      a wood I dont remember what they're called, but my favorites are little yellow ones that almost have a honey flavor. They're really soft, too. I looooove them

    When I make these I sub apple cider for the water, the acidity helps with texture and it gives the crust a nice taste without altering the color too noticeably.

    I made these today and I have to say they are the prettiest cookies. I made three batches. Had to share with friends of course. My husband loves the crust cookie. He wants that as a base for all cookies. This is a win for sure. I was so proud of myself. You were in my spice cabinet walking me through step by step, over and over lol. Again thank you 🤗

    CRUST
    1 and 1/2 of flour-----3 cups flour
    1 teaspoon and 1 table spoon
    1/2 of half a teaspoon of salt
    1/2 teaspoon cinnamon
    1/2 a cup of butter
    1 and a half table spoon of ice water
    FILLING
    3 apples
    3 table spoons and 1 and 1 half tea spoons of sugar
    Pinch of nutmeg
    1/2 of half a teaspoon of cinnamon,
    Cooking apples
    2 table spoons of butter

    I made this for Thanksgiving and it was SO SO SO GOOD! I'm from The South and we're serious about our holiday desserts. This crust was amazing. I used the fully spiced crust. The caramel and the apples were great too. This is the best apple pie I have ever had. It is truly a heavenly experience when eaten with ice cream. Sweet Jesus! I'll definitely be keeping this in the dessert rotation. I just love you btw!

    Love this! Also, for people who don't have food processors like me, you can use a grater to grate the cold butter into the flour, and it works like a charm! I would freeze the butter 10 minutes at the least, before doing so.

    I made the apple pie cookies yesterday, they were sooooo good. I would recommend the Carmel sauce it was so easy and it turned out perfectly. Thanks for sharing your beautiful cakes, cookies and tips, you have made my baking better than it's ever been. I love how you simplify everything and your recipes actually turn out like you show them . The pie crust was the easiest I ever made along with being the best ever!     Being the daughter of a Sicilian mother I have always prided myself on my cooking/baking. My friends -quote a few of them told me I should cater. No, my family enjoyed my cooking.
    I mastered pie crust easily. The trick is the cloth and a rolling pin "sock". Keep the edges pinched and well proportioned as you roll the dough. My pies were divine!
    This is do like cheating...lol!? You have made it look so easy. I think I see old make that caramel just to dunk fresh apples in. I wonder how it would mix with cream cheese?
    Yummy, this recipe I will have to try!

      @@lunark5637 To be fair, their apple pie is out of this world. In fact, that's why I'm here - I want to be able to make apple pie as good as theirs! I'm not sure I'll bother with the small cookie siezed ones in this video though... :D But the regular one (the full size pie) looks really great, I'm gonna give it a go when I have more time. If this works out I won't need to rely on SB to provide me with great apple pie :)))

    I made these, and they turned out fabulous! I tried them flat and in a muffin tin. They were crispy and buttery, and the Cosmic crisp/pazazz apples were wonderful. Such a beautiful dessert. I made 20, and they went fast. Thank you for this recipe, John, such a unique pastry.

    i made them, they were AMAZING like literally an apple pie in a cookie, i even made the spiced dough and my husband who doesnt eat apple pie ate ALL said they were good and LOVED the dough! I had to hide the extra uncooked dough for my second batch LOL. I have so many peaches left over from peach picking last weekend i think im going to try doing the same thing with them- peach pie cookies? wish me luck!

I like the novel interpretation he put on this "Apple Pie Cookie' and he has inspired me to make my own adaptation which will be complete keto. I hope you will pop buy and check out my keto interpretation in January. Right now I am a bit behind in my own to dos for the Thanksgiving and Christmas holidays. But wouldn't it me nice to have this amazing treat made sugar free, grain free and as wonderful as this recipe?

    I made this yesterday and I made in stages. It took more time than I expected. OMG it was so so delicious. The crust was so crispy and butterly. Everything was perfect. I use less spice like your video. My house smells so good. No need for candles. Lol. I didn't make the dumpling style either. Thank you for the recipe!

