SMOKED CHEDDAR CHEESE⎜NO NUTRITIONAL YEAST⎜SOY-FREE⎜GLUTEN FREE

  • Is there a legume that naturally tastes just like cheese? Yes, there is and the name is lupin bean. It is yellow in color and buttery on taste and it is very common in some Mediterranean countries, as well as in Spain and Portugal. This easy legume snack can be transformed into a delicious and luscious vegan cheddar cheese and that's just what I have done. Blending the lupin beans along with a few spices makes one of the most incredible cheddar cheeses I have ever made!

    A LEGUME THAT TASTES LIKE CHEESE?? YES!! AND I HAVE MADE A MELTABLE SMOKED CHEDDAR CHEESE WITH IT
    INGREDIENTS:
    1 1/3 cups of cooked lupin beans
    1/2 cup of cooked carrots, drained
    2 tablespoons of unscented refined coconut oil
    1/4 teaspoon of liquid smoke
    2 tablespoons of apple cider vinegar
    1 tablespoon of green olives brine
    1 teaspoon of salt
    1/2 teaspoon of hot paprika
    1/2 teaspoon of garlic powder
    1/2 teaspoon of onion powder
    A pinch of white pepper
    2 tablespoons of cornstarch
    2 tablespoons of sour starch
    1/2 cup of water
    2 tablespoons of agar agar
    1/2 cup plus 3 tablespoons of water
    METHOD:
    To make the cheese extra smooth, start by removing the lupin beans skins, put them in a blender, along with the remainder of the ingredients up until the water. Blend it very well.
    Dissolve the agar agar in a pot with the 1/2 cup plus 3 tablespoons of water, bring it to a boil then simmer for 3 to 5 minutes, stirring.
    Add the blended cheese to the dissolved agar agar pot; stir for 2 minutes.
    Add the cheese to a mold, remove the possible air pockets with the help of a skewer, let it cool then put in the fridge for a minimum of 4 hours, better overnight.
    Lasts for up to 10 days in the fridge.
    👉IMPORTANT NOTE:
    1. About 20% of people who are already allergic to nuts could also be allergic to lupin beans, so be aware of this fact.
    2. Lupin beans are very difficult to cook when they are raw, it requires a long cooking process to get rid of the natural toxin they have so if you are not familiar with the lupin beans cooking method, prefer the cooked lupin beans that come in a jar or a can. After the beans are properly cooked they are absolutely safe for consumption.

    This cheese is fantastic! I did not have the patience to peel the beans so just let my high speed blender whiz it all together and it came out smooth, firm and tangy.

      American Cheese is just bits of Cheddar blended with Calcium Citrate to combine which has the added benefit of make it smooth and meltable. The FDA says this needs to be called "Processed American Cheese" only when it contains more than one type of cheese, Colby added to the Cheddar for example, it has nothing to do with those cheeses being fake. "Processed cheese food" has to be called that because of multiple cheese plus the addition of milk or similar liquid or other ingredients. I might have a few fine points wrong off the top of my head, but there is no "plastic" in American cheese. Obviously some brands contain a lot more ingredients and it's nice to be educated what those ingredients are so you can decide accordingly.

      Not only plastic, but those 'natural' flavors come from aborted HUMAN fetus... it's in a lot of the store brought items (for meat eaters--share w/your family); vegetarians/vegans need to beware, as I just found out, but it's in some of the foods for us too. Buyer beware!

    I did make it yesterday and it came out good. it has a bit of beanie taste, and thinking next time to throw in some cashews or a potato. but overall it is good.

    I can't imagining myself ever being vegan, but I like subscribing to channels like yours because some of the recipes are very interesting and creative. With that said, I cook some vegetarian and vegan meals each week to... I guess to lessen my personal impact is the best way to describe it. I do love nutritional yeast on popcorn and added to soups. I can understand how people would get tired of it if it was a staple though. This recipe of yours looks great. I really look forward to replacing a good portion of my cheese consumption with it.       alexxdaye1 I can appreciate your not liking the taste of mooch but to be fair it’s 100% natural. The only processing done is to deactivate it with heat. Sometimes B vitamins are added but more often not.

      The non-fortified nutritional yeast is what we should buy, it does not have synthetic b vitamins added but it has them naturally.
      The fortified nutritional yeast has synthetic b vitamins added which I avoid.

      I was also looking forward to trying it. But now it turned out to not being very delectable, it smells and tastes very beany, just like bean cream. I wonder if I did something wrong. It sounded so good. :-(

    I used red palm oil instead of coconut oil. Improved color, dont think it changed taste. Still super delicious. I like red palm oil to fry carrot slices in. Also delicious. Ty

    I bought the jar of amazon. I just put it in the fridge. will taste the firm cheese tomorrow morning. this is a good diet cheese substitute for the oily vegan cheeses you find in stores. Can't wait to taste the final result.

    🆘 IMPORTANT WARNING: If you have Peanut Allergy, you can react to this too (lupine beans) as they are related to Peanuts! So be careful! (I stumbled upon a warning from the Norwegian authorities about this when searching for beans to buy, products containing it has to have a warning). 🆘

    *** one question.....
    It is 1 1/4. Or. 1 1/3 Cup of lupin beans? Tutorial and print out are different amounts. Thank you 🙏🏼

    Thanks for this recipe trying to eat more healthy. Very interested in trying this out. Would be great replacement for cheese. Not vegan but I'm open to trying out healthy meat alternatives. Do like my eggs/ poultry

      You can use roasted or sautéed red pepper, a little less than 1/4 cup

    I am on a cheese making binge... I don't have the beans needed but I am def going to use a substitute bean. Maybe cananelli and stinky tofu... 💝👍👍👍 thanks for sharing and I will be on the lookout for those beans for in the future batch.. 🤗✌

    Lupin beans and polvilho azedo are like cheats for vegan cheese, they taste sooo cheesy! Unfortunately I can't find that polvilho but lupins on their own are enough, I just add some tapioca starch and a bit of lemon for tartness and the recipe works like a charm

    This made me a delicious pimiento cheese spread!! It wasn't sliceable like yours but it was my first experience with agar agar. I'm in shock! This is the first vegan cheese recipe I've tried that I liked. Thank you so much for sharing.

      I don't know if it will melt. I measured 1 1/3 cup of the beans. Once I shelled them, I only had 1 cup. I measured another 1/3 cup, shelled them and added them to the first amount. Idk if this was correct .

    I will try it along with a few v.burger amongst other Veggie alternate recipes.
    Beans take creamy place of the Cashews etc. it seems.

    Hi Jana, really interesting recipe. I have a couple of questions - i) can we avoid the coconut oil in this recipe? ii) why do you require corn starch in addition to the sour starch? iii) where can I get the sour starch you use? iv) Does this cheese melt nicely? Thanks!

      Yes, you can replace the coconut oil, but I don't think avoiding it would be a good idea, since it helps in the melting process, cornstarch makes the cheese firm once cold and the sour starch makes it stretchable and gives a tangy8u9taste to the cheese, you can get the sour starch online or at your local latino shop, sometimes asian shops carry it too.

      Be careful of Amazon as the Chinese sell an equivalent Chinese product but they still call it agar.
