    Speaking as a person who's life is always chaotic, watching this video, watching Ms. Martha, so calm, so organized, so knowledgeable, so assured, brings me such peace. I love her so much. I always learn something from her. I've been reading her cookbooks and watching different iterations of her cooking programs for the last 20 years. I love how she tells me the best way to peel a hard boiled egg. Even though I've been doing it all my life. For someone with ADD, it's wonderful to be bound by rules and minute directions to follow. I want Martha to come and run my life for me. She would be horrified at the mess I've made of it.

    I love that Martha feels she has to tell me not to use a silver spoon.🤣😂🤣 I’ll have to make sure my butler takes note! Seriously, though - this was absolutely lovely to watch. I am going to try that frittata this evening!

    Martha was giving us "aesthetic" years before it became a thing on social media.
    I also love how she doesn't waste anything, making sure all the ingredients are scraped from bowls and other utensils

      Something that I’ve always appreciated about Martha is that despite being the epitome of WASPiness, she actually grew up working class and learned lots of techniques to save money and make small budgets stretch from her hardworking mother.

    These eggs look so delicious I learned to cook eggs from Martha and others on TH-cam. Funny being raised in a strict Hispanic family these eggs would be considered wrong to them because they cooked eggs like so over cooked like it’s brown and very rubbery that’s why I didn’t l like eggs growing up but when I ate eggs the right way for the first time I became a egg lover creamy, fluffy that’s how it is done.

    This particular show brings me back to when I was four/five years old and each morning Mom would make my sister and me a soft boiled egg with toast strips for dipping. So very yummy. I've heard people call this breakfast "Dippy Eggs", and I'm sure in other countries there are special nicknames for it too. There's nothing like that flavor of creamy cooked yoke mixed with buttered toast. A toast, to Martha: the domestic queen "egg"straordinaire!

      We always called them Dippy eggs....so delicious. I have wonderful memories of my Dad serving them with sizzling hot bacon and the smell coffee in the air. Miss you Dad!💋❤

    My father would add a Tablespoon of water with the fried egg, before putting the lid on the skillet. This would steam the white membrane over the egg. He called it a blindfolded egg vs a sunny side up.
    Thank you for all these tips! I never knew half of these tips. Your eggs are gorgeous!
    My father's mother, my Irish grandmother, always saved mashed potatoes. She made potato patties, Browning them after dipped in egg, they were always served with eggs. My favorites!
    My father took care of me all day aged three to five, while my mother worked as a Navy nurse in an Army hospital. He made a blindfolded egg put on toast with bacon. As a map maker he was very precise. He cut the egg into sixteen squares, three horizontal cuts, three straight vertical cuts. He made sure each square of toast had it's own piece of egg, and bacon. Then he would take me with him into the oilfields looking for shale in the core samples, marking the depth of the shale that had oil in it. He always taught me everything he was doing at work, and gave me a place to work on paper with colored pencils he sharpened by hand with a knife, shaving and polishing the point to precisely a point for me. He visited me in class through first grade, bringing me freshly sharpened pencils, helping me with my homework through third grade, teaching me mental math games, and how to be very precise, and neat while working.

    Love the explanation. I never over cook my eggs. Using a cast iron skillet when doing a scramble eggs, as soon as the bottom layer sets up, I turn the fire off and finish my egg using the heat of the pan. They are always soft and cooks just right. I do the same for eggs over easy. Right after the flip, turn fire off. The cast iron holds plenty of heat.

    I also learned that if you place a small amount of oil (maybe a 1/2 teaspoon, the oil makes the hard boiled egg much easier to peel! I tried it and it WORKS!!!!

Her style of handling the ingredients and even the equipment is so graceful and fluent, like a culinary rhapsody.     I just discovered you can use your rice cooker steamer basket to cook eggs as well. And cook rice at the same time. I cook 2 cups uncooked rice (for 4 cups cooked). Put eggs in steamer basket, put on lid and flip switch. In 15 minutes rice is done, eggs are cooked. Plunge into ice water. While rice is resting peel an egg, scoop a bowl of rice, add butter and your egg. Great easy meal!

    Nice video. Best variety of presentations of eggs l have seen to date. Yes, eggs are nice with salt+pepper. We Chinese sometimes add soy sauce to eggs if we are not using salt. You can also fry eggs+ chopped long beans. Or fry eggs+ chopped tomatoes,etc. Or you can make egg fu-yong.

    My daughter and now my grandson like soft eggs poured in a cup and mixed with salt, a small piece of butter and small pieces of white bread. Spoon is better for kids than fingers!

    Watched this video only recently, but thank you, Martha!! I know comments will sometimes put a little twist here and there on how to do things as well, but the bottom line is the small things matter and are easy to do! Small things like covering the pot, not cooking while water is boiling, and gosh darn it realizing that every minute matters, lol!! Before your video I ALWAYS had a fluffy hard boiled yolk, either light yellow or with a green ring, but too fluffy to enjoy. Powdery. Now, because of your video, I can make them so yolks come out a deep vibrant yellow, and CREAMY!! I LOVE the yolk now!! And I know about soldiers. (And the 4 minute egg is also my favorite.) That tidbit is very new to me. Thanks, Martha, for your relaxing instruction. People like you have helped me to love cooking!!!!

    Very Interesting. I've been cooking eggs for more than 50 years, and I can't wait to try fried eggs covered-rather than flipping-for my breakfast tomorrow am.
    I'm a cast-iron cooker, so flipping is always dangerous. If covering will cook the yolk somewhat more than "easy," I'm really looking forward to it. Tomorrow Morning HERE I COME !

    To get hard boiled egg shells off easily.
    When u put the hard boiled eggs into the cold water to cool them off, tap the shell all round the egg to break the shell under water, so that the gold water enters between the shell and the egg. This makes removing the shell easy and stops pieces of egg sticking to the shell as I just saw happen when Martha was peeling her hard boiled egg.

      Even after you do all that you will still get at least one Egg that still has a piece or 2 stuck on the shell. Martha uses _Freshly laid eggs_ which will do that as she explained in the Video.