    I just need to say, THANK YOU FOR WRITING THE MEASUREMENTS IN GRAMS, i have seen so many good-looking recipies that i couldent recreate because they used "one stick of butter" and "ounses". So thankyouthankyouthankyou!!!

      Just a tip, Ayymen: if there's a recipe that uses ounces and you want to use grams, just google "convert ounces to grams" and you'll get a page with two boxes. Type the number of ounces in the first box and it will tell you in the second box how many grams. I do this to convert centimeters to inches, Celsius to Fahrenheit...whatever I need to convert.

    Having a Friendsgiving in couple weeks so I’ve been watching all your videos so I can make a beautiful Friendsgiving cake. The vanilla sponge cake came out so amazing that I decided to make your chocolate cake also. The cake strips are the best thing ever and I even successfully made buttercream flowers just because of you. Thank you for all your tips and most importantly how well you explain every step.
    Btw my husband took the vanilla sponge cake to work and people are still talking about how good it was.

    I love that you made a simpler version! With all the other Thanksgiving recipes I have to make I just don’t have the time to fuss with the lattice ones(but they are super cute)! I’ll definitely be giving the dumpling version a try though!

    If u want the best pie crust in the world u need to use *tender flake* lard. It's mainly sold in Canada but im a Canadian living in the United States and u can order tender flake on Amazon. It is way more expensive but worth it if u want a great pie crust!

    In the UK, we call your ‘dumpling’ shape a ‘Pasty’. More used for savoury fillings, and apparently invented so miners could take what was essentially a complete hand held meal down the mines for lunch! I love the idea of a sweet version though, especially if it involves apples, cinnamon and caramel....yummy

    Left over pie crust is a thing of my childhood. Roll out dough the same thickness as for your pie. Sprinkle leftover cinamin sugar mix. Bake same rill golden brown. Yummmmmmmmmmm

    I have got to tell you, your videos are an absolute gift to the world. I am so so grateful to have found them. Can you please never stop?!?? Also, what kind of (brand etc) food coloring are you using? I am a collector of gel food coloring and none of my colors ever turn out as show stopping as yours.     Another excellent demonstration...i have been making pies for years and years and i usually only make lattice with blueberry pie....I am definitely making these for Thanksgiving instead of pies...just for a surprise. I wish you would go on tour because your show is contemporary refreshing and positive and i think you have the star quality that would sell out. Love your channel!

    They look so delish!.... I love anything made with apples in my desserts..If you don't have a round cookie cutter..You can use the rim of a drinking glass to cut a round circle into the dough...

    I made them apple cookies and apple crisp one, omg my children loved them all. But I used Almond Flour instead and it was still really good going to try your thres leches recipe soon. Thank you so much

      Colleen Erin Yes. Just do the mixing by hand in a bowl. For the butter, you can use the pastry butter tool to break it up into pieces in the dough.

      You will need to enslave your enemies. Have them cut the butter into the dough until they form pea sized pieces. I will never do that by hand again!

      Right!!???!! As a kid I use to think that I hated apples. What I did not know was that there are a variety of apples to choose from and not all apples taste like the nasty school boy apples. Once I became an adult I began to discover the other apples and I discovered that I don't hate apples at ALL!! I just hate those nasty red school boy apples!!

      Everyone should have the experience of going to an apple orchard and tasting a variety of apples. And apple cider and apple butter. For baking you need an apple that doesn't turn to mush! Ask questions and learn new things.
      A new taste treat. Slice Granny Smith apples paper thin. Put a dot of Tabasco sauce on each slice and eat. Tasty!

      @@maryblaylock6545 I have been a skilled baker and cook for many years now. My children were raised in the country with fresh vegies, fruits, fish and seafood. It was far different from how I was raised.

    What a creative spin on Apple pie! They're adorable. I have this special ability of tripling the time of any recipe, so I imagine these would be an all day affair. Everything has to be perfect, especially Apple pie!

