Old Fashioned CORN PUDDING - How to make CORN PUDDING Recipe

  • A classic dish that's rich in flavor yet soufflé-like in texture. This popular corn dish has been a favorite staple (for generations) in the southeastern parts of the United States, especially in Appalachia.     OLD FASHIONED CORN PUDDING
    12-14 ears fresh corn, husk & silks removed
    2 cups whipping cream
    1/2 cup butter, melted
    6 large eggs
    1/4 cup plus 2 tablespoons sugar
    1/4 cup all-purpose flour
    2 teaspoons baking powder
    1 teaspoon kosher salt (add more or less)
    Preheat oven to 350 F degrees.
    Light grease or stray 13" by 9" baking dish. Set aside.
    1. Cut corn off the cob, scrape milk and remaining pulp from cob; discard cobs (about 6 cups).
    2. In small mixing bowl. Combine sugar, flour, baking powder and salt. Whisk well together. Set aside.
    3. In large mixing bowl. Combine eggs, whipping cream and melted butter. Whisk well together. Add in dry ingredients (sugar mixture). Whisk well. Add corn, fold in gently.
    4. Add corn mixture to prepare baking dish.
    5. Bake 40-50 minutes or until golden on top.
    6. Cool 20-30 minutes before serving.

    I have been looking for days for this recipe. I have finally found it! I want a custard type corn pudding. I don’t want cornbread with lumps of corn in it. It’s in the oven now but I can tell already… this is it! Thanks a bunch!

    Wow!!!!!!! What a great recipe. My family loved it so much, I had to make it again, they ate it up as soon as it came out of the oven. I added more sugar, and served it as a dessert. Thks for sharing.😁

      Merrilee She knows how to handle the corn. Canned and frozen will work, but fresh is AMAZING.

      +Marin Yordanov .. for a single recipe like she did in the video she said 3 cups was used because she halved the recipe. So off the top of my head I'd use about 11/2 cans whole kernel corn, drained. That would be using 15.25 oz. cans which read servings per container 31/2----1/2 cup servings...which=2 cups per can.

    I am so glad I found you. I was looking for corn pudding using fresh corn. My hubby is a farmer, grows from seed many vegetables...you name it, he grows it. His main crops are sweet corn, tomatoes, okra...too many to list...and we sell harvested vegetable picked daily. I wanted to find someone who uses fresh corn and not canned. I love corn puddiny but hubby not so much. So I thought if I could find a recipe using fresh corn, that would be great and then I found you😊. Can one put 1/4 tsp of vanilla in it? Thank you. I cannot wait until I try it. We lost our first sweet corn field due to drought and temps in the upper 90s to 100.

      This CORN PUDDING recipe never disappoints!! I've been making this with freshly picked sweet corn for my family/friends over the years, but never used vanilla extract in the mixture!! If you give it a go, please share your results with us!! So sorry for the loss of your sweet corn due to this drought sweeping America...it's such a huge loss!! ENJOY cooking with what the drought didn't take!!

    Hi there, I just saw your recipe for this yummy looking corn pudding. I really want to try to make your recipe. Now, I make my own homemade creamed corn and it is not runny like in the can, it is creamy..so would I be ok just to use my cream corn and not add any more corn?

    This recipe is absolutely delicious! I was wondering, does the recipe change when you use the frozen corn? I want to make this for the holidays and am now picking corn to freeze. My blanched frozen corn is always a little liquidy. I was wondering if I should freeze the corn fresh off the cob without blanching it? When you buy frozen corn from the store is isn't the same. Its not liquidy. Thanks

      +Renee Barone Hi Renee, I have some experience in freezing corn fresh off the cob. Although, I have never used it while making this Corn Pudding recipe. Therefore, I would recommend that you definitely freeze your corn fresh off the cob without blanching it, since I used fresh corn cut right off the cob for this recipe.       Hello, I just came back to look for your recipe again and found your reply. I did freeze it right off the cob without blanching it and it was wonderful! Thanks again , corn season is upon us again and I'm ready to make a 1/2 of batch right now. LOL

    I have my grandmother's recipe and I try to make it every T-giving :)
    I dicker with it a little by adding a can of green chiles and some onion.
    You cant go wrong with corn pudding!!

    I’m experimenting to find a more custard based corn pudding. I’m separating the eggs and whipping the egg whites to soft peaks and folding in last. Your recipe is very close to what I think a custard should be. Thanks!

    My late southern mother used to make this, but as a dessert not a side dish.. Clearly, there was probably more sugar in it than in your recipe. I will use your basic recipe, but add a little more sugar. Have you ever heard of the dessert version of this? Do you have any suggestions for making it more of a dessert? Maybe add vanilla extract and egg yolks instead of whole eggs? Would it be more pudding-like with just yolks? Is it the egg white that makes it souffle-like?
