. I'm not even a fan of turkey because it's usually dry, but your recipe was everything. The brine buttermilk and the apple and orange is what made everything come together. Thank you!!

    Never thought to use a buttermilk brine.. I will definitely be using this recipe for Thanksgiving 2016! My boyfriend Mom passed away last year, and she was an excellent cook. So. I'm trying to show my skills with preparing homemade dishes like his Mom. Thank you for sharing your expertise.. 😉🍷

    i did this recipe for thanksgiving ! it came out so good seriously!!!!!
    i got so many compliments! I have gotten compliments before but nothing like this! and you know what i didnt even brine for full 24 hours i only got to 5 hours!!! and it still came out really good!!!!

    Does the brining process leave salt and/or a salty taste in the meat? I am trying to avoid added salt for health reasons. I am unfamiliar with brining (just started hearing about it a few years ago). When I was a child, it was traditional to layer several strips of smoked bacon over the turkey as it cooked. It left a wonderful flavor and the fat gave the meat added moisture/tenderness (while crisping the skin). Is brining somewhat similar?

Also, in the south we have this thing called turkey rolls that are delicious the only problem is I have no idea how to debone a turkey and begin to roll it up.     I never tried it with an apple :) I have to try. I like to be naughty with my turkey, so I stuff it with lemons, onions, and seasoning that has been marinating in butter. Girl, ughh it is the best. I have to try it with an apple to see the results!!

    What did I do wrong? My turkey came out soo dry. I was in tears. Especially, I took all that time to prepare it. I had it uncovered for the first two hours and then slightly covered for the last two hours. I was so embarrassed. :/

    OMG !! I made a turkey for Thanksgiving and as usual, it was a flop !! It was tough and dry. Wish I saw your recipe prior to making it. Can't wait to try your recipe for Christmas. Needless to say, I gave the turkey and there was a lot left over, to my girlfriend so she could make turkey soup and feed the rest to her cats !! Do you have a ham recipe ?

    I made this turkey 4 Thanksgivings in a row. The only difference is I spatchcock the turkey (to speed up the cooking time) and rub it with softened butter inside the skin. It’s truly a crowd pleaser!

    Reading the printable recipe. My question is What is considered lower rack in the oven? like all the way on the bottom ?

    I'm going to try this buttermilk trick! I have always soaked my chicken in buttermilk with hot sauce! But never thought about soaking a turkey'! Looks like its real juicy!

    I made this last year and I’m currently in the middle of brining my turkey now for this recipe again but I was wondering, if I brine my turkey can I still inject it as well? Don’t know if I’ll be messing anything up but I love all of your recipes and u are my only go to blog for new recipes. Happy holidays from my family to yours!

    a great recipe but whenever ANYONE says disgard ANY meat it makes me go ballistic at wasting any food and any real chef would find something to make with these parts like the gravy

    My bf loves stuffing in the bird but will it make the turkey dry if I do? Don't want to brine my turkey then its dry cuz of the stuffing ????

    Buttermilk Brined one of my turkeys last night Monique, with everything AND added Siracha sauce to the Milk Bath, hehehe (Giving my twin birds Milk baths). One of them has been in the Tanning booth (oven) on 250 since 10am (it is 4pm now) the other will go in tomorrow morning.

    This is definitely a nice and simple recipe. However, I have faithfully cooked my turkey according to your first roast turkey recipe for the past 2-3 years for both Thanksgiving AND Christmas. So that it what I shall do! Thanks so much for sharing this though!
