    Recipe
    Ingredients:
    Seitan
    100 g Vital Wheat gluten
    30 g all purpose flour
    1/2 tsp salt
    1/2 tsp black pepper
    1 tsp garlic powder
    1 tsp sage
    Sauce:
    3 tbs sweet soy sauce (or 2 tbs soy sauce, 1 tbs brown sugar, and 1/8 tsp ginger, melted 30 sec in microwave)
    sweet chili sauce
    1-2 tsp sesame oil
    1. Mix all dry seitan ingredients together
    2. add warm water while mixing until you can form a dough ball (appx 1/2 cup).
    3. Add enough oil to your pan to cover the bottom
    4. tear off pieces of the seitan dough ball and add to the oil
    5. brown seitan on all sides
    6. cover and simmer for 5-10 minutes
    7. lower the heat and add cover seitan with sweet chili sauce
    8. add sweet soy sauce and sesame oil
    9. toss the seitan with the sauce to mix
    10. Plate with rice

    We've made it a bunch of times! Try adding a bit more water to loosen up the gluten. Our first batch was hard to tear and super tough, too. Adding more water helps with that. (We also seasoned our water more to infuse flavor into the seitan itself) FutureLettuce is an internet sensation!

      Should the dough feel a little wet? I added more water (about 3/4 cup total) to get it to come together and it still was tough to pull apart. It did crisp on the outside but when I covered it after initially frying, I took off the cover and it had puffed up 🤨. The sauce made it taste good but it was pretty chewy. I’m a seitan newbie and have only made sausages.

      I have been thinking why not just use a broth instead of the water. Try it a few times with varying broth concentrations. It would still be in the neighborhood of the laziest quickest seitan!

      Adding a tablespoon or two of instant mashed potato flakes gives it a little softer, less dense/chewy texture too.

      A tablespoon of baking soda also makes a difference with the chewiness

    Not a vegetarian or vegan but I’m gonna try this to see if my kids can tell the difference. They totally didn’t know the impossible burger wasn’t real meat and were completely surprised. Now when we go to restaurants my son always orders anything impossible. Thanks for the ideas on how to go more meatless without feeling like we’re going meatless

    I had my parents over for dinner last weekend. They are both meat eaters and dont like much of the vegan meats or cheeses Ive forced them to try in the past. I took a risk and last minute decided to make this real quick for them. I substituted the rice for rice noodles and some steamed veggies, also I bought a premade general tso sauce. But this seitan absolutely BLEW THEM AWAY. I made a double batch and not a single piece of these delicious nuggets was left. This recipe was amazing it went straight into my recipe book thank you soooo much.

    Someone asked him for measurements, and he said, "1/2 tsp of each spice and about 1/3 cup of sweet chili, 1/4 cup soy sauce, 1-2 tsp sesame oil. Add more if needed."

    I've made this 5 times already! The first time I made it, the kids asked for more, so I had to make it again. Which was no hassle cause it's so quick.
    I think the part that's most interesting is that centre. The trick with seitan is to cook for ages and to let it rest.
    The pieces are so small that they cook in no time, but also I think it's on the rare side! I've eaten uncooked seitan, it's gross. But slightly undercooked seems to actually work!

      And there's no chance of food poisoning either! As long as you're getting some heat in there, flour bacteria should die in no time. Think heat treating flour for edible cookie dough.

    Just made this and it IS amazing! It’s the first faux meat I’ve ever made and it came out perfectly! I’ve always wanted to make seitan, but I’m very disabled and was always too worried about running out of stamina to try it. This is such a gift, thank you @FutureLettuce thank you @SauceStache !
    Note: being a contrarian, and not having any sauces in the house, I made the dough with curry seasonings and made a quick curry sauce. If you are going to do that, I would recommend not adding the sauce to the seitan until you are ready to serve. I pulled out half of the seitan and the other half I added the sauce to to finish cooking. Those turned into curried dumplings (still awesome!). But all of this rambling to say that this is one fool-proof recipe 😂

      @@helianthe3457 the thing with seitan (ive made a lot of seitan recipes using different creators' recipe) is that you have to rely on broth to get any flavour youre basing it to. Like if you want to get as close to "chicken" flavour, you have to use vegan chicken broths and seasonings. I made liv b's chicken seitan recipe and i used vegan chicken granules, and it does give off that chicken smell. Hope that helps 😅😂

    Your impression of the adamant meat eater is spot on for someone I used to work with. Back when I was active duty, I had a salty old senior chief who was very much like that. He didn't eat any vegetables (except asparagus and potatoes) and was proud of that fact. And not because of allergies or anything, I specifically made sure (this becomes relevant later). He had extremely.. let's call them old fashioned views about meat and what eating or not eating it said about a person. He gave me regular grief for not eating meat, and not really in a playful kind of way. So of course at every opportunity at morale events, pot lucks, pig outs, etc, I'd get him to try whatever I made/brought. Never told him it was meatless, just played gopher when he had me fetch a burger or something. He never once figured it out, and actually claimed my chili was some of the best he'd ever had.

