Low Net Carb Bamboo Fiber Brioche Bread Recipe - Made of Bamboo Flour, Keto And Gluten Free

  • Soft, rich, and buttery! If you thought going low carb / keto meant no more soft, fluffy bread - you’re wrong! This fluffy bamboo fiber brioche bread is so easy to make and is perfect on its own or with some butter or jam.
    You can use this recipe to make brioche buns or a loaf. You will love it!
    How to make bamboo baking flour:

    Full Recipe
    165g coconut milk (100+65g)
    1tsp (6g) honey or (3g) inulin
    8g (2tsp) dried active yeast
    2 large room temperature eggs
    20g heavy cream
    50g melted butter
    2 tsp vanilla extract
    100g bamboo baking flour (80g bamboo fiber and 20g ground whole psyllium husk)
    1/2 tsp (4g) salt
    2 tbsp sweetener (stevia erythritol)
    Steps
    Heat 100g of coconut milk (or any milk) until just warm (not hot).
    Melt 50g of unsalted butter.
    Add 1 tsp (6g) of honey (or 1 tsp (3g) of inulin) to the coconut milk and mix them.
    Then blend 8g (2tsp) of dried active yeast with them and leave for 5-10 minutes to begin fermenting before use (on a warm place).
    Place 2 large eggs in warm water to warm up to room temperature.
    Measure the dry ingredients:
    100g of bamboo baking flour (80g of bamboo fiber and 20g of ground whole psyllium husk),

    1/2 tsp (4g) of fine salt,
    1 tsp baking powder and
    2 tbsp of sweetener (stevia erythritol).
    Mix them thoroughly.
    In a separate bowl pour 65g of coconut milk and 20g of heavy cream.
    Microwave them to lukewarm (not hot!).
    Add 2 tsp of vanilla extract and
    crack 2 large room temperature eggs.
    Whisk them to combine.
    Add the melted butter to the egg mixture and whisk them to combine.
    Add the fermented yeast and mix.
    Stir the dry and liquid ingredients with a spatula thoroughly.
    Then allow your dough to rest for at least 5 minutes.
    Squeeze the dough with your hands to bring it together into a ball.
    If the dough is too soft and sticky, knead it on a floured surface.
    Knead the dough lightly with your hands for 5 minutes.
    The dough shouldn't cling to your hands, but if it does, sprinkle with flour.
    At the beginning of kneading, the dough may fall apart,
    or you may feel an air bubble in the middle of the dough.
    Don't worry, just reshape or press the air bubble out and continue kneading.
    This is the consistency of the dough after 5 minutes of kneading. When kneaded, it takes on an elastic texture.
    Divide the dough into 3 equal pieces (about 160g per piece),
    knead them for a few seconds, then
    roll each piece into a 10-inch long rope.
    Braid the ropes together, pinching ends together to seal.
    Tuck the ends under and place the dough in a prepared loaf pan or onto a baking sheet.
    Rise for about 45 minutes on a warm place:
    Preheat oven to 170F (70C) then turn it off. Then put the bread inside the oven and let rise.
    After rising, brush the risen bread with egg wash and place back into the oven.
    Turn the oven on to 300F (150C). Bake it at 300F for 15 minutes.
    This is how it looks like after 15 minutes of baking at 300F.
    Now increase the temperature to 360F (180C) and bake it for 45-50 minutes.
    If you find the tops browning too quickly, cover them with tin foil.
    Keep in mind that all ovens and pans are different, even if they look the same or very similar. The baking time in my recipes is as accurate as it can be, but it might take you more or less time.
    Let the baked brioche bread cool in the loaf pans for a few minutes before transferring to a wire rack.
    Let it cool completely.
    This is key with bamboo fiber dough because when hot, the inside of the dough is like slime ( as if it were still raw and wet).

      What brand of psyllium husk do you use?
      You may need to try a different brand of it. This may be the cause of this problem.

      I use Zimmermann bamboo fiber 🙃 (and Anthony’s organic whole psyllium husk).

    I have less experience with fermenting yeast. In a few of your other recipes, you add the yeast to sugar free maple plus water. Can that be used in this recipe instead, or would it not produce the same needed effect?

      It should also work with sugar-free maple syrup. The key is to make sure the liquid mixture (with which you mix the fermented yeast) is not too cold or too hot.