    I love how you detest red delicious apples. When I was young, that’s all my mom bought and I did not even know other apples existed. The next Apple I discovered was Fuji. My goodness! I thought I had died and went to heaven LOL

      Making your own you know what's in it. No nasty chemicals or junk that can make some people fat - and home made tastes delicious. It also works out a lot cheaper than shop bought stuff 😊

      @@Pythonaria i mean technically you know what's in store bought stuff too because they list ingredients (at least in America) ... and chemicals don't make people fat, butter & sugar do.
      I am definitely not saying whether chemicals are "healthy" or not, i'm just saying that an all natural organic free range whatever apple pie will get you fat exactly the same as a preservative laden store bought treat.
      Giving credit where it's due: John is skinny, cuz our boy works out! Have you seen the man whisk... by hand!?!😅

      @@juliab8992 LOL. I'm 63 and weigh a mere 6 1/2 stone - same weight I was when I was 16. I'm not too keen on sweet, sugary stuff - I prefer savoury food but sweet is nice on occasion. I prefer to make my own as I said in my comment. Here in the UK all ingredients must be listed in shop bought cakes etc., but there is far too much artificial sweeteners in them which leave a vile aftertaste. Aspertame is used quite a lot and the bad associated health effects are well documented. There is also the question of hygiene. I know my hygiene is good but I have no idea what the hygiene is like in factories where food is produced. We have had many factories shut down because of outbreaks of e-coli or other food poisons. I love cooking and baking and the aroma of something baking in the oven is lovely. Later this week I'll be making apple turnovers as I have a few apples to use up. Unlike the shop bought variety, which you need a magnifying glass to find the filling, mine will have plenty of filling in them. I don't need to add sugar as the apples are already sweet enough😋

    I was arguing with my sister over the best part of an apple pie -- while I thought it was the filling, she thought it was the crust! She complained about how she always loves her apple pie bites with lots of crust and there's never enough. Just as she said that, I thought of this recipe!
    So, I made this. And if anyone else is wondering, they turned out AMAZING!!! They were devoured within days. I had a bunch of leftover filling/caramel that I planned to use on ice cream/snacking, but then I started craving these cookies again...so I made another batch and they were also gone fast. I had to stop myself from eating all of them so my family could eat them as well. They are absolutely fantastic. I feel like they're pretty foolproof -- as an amateur baker I could handle making them pretty well. Please, if you have the resources and some extra time you have to try these!! Thank you John for the great recipe :)

    I like the water cold u add & the butter tips I didn't now that . And all the extra spices as a pose to the two . And your dumpling version too .ALL GOOD TO BE TOLD SO ONE WILL NOT FREAK OUT IN THE MIDDLE OF DOING THIS .

    I have made these before but did an actual lattice, weaving the crust. This looks just as good and SO much faster, thank you! these are amazing!

    If you're worried about adding too much water to your pastry, top it up with vodka you keep in the freezer. It won't hydrate the flour, it'll bake right off, and lets you make a more pliable pastry dough.

    Like the idea, but why not build the lattice for each cookie on a separate piece of parchment by interweaving the strips then placing over the cookie and trimming to fit, would give a better finish for the lattice!

      Transferring that from parchment sounds like more work than it’s worth. His way was simple and you can easily interweave if you want to.

    This is a great recipe! I made home made apple pie for Thanksgiving, but I'm not really a pie person, I only did it for my roommate and a friend of ours, who never had home cooked meals. I've always been a cookie or cupcake person (only for baking as I love experimenting) and love making different types of desserts. I remember years ago, I made rum cake cupcakes with rum extract for a coworker who was highly allergic to alcohol. She absolutely loved it and that started on me enjoying baking for other people. I'll eat some of my baking, but I can only handle a few bites before it's too much for me, so a cookie version has always been the best approach for me and my guests. I also found a great recipe for carrot cake cookies and my former coworkers loved it. So I'm going to make these cookies next and I'm super excited. I'm going to attempt to make extra for my current coworkers who wanted to try some.
