I made this tart this morning to bring to a dinner with friends. I also had enough dough for a small tart and we just tasted the small one. It is easily the most delicious apple tart I've ever eaten. Amazingly flaky and buttery crust and just the right amount of apple. Thanks to your video instructions it was surprisingly easy to make. Due to time constraints I made the tart shell 2 days in advance and left it wrapped in plastic wrap, unbaked in the freezer. That turned out perfect! I'm an occasional baker and your use of the Breville caught my eye. I need to upgrade my food processor because my existing Cusinart can't handle 3 cups of flour when I make dough. I'm admittedly a Breville fanboy and would like to know why you chose Breville over Cuisinart (which seems to be the general favorite). My mother made Dutch apple cake which looks similar to this only the apples were pressed into the raw dough and baked. Served with a sweet sauce on the side, it was a favorite of my childhood. Haven't made it in years but I may need to pull out mom's recipe book. I'll give this recipe a try also.
This looks a lot simpler than the recipe I was using, which involved making a caramel sauce, and it came out a bit... wet, but now that I think about it, of course the sugar will caramelise in the oven! Probably will try this with brown sugar because frankly I think making cinnamon sugar without brown sugar is a crime, but I think it'll turn out better than the one I tried before, thanks for this.
I got to give a big yes to the video on the different pie dough. Also John, I'm afraid of mandoline too. I have one though... but I'm more afraid of that lemon zester you use all the time, I really don't know how your still have fingers. You use it like it doesn't remove skins every time you're not 100% focused on it. I'm impressed every time.
John - I love using Opal apples for my tarte tatin and other apple recipes. A little more expensive than Honeycrisp, but I really love the flavor and texture the Opal gives. That and they are such a beautiful color!

Great recipe. I would like to see a custard version and hand made crust as well. I have an aversion to food processors. This is the first version of a pie crust recipe that is appealing because it is more like a cookie. And it’s all gorgeous.

It’s actually much easier in my opinion to make the pastry by hand. You just incorporate the butter using your fingers. Smearing it through the butter and coating it with flour and repeating the process, squeezing the butter between your fingers, flattening it, tossing it through the flour until it becomes a rough sandy texture. Plenty of pea size pieces, it just takes several minutes of extra work as opposed to a few seconds in the food processor. Then you make a well at the centre, add the wet ingredients (egg and water) and stir with a fork before using your hands to form it into a dough ball and continue with the rest of the recipe - I don’t have a food processor and make tarts frequently, there’s tutorials around too!
@@wokebear7797I just love working the butter into the flour with my hands. It’s a real zen experience. I used to avoid pastry dough like the plague and now I absolutely love it. Thanks for the little tutorial.

I just made this for the first time. The crust in the middle was quite pale, but fully baked. Te side crust was a perfect crunchy brown. Should I blind bake the crust on a lower oven rack, and/or remove the pie weights partway through the blind bake? Thank you!!

I would always put a little Bavarian cream or some cooking vanilla ipudding..
