    I used to use milk until I was convinced to not use anything. Eggs taste much better when they are not watered or milked down. Took a bunch of convincing to get me to go that route though. Spot on advise on technique. The less aggressive you are with the flips and such, the fluffier the eggs will be!! 👍🏼

    Been using water for years, ICE water out of the fridge, about a tablespoon per egg, beat with a fork in a bowl then microwave on high for 1 minute while your warming tortilla on stove should be done about the same time (WARNING: EGGS WILL BE EXTREMELY HOT) cut up with fork and dump on tortilla with cheese and hot sauce and whatever else you want, roll into a burrito and you got some happy eaters. I forgot to put that's for 2 eggs.

      @@cookingwithbigcatThis was great! Such an invaluable comparison! 👍🏾It was something I always wanted to know but never considered testing for myself. That's the reason I watched it. I almost never view videos with background music because, besides the fact that tastes in music vary so greatly, even if it was music that I liked, it would be annoying because so many of us view these videos at faster playback speed. This, of course, distorts the music. I hope you'll reconsider the practice of adding the background music.

USE A SOUP OR ANY BOWL 15CM ACROSS AND POUR INTO THE BOWL. PUT INTO MICROWAVE AND SWITCH ON. IF YOU OR THE CHILDREN WANT GRATED CHEESE ,TOMATO, BACON, JUST DO ONE MIN ,THEN ADD ANYTHING !! CHEESE IS GOOD 🤗SIMPLE. CARRY ON WITH THE TIMER!! IF NOT HAPPY GO A EXTRA 1MIN. YOU CAN OPEN FEEL THE EGG IS LOOSE!! YOU CAN EAT IT LIKE THAT OR CLOSE IT LIKE A OMELETTE 🤗JUST SLIPS OUT AND DOUBLE IN SIZE🤗AND SO FLUFFY MY FRIENDS💖💖💖

    Great video, Mike! I love my eggs and you've touched on what I've learned through various sources. Adding water to eggs makes them fluffy. Using milk causes the eggs to be more creamier. Great video and a guess free comparison for making scrambled eggs. I always add half and half to mine and scramble in salted butter. As a personal preference, I also blend them in a Magic Bullit rather than whisk them, and no seasoning goes on until after they are cooked. BTW, for some reason, cold water from the ice water dispenser in the fridge seems to make fluffier eggs than cold tap water if you prefer to use water.

    They're scrambled eggs. Just put the eggs down and scramble (constantly stirring), this will put air into the eggs making them fluffy and cook them quickly.

    • @cookingwithbigcat
      @cookingwithbigcat  ปีที่แล้ว

      Easy to do in a frying pan but not so much on a griddle. Also, your method makes them more creamy which I like but not really as fluffy.

    • @samuelgates5935
      @samuelgates5935 ปีที่แล้ว

      @@cookingwithbigcat Yes, I've done this on the Griddle for years. Once the eggs are almost set, use two spatulas and toss them over a few times like you were doing, they will come out fluffy.
      Been a Chef/Grill cook over 35 years. My last job, making over 1,000 eggs a week for our breakfast rush. We had 3 men on two griddles! To give you an idea of the volume of egg orders. There were 7,000 people in the building, which had 52 floors.

    I sometimes use a little juice, apple or orange...whatever you have and like. I use canned Mandarin oranges for different dishes and at times will add a little of the liquid to scrambled eggs, very good. It's been a long time since I've been able to stand to cook. I pour eggs into a preheated skillet, turn heat down and put a lid on skillet. Eggs turn out very fluffy and tasty.

    A lot of people over cook scrambled eggs which make the tough and rubbery I like to remove the eggs from the heat just before they become dry on the surface as the residual heat will finish the cooking. Most scramble egg recipes call for water to make them fluffy especially in omletts. Milk or cream make them denser but they are creamier if you don't over cook them. Don't like scrambled eggs without adding water. Good examples in this video to see the results three different ways for scrambled eggs also I like to add a small pat of soft butter to the top of the eggs when they come off to melt over the eggs.
