  • Nut and soy free vegan cheese recipe - amazing! It slices, grates and melts... all without the fat or allergy issues that so many other plant based cheeses seem to have.
    This recipe is so easy to make and is great for a cheese platter, on crackers in a toasted sandwich or anywhere where you would normally use sliced or grated cheese :-)
    Best of all it has no nuts or soy, so it is a great option for so many vegans that have food allergies to these commonly used ingredients.
    Cholesterol free and no oils added... this is great for anyone wanting to eat a whole food plant based diet or for anyone wanting to have a traditional "treat" food without the guilt!!!
    This is so exciting. I can't wait for you to give this a go and let me know what you think :-)
    Print recipe here: www.cookingwithplants.com/reci...
    Ingredients:
    1 cup water
    1 cup oats
    1 cup steamed sweet potato
    1 chargrilled red bell pepper (marinated in vinegar)
    1/2 cup nutritional yeast
    1 tbs smoked paprika
    2 1/2 tsp celtic sea salt
    1/2 tsp white pepper
    1 tsp onion powder
    1 tsp garlic powder
    2 tbs lemon juice
    1 cup water (extra for over top of mixture in blender)
    .... you can also add any other spices, herbs etc that you like.
    --------------------------------------------------------------------______----
    1 1/3 cup water
    2 1/2 tbs agar agar powder
    * NOTE: The two main things to keep in mind are that you need to use agar powder (if using flakes use 3 times the amount) and make sure you cook it long enough so it activates... also make sure NOT to use a lid when setting the cheese as this creates condensation and can make the cheese wet.
    Enjoy xx

      you say it melts.. do you think this could be used on pizza? :D

    • @happybuddyperson
      @happybuddyperson 9 ปีที่แล้ว +19

      No doubt. The last few days I've melted it on bread, in tacos with fake meat, with beans, with vegan fries, pasta, even on sandwiches. It melts every time as long as you don't glob it on.
      I've also used it on pitas for a fajita so it would work as pizza. It also reminds me of pizza when I eat it.

      sounds great, i cant wait to try this, but idk what you mean "itll melt as long as you dont glob it on" like too thick?

      yea if its thick it just gets hot but doesn't melt so much

    The mixture before the agar is delicious and would make an excellent cheese sauce for pasta.

      That's what I do w this and similar recipes. I remove a cup or so to use immediately on pasta, nachos or steamed veggies, then reduce the agar/water mix proportionally to finish the firm cheeze. It's nice to not have to wait hours to enjoy the savory goodness, and, as I live alone, i don't end up with more than I can eat before it goes off as this has a very short shelf life compared to a dairy cheese.

  • @Crisalsera
    @Crisalsera 8 ปีที่แล้ว +20

    As a person who quit eating meat and dairy just two weeks ago, I must say this cheese tastes EXACTLY like the hot melty cheese we get with nachos when going to the movies. It's incredibly yummy, but I must say I prefered it melted. Guys you have to try this on a baked cheese toastie with vegan butter on top, it's heavenly. Thanks so much Anja, you make my transition easier.

    HI Anja. I just made your smoked paprika cheese. The cheese is so delicious! I cannot believe how easy the recipe was to pull together. This is by far the best vegan cheese recipe I have made. I also used the mixture as a sauce poured over steamed cauliflower. I put all the cheese ingredients together, blended them together but did not add the water/agar . Again, delicious! I can't wait to try another one of your cheese recipes.

    Made this today - love it! Was worth waiting to order the agar powder. Just had it on toast and grilled it for a few minutes; it browned a little and was really tasty with tomatoes on top. I bought a smoked vegan cheese recently and it was mostly made of coconut oil and soy and I felt yukky after eating it - this is way better. I may make some more and freeze it as the big jar of peppers I bought for it need to be eaten in 3 days!

    Thank you for the great recipe! I love that this is nearly fat-free. I used agar flakes... I used 8 tablespoons + 1 teaspoon of agar flakes, which I allowed to soak in the water for 10 minutes before beginning to cook it. I cooked it for a good 10 minutes thereafter, just to make sure it was completely dissolved. Thanks again! I look forward to trying more of your recipes!