    I just made this! My girlfriend loved it, she was convinced it was beef until I told her it wasn't! I was quite impressed too! Will certainly make this again and experiment with other meals :-)

    Tried this one for lunch today, it was great! I added half a teaspoon of white wine vinegar to the seitan, as someone in the comments recommended. I do suggest that when you tear the pieces, you aim for a flattish shape. This gives you pieces with a high crunchy exterior/chewy center ratio, which I preferred.

      I made this tonight, I used slightly less gluten and cut in chick pea flour. I also used vegan chicken broth with a dash of apple cider vinegar to cut the wheat taste out. It came out lovely.

    I've been meaning to try this but haven't yet. I did do the experiment to replicate this with WTF gluten and it was absolutely a disaster. You could cut it with kitchen scissors instead of tearing if it is too tough. Thanks for testing it. "I can tell . . . " LOL

    Ive been using this recipe since you posted this. Its absolutely essential. Just a tip for anyone looking to try it, you can skip the frying part and toss your chunks in a very small amount of oil then toaster oven them (I use the air fryer setting at 425*) for 15 mins. When you take them out they will seem tough, thats fine. Add them to a saucepan with your general tsos on low heat, add a lid and let the magic happen. The sauce will absorb into the chunks and the lid will keep in moisture and rehydrate them in just a couple minutes. They will come out just as deliciously crunchy/ chewy as the full on fried method. Thank you again for this post, I have fed it to several non veggie friends and it ALWAYS amazes.

    Ok I tried this switching up the spices and with a lemon glaze and it was bomb! Way better then what I normally make with gliten flour, chewyer and finnaly well cooked 😆 mine always comes out slimy 😆

      They can only tell when you tell them. I once got the vegan chicken at a Chinese restaurant near me and I thought they gave me the wrong thing so I asked some meat eaters to taste it for me. They told me "that's chicken. That's definitely chicken". Turned out it WASNT chicken, it really was the faux chicken. You can tell when compared to their chicken but on its own you wouldn't know.

    Bought vital wheat gluten and tried other recipes, but didn't like any. This one might save me! Gonna try these and other spices. But I'm definitely gonna try this one! Thank you man, you're an inspiration on your pursuit for the perfect vegan meat!

      Have you tried Avocado and Ale's chickwheat or School Night Vegan's vegan chicken? Both are pretty easy and involve adding extra sources of protein but result in fantastic seitan

      Gonna look out for these. Everything I made with vital wheat gluten until this day tasted too "floury", maybe it's something about the brand I got... In my country we don't have many of them, or lots of vegan options, so I decided to go on with the easiest ones to find (mostly grains).

Tonight I made a no sodium general tso sauce by combining a no sodium soy sauce replacement and adding In the brown sugar, and chili flakes. For a first attempt it came out surprisingly good!! I have to play around with the sauce recipe next time but it’s a good start.!

    I switched up the seasoning a bit and this was my first ever attempt at seitan, and it came out great! I added nutritional yeast, white pepper, and a smidge of MSG, fried them in ghee (I know, I know, but I'm not vegan or vegetarian, just someone looking for more non-meat protein alternatives) and they came out delicious. Thanks so much.

      Seitan has a ton of protein; the 100 g of vital wheat gluten alone in this recipe has about 75 g of protein [all I did was google that] I give you a lot of credit for trying this out as a non vegan/ vegetarian, seriously!

    Made this last night after having bought 2 kilos of gluten flour months ago but not having the energy to start any seitan project..     This recipe definitely is a keeper. I altered the seasonings to use what I had on hand. I used Old Bay, a pinch of MSG, and traditional Caribbean green seasoning (Shadow benny, garlic, pimento pepper and scotch bonnet). For the sauce I used a mixture of sweet thai chilli sauce, vegetarian oyster sauce, soy sauce. This tasted really great

    Oh my, I made this tonight. My hubby cannot eat sugar and has begrudgingly changed to a vegan diet. Instead of the Tso's sauce, I used a sugar free teriyaki sauce. I quickly roasted some pineapple and broccoli to toss in with the sauce and served with a seven-grain mix. Hubby was totally impressed, had seconds and asked me to make a batch for his lunches next week. This is now on my rotation. Thanks posting this awesome recipe and I did go to @futurelettuce to comment. Absolute YUMMO

    I really wanted to post a pic up here but I don't think I can. I made this and it is completely amazing, I really cannot believe how good it is. Thank you guys so much for rescuing us from the encyclopedia type recipe books about how to make seiten.
    I didn't have any issues with the texture but just for peoples information I have lived in some houses where the cooker just can't go low enough for seitan. I also did spend a few minutes beating on the dough pretty hard with an oil oil bottle. I made it at half quantity for a single. I also thought it had gotten to dark, burnt really but it really gives it an authentic texture and chew. I just used enough water to bring the dough together without being sticky.

