A+ easy recipe. Foolproof too. Somehow I mistakenly thought the recipe calls for Vegetable Beef soup, and I had already added it.. So I tossed in some frozen peas and carrots and went for it. I'll try it with the correct Vegetable Soup next time, but still, it was fantastic and easy. Thanks again.

That's awesome! I'm thrilled you liked it. Honestly, in a pinch I think I've used the same soup and it turned out great. I will say I do love the bits of potato and ABC noodles in the Vegetable soup from the recipe. I'm so happy it worked out for you! 😊

When I was young mom would use bread crumbs or crackers.
Years later the wife was making us a meatloaf only to discover no crumbs or cracker. She was frantic not knowing what to do. I came to the kitchen to try and help. Checked the cupboard and found a bag of oatmeal.
Hand it to her, “Here just use this.” She was sceptical but not having any other clear options she used the oatmeal.
Well that was twenty years ago now. Haven’t had at meatloaf since that didn’t have oatmeal in it.
The oatmeal not only thickens and binds but adds a bit of a lovely “nutty” flavour to it.

I swear, I was grown before I knew meat loaf could have meat in it! I have a friend who cannot tolerate onions in most form; if I know he's coming to eat, I can use either green onions or onion powder, he loves the flavor but his digestion can't handle the texture or something. Also I absolutely cannot cook without garlic. Adding this one to my repertoire for sure! Thanks.

I love meatloaf no matter what the recipe is, some ARE better than others though.
If I'm in a diner I always order it, but you'd be surprised how few diners have it on their menu( I guess they forgot this is the dish you could hide many of your "about to expire" leftovers and other ingredients )
Oats are my thickener of choice, and I make a finely-ground mixture of onions, carrots and celery.
Lots of Worcestershire sauce, or Vegemite if I have any on hand, to up the savoriness.
Formed freehand on a rimmed baking sheet, as opposed to packing it into a loaf pan where it steams rather than bakes, gotta' have that crust.
My grandmother used to glaze, and serve, it with cream of mushroom soup, a nice alternative to the usual tomato-y glazes that are usually used. She'd just open the can, use some and place what remained in the oven as the meatloaf baked.
Gotta' have mashed and stewed tomatoes as a go-with. OR, if you want a really stellar meal, make some creamed peas. Outstanding!!!
And not to be forgotten, dream about meatloaf sandwiches for a few lunches, either sliced and used cold or sautéed in a little butter until crusty. Great this time of year with a slice or two of terrific Summer tomatoes on wholewheat toast. Mmmmm.....
Thanks much for the truck stop recipe, I will surely try it one of these days.

Leftovers! I should have mentioned the amazing leftovers you get with this meatloaf. We enjoyed this for a few days after, and it made easy, delicious lunches. Whenever I make a beef recipe, I love adding plenty of Worcestershire sauce. I've been curious to try the Vegemite; I'll just have to do that. It's true that it's hard to find meatloaf at a restaurant these days. The only place I have found it is at Cracker Barrel. Truck stops have exceled at serving up delicious comfort food.
I also agree it has to have the "crust"; that's why we bake it on a cookie sheet or large 9x13 baking dish for the airflow. I will also have to make some creamed peas that sounds so good. You have so many great ideas, I appreciate you sharing them. I hope you enjoy making this recipe. 😊

I sure do miss being on the road. But now I'm currently handicapped I'm partially blind in my right eye from a stroke I had that almost killed me it put me on life support for 3 whole months having hoses and tubes a breathing tube down my throat. The doctor told my family that I'm a miracle to be alive because he thought I was going to die during surgery. So he was very surprised that I survived. Hopefully one day I can get my vision fixed so I can drive again then return back to being a truck driver. I sure do miss being on the road. Thanks for very much for sharing this recipe. I'm glad you asked; this recipe does not call for additional salt due to the salt content already incorporated in the can of soup, worcestershire sauce and the Saltine crackers. We've found there is so much flavor that you don't need additional salt added. You certainly can add pepper, but we find it has so much flavor from the soup and worcestershire sauce, that we don't miss it. I hope that helps! 😊

The original 1960's recipe didn't call for extra salt because the soup, Worcestershire sauce, and Saltine crackers already provided enough seasoning. We've found that the flavor is well-balanced without additional salt, though you can definitely add pepper if you like. The soup and Worcestershire sauce give it plenty of taste on their own. Hope that clarifies things!