    I'm baaack! I just wanted to let you know that I did just this evening make another batch of the better-than-cheddar cheese using the proper amount of agar flakes this time - and with amazing results. Because I like to experiment in the kitchen, this time I added a tiny bit flavoring from black truffle - just a bit - and because I didn't have smoked paprika I used a good Hungarian paprika and added almost a cap full of liquid smoke. The flavor is so divine, I wish I could send you a chunk. Be well, and thanks again for sharing. :)

    Wow wow wow! I just made this with my boyfriend and we love it! Also, adding just a dash (1/4 tsp) of cayenne pepper along with the other spices helps bring out the flavors. FYI the texture of the cheese once cooled is not like dairy cheese. It feels more like jello. However, it melts pretty well as we found out in a grilled cheese sandwich. Thank you so much for this recipe!

      +Beatle214 You need more agar powder or cook it a bit longer to activate it for it to set firm :-)

      +CookingWithPlants thanks for the reply! I have a follow up question. Is it possible to overcook it as well? 😅

    • @cookingwithplants
      @cookingwithplants  8 ปีที่แล้ว

      Beatle214 I don't think so. It just goes quite thick after a while. It's much more likely to be undercooked than overcooked.

    I tried the recipe yesterday and love the cheese! There are quite some shops in London that sell vegan cheese, but the products all contain lots of fat. Your cheese is a great alternative for everyone who lives according to Dr. Campbell's nutrition suggestions.

      CookingWithPlants I ordered the agar powder online and bought smoked paprika and sea salt. Still need the white pepper and sweet potato. Do you marinate the pepper in white vinegar after it's grilled or before? Do you think we could do other types - like a strict cheddar or jalapeno? I'm thinking of making subs like Subway and using this or perhaps some type of bean patty similar to the veggie patty they sell.

    • @cookingwithplants
      @cookingwithplants  10 ปีที่แล้ว

      Potato Strong I get the marinated ones from the shop and they are just in a vinegar and sugar brine. You could put any flavors you like... I actually ate mine with jalapeno and the chili punch was awesome. Let me know how you go :-)

    • @cookingwithplants
      @cookingwithplants  10 ปีที่แล้ว

      Potato Strong You could also use regular potato and black pepper... it would just change the flavor a little bit.

      +Christiaan Esterhuizen thank you for this comment, I am alergic to yeast and was feeling really deprived as I can see it's a fantastic recipe, so I will have a go now without the yeast. I am surprised that it turned out well, yeast gives vegan cheeses the very cheesy taste. However, I will substitute it with some miso which tastes quite cheesy too.

    I've been looking for solid cheese recipes lately. I have the creamy cheese sauce down already and my vegan Parmesan. Well I found this recipe on another site and then I saw yours too. Since this recipe is lower calorie I thought I'd try it out first. This is such a good recipe! I made a large grilled quesadilla tonight and I'm going to make cheese enchiladas tomorrow. It has a delicious melty texture !! This is now my recipe. I'm in love 😋

    Thanks from one cook to another. I appreciate your recipies, they are great and you do a great job of explaining everything and you also have a delightful presence. This is such a great recipe. No nut vegan cheese. I used a little less water so the flavors wouldn't be diluted. Just enough water that it will mix in my blender. Also I don't have a fancy blender like yours but it worked anyway. The real test will be whether or not my husband likes it! I also used a roasted red pepper and a half a roasted onion and 1 roasted garlic clove instead of the powders. My sweet potato was also roasted. Everything was in the oven yesterday ready for the experiment today. I got the agar agar at a Asian grocery near by also yesterday which gave me a good opportunity to get out of the house for a walk.

    I must have made this fifty times already, but I do not want to buy agar agar any more and throw out thick plastic containers, so make it without (add less water) as sandwich spread, appetizer or nacho dip. Great for sharing with non-vegans, everyone seems to like it. Thanks for the recipe! This one and the egg salad are fav in this vegan household!

I thought I'd have an issue with storing the cheese (I made 3 molds), but I can't seem to stop eating it. Forget crackers! LOL! I just slice and eat! Thanks SO much for this recipe!