    Made this using arrowhead mills protein flour because i couldn’t find the stuff he was using and it worked just as well! It was delicious I wish I could post a pic of it because it looked just as amazing as it tasted!

    I make this all the time now and the whole family loves it! Pro-tip: form the seitan ball into a long strand and then cut off pieces with a knife or cleaver. Much easier and quicker than tearing by hand!

    Game changer. I'm usually a soy curl kinda girl but friend is allergic to soy. I hate buying premade seitan cause I know it's so cheap to make but usually takes forever! This is awesome.

    Nice - having a quick seitan recipe up my sleeves is welcomed. Thank you! I have a great digital pressure cooker (instant pot) seitan that does not fail. There are others online, but they will produce that sponge texture no one wants. A tip you should try is to add some vinegar to your raw dough to cut the gluten flavor out. For my 2 cup recipe I use 3tsp, so try 1tsp for this batch and see if you notice a difference. :)

      @@lorr.jones8887 I would have to make video, but the key is to NOT BOIL, but STEAM it in a tight container. I use those metal stacking cake pans with lids for the instapot, but you can foil wrap any cake or loaf pan that will fit. I only load up the first/bottom pan so the water is halfway or less up the side. Sealed it acts like a double boiler, if that makes sense. High pressure for 125 minutes. Done

    I don't know if you've ever heard of the Chinese emperor, long time ago I'm not sure what dynasty,
    But he was young and he was a practicing Buddhist, he had some kind of feast for other people of the Kingdom who came and his servants made mock meats that according to the story The visitors could not tell that the food wasn't "real meat".
    Only after the feast he revealed, I'm not sure about that ingredients they use though I would love to know their recipe

      That makes sense - seitan was invented by Buddhist monks centuries ago. The story goes that some monks would sneak out to town at night to get meat at the local restaurants. That stopped when it was discovered how good seitan was. Pressed tofu and konnyaku were also used to mimic meat & seafood.

    I just finished eating a batch. Delicious! I subbed chickpea flour for the regular flour, fried it in peanut oil, drained off the excess grease from the pan and added Tsang ginger sriracha sauce. We will make this again.

    Wow! I tried this last night but I substituted chickpea flour for the all purpose wheat flour and it came out delicious. That said, it needed a few hours in the fridge to become much more chewy (the way my wife and I prefer our seitan) but the truth is the speed that this technique works is incredible. Wow!!.

      I have a rec for you too! Try TVP (textured vegetable protein) for sloppy joes and taco meat! It's a fantastic substitute and really picks up flavor (and is a bit healthier than the beyond/impossible meats at that ahaha).

    A great recipe! We replaced the salt with a tablespoon of nutritional yeast and its great. We even divide the batch into 4 balls and use it to make cheeseburger patties.

    As a meat eater, could I tell this isn't meat if someone served it to me? Probably. Maybe I would be be surprised though, I have had vegan chicken nuggets that absolutely would have fooled me had I not bought them myself.
    Would I care? Not really, honestly that looks really good and I want to try it regardless.

    Just made this. I didn't have sage, but I put some thyme in. It didn't ruin it, so I guess that worked. It was good, had very meaty texture, but it was very heavy. So I think if I make it again, I will make less, and mix some veggies in at the end. I used more water than this recipe though. :)

    I think I know why it came out a bit tough. There is another TH-cam channel "Irene the coco queen" look up her sweet sticky setain. She does a very similar technique. I think you will love the recipe. I'm trying to make a version like little KFC bits for KFC bowls.

    Just made this, well a variant with the ingredients I had in the cupboard... Blown away by how good it was. I didn't have the sweet chilli or sesame so I used a bit of BBQ sauce, the sweetened soy sauce you made and some mango chutney. I also used a different seasoning mix, used salt, garlic, and Chinese five spice. Also added in a cheeky sprinkle of msg. It was absolutely delicious. Kinda came out like Chinese BBQ ribs

    The gumminess has always been a turn off for me with seitan. I've seen this recipe a zillion times in the Seitan Appreciation Society group and it looks great every time! Will def give it a shot.

I’ve seen a few people in the SAS say they felt this was gummy.. but km wondering if it had to do with the sizes of the pieces being too big or not cooking long enough. I made smaller bits and cooked on the longer side of the suggested and it was perfect

    If you don't have kecap manis kicking around you absolutely can make it in a pinch with sugar and soy sauce, but don't microwave it, boil and reduce it. For a super quick version (going with your theme) I would probably use soy sauce + molasses. There is something magical about the sweet, sticky, salty deliciousness that is kecap manis.

    I appreciate easy ,lazy vegan and good to know you approve !!! I don’t always feel like cooking and when I don’t have the energy to do much it can be a life saver .once in awhile I make vegan general shos chicken with my vegan general Shos sauce !     My first proper meat replacement as a vegetarian was seitan. I had to call over the waiter to make sure I hadn't been served chicken!
    Once it's covered in sauce, and with the sides, it's really hard to properly judge.
