I use canned Mandarin oranges for different dishes and at times will add a little of the liquid to scrambled eggs, very good. It's been a long time since I've been able to stand to cook. I pour eggs into a preheated skillet, turn heat down and put a lid on skillet. Eggs turn out very fluffy and tasty.

As a personal preference, I also blend them in a Magic Bullit rather than whisk them, and no seasoning goes on until after they are cooked. BTW, for some reason, cold water from the ice water dispenser in the fridge seems to make fluffier eggs than cold tap water if you prefer to use water.

Don't like scrambled eggs without adding water. Good examples in this video to see the results three different ways for scrambled eggs also I like to add a small pat of soft butter to the top of the eggs when they come off to melt over the eggs.

They're scrambled eggs. Just put the eggs down and scramble (constantly stirring), this will put air into the eggs making them fluffy and cook them quickly.
@@cookingwithbigcat Yes, I've done this on the Griddle for years. Once the eggs are almost set, use two spatulas and toss them over a few times like you were doing, they will come out fluffy. Been a Chef/Grill cook over 35 years. My last job, making over 1,000 eggs a week for our breakfast rush. We had 3 men on two griddles! To give you an idea of the volume of egg orders. There were 7,000 people in the building, which had 52 floors.

Wow, those look like omelettes........ I made the mistake of ordering scrambled eggs at a diner when on holiday in America forgetting that they cook it on a flat top. I like my scrambled eggs to be softly scrambled.

Use a ring or square to start them setting up. It will hold them in one spot. After the start to set up remove the ring, square.
