1 SINGLE INGREDIENT VEGAN CHEESE⎜EASY AND AMAZING CHEESE!

  • Yes, you have read it right, this is a 1 SINGLE INGREDIENT CHEESE recipe that you can make at home and use only a simple staple everyday ingredient! This cheese is versatile because it can be used for both savory and sweet recipes, can be enjoyed on its own, like pain, or turned into herbed cream cheese, or a taco cheese, or a queso, or even a cheesecake!
    INGREDIENTS:
    1 jar of vegan unsweetened soy, or almond or cashew kefir or yogurt
    METHOD:
    Add the kefir to a clean and dry lidded glass jar, close it tight then add a tea towel to a deep pot, then place the glass jar with the kefir or yogurt in the pot.
    Add water to the pot and make sure you cover the jar with water almost completely - it is very important that the kefir is completely covered with water.
    Turn on the heat, bring the water to a boil, then to a simmer and allow it to simmer for 20 to 40 minutes or even 1 hour. Every yogurt or kefir is different so they take different times to cook so be patient.
    Once the cheese is ready and you are able to see that the yogurt has separated, turn off the heat, cover the pot and allow it to cool completely.
    Remove the jar from the pot, place it in a colander lined with a double cheesecloth, cover it with the remainder of the cheesecloth, or with a new one, place a smaller plate on top of your cheese
    IMPORTANT: If your cheese is still too soft, do not put any weight on top of it, wait until some of the water has drained naturally, then, you can add some weight on top of the plate.
    Allow it to drain until it reaches the desired cheese consistency, then refrigerate it and it's ready to use. The cheese will firm up more once it's refrigerated.
    Lasts for up to 10 days in the fridge.

    I had to re-watch the video to see if I missed something. Honestly Jana, how on EARTH do you come up with your recipes? You're an absolute genius.
    QUESTION: If Vegan Kefir isn't available where I live, can I use an alternative kind (Greek style)?
    QUESTION: Can/do you reuse the strained water?
    QUESTION: Is adding the vinegar to the water only to remove stains in the cloth or is there some chemical magic that happens to help curdle the yoghurt?
    QUESTION: If I freeze this yoghurt before and/or after processing it through simmering, will it change the consistency (like with tofu)? I've noticed that the yoghurt I buy has to be used immediately or it'll spoil quite quickly.
    QUESTION: Could I add the herbs to the yoghurt BEFORE simmering/straining it?
    Finally, I do hope that your family in Brazil is safe from the floods. 🙏

      I think the vinegar must be for the stains only because she doesn't list vinegar in the printed recipe or on her website.

    I've been doing this during the last year and it is the easiest way and the most tasty. I don't even boil it, I just drain it overnight with a cheesecloth. Then some pressure but not too much.

    i make labneh through a similar process but by using specifically unflavoured coconut yogurt :D it has a tang, texture and mouth feel that is close to Greek yogurt. The tapioca starch already in it also makes it easy to transform it into other cheeses (i.e. straining it more and adding penicillium candidum for brie). Mixing it with a labneh made from thick nut or soy yogurt (that also has tapioca starch) could also alter the texture to other cheeses if preferred!! it's a gem. i prefer not to cook it at all during the cheese making process but feel free to add extra lactobacillus pills if you do!! they really do wonders for the flavour development

    There are great yoghurt strainers on amazon! But mine needs a filter too, use coffee filters, disposable or reuseable (I bought cheap on aliexpress). 🤗

    Chef Jana, Is kefir yogurt different than regular Yogurt? I also wonder if there is any danger of exploding the tightly covered jar in the simmering water? Happiest Holidays to you, and thanks for all the deliciousness you bring to us!!

      Kefir has got more strains of probiotics and is fermented in a different way. It’s a lot more fermented than regular yogurt.

    Thank you Chef Jana ! Can you tell me the ingredients on the container of the almond Kefir that you used? Does the ingredients on the container say that it has thickeners like Tapioca etc. ? I have not seen Kefir yogurt, just regular plant based yogurt at the store. I make my own yogurt with 3 only ingredients, cashews, soy milk, and probiotics and would like to make this cheese with my homemade yogurt, but not sure if I have to add tapioca, etc. that might be in the store bought Kefir you purchased, so that it turns out the same. I have Tapioca if I need to use it. Thanks sweet Lady !!

    Another great recipe, Jana, thank you! Just a quick question: if I wanted to use normal soy yoghurt (I've never seen the kefir one) how much fat and protein should it have to get the cheese?

    This is extraordinary. Would it be possible to use this on pizza? Would it be better to bake a tomato only pizza and add this just when taken out of the oven?
