It’s always good to review cooking basic dishes. Being national egg day I made breakfast for dinner. Thought of this video tonight when making scrambled eggs in my well seasoned carbon steel. Husband told me that the eggs tasted especially good tonight.

If you love over easy eggs prep your frying pan the same as pam. Break your eggs one at a time put all together in a bowl. When the pan is ready I pour the eggs in then put the toast in the toaster. When the bottom is cooked completely top is still transparent but you see white underneath add a 1/2 cup of boiling water cover the pan tightly. Your toast should be popping up right about now butter and put on the side of your plate. Take the top off the eggs they should be cook with 10:47 runny
Sorry about that your yokes should be runny and most of the water evaporate off. Take a paper towel and wipe the bottom of your frying pan then slide your eggs onto your plate. Add salt and pepper and enjoy. Your frying pan should be clean and just needs a rinse since you wipe out with a paper towel. All the grease use absorb into the paper towel because it was boiling hot. Of course instead of oil and butter you can cook some bacon first and use the bacon grease to cook your eggs. Clean up is still the same with the boiling water and paper towels.

I use black pepper every Sunday when I make scrambled eggs. They’ve never come out bad. My secret ingredient that I use for very fluffy eggs is Hood cottage cheese with chives. It’s the only way I’ll eat them 😊

When I was working from home during lockdowns I pretty much became addicted to scrambled eggs on toast for breakfast every morning. I always added salt and pepper when whisking I'll definitely try your method next time 😊
Great Granny would always pour hot vinegar over her cayenne pepper 🌶️ s she grew in a big tub, she kept the peppers in this jar with the vinegar. it tasted great splashed over collard greens and over the fish and grits. Gone are the days of such wholesome living.
Several excellent chefs tell me they always use a combo of olive oil and butter for flavor and less burning. I'm going to try this but will order your seasoning. I know it will be NC good!😊
The reason they’re called scrambled eggs is what you do to them in the bowl, not messing around with them in the pan. Why put all that air in your egg so they’ll rise up and get fluffy if you’re gonna press all of it out in the pan? Fold gently & stop expecting a pile of crumbles on your plate to chase around and gets cold fast. 😂

It's the same as if you were making a Egg Omelette, you can put what you want in your eggs. If you want meat, if you want seasoning salt, if you want bell peppers, if you want black pepper, if you want hot peppers, if you want onions, if you want broccoli, if you want cheese, if you want regular salt, if you want tomatoes ect. It's all about being creative! Just like Ms Pam! 👍🏿😊
Oh yes I love eggs fixed this way as well as with cream I tried it even with mayonnaise and mayonnaise course oil and eggs in it and it also makes them moist😅 so thank you so much for sharing Miss Pam I have a few parts that are 20 years old they just don't make things the way they used to😮
Hi Pam, thanks for this useful tip on scrambling eggs. I play with different methods when I scramble eggs because I only get it right occasionally. My Genghi (granny) used to spend ages with a teaspoon fishing out the chelazae before she cooked her eggs (I never had the patience for that!)
Love your tips, especially the black pepper, I usually add pepper last but never knew why? Since I'm on a strict low sodium diet, I add a pinch of cumin, tumeric, Ms. Dash seasoning, onion bits for seasonings to pop... It's good. But I miss my moderate salt because just like you demonstrated, simply adding the olive oil, salt, pepper and cheese and not overcooking makes the best eggs ever! I just subscribed to your channel. I just told myself I’ll use pickle juice as a substitute IF AT ALL because…..😂
I use jalapeño juice alot especially in velveeta chili con queso dip, yet the dip will not be smooth. Still, it will taste very good.
Trust the process you won’t taste it. I use the Peperoncino jar peppers in mind! 😃

I think beating them in a bowl not just skillet is what makes fluffy eggs. In pan only is like a scrambled fried eggs!
