    Cast Iron Corn Pudding! (You will just love this stuff)
    In a large bowl whisk together 4 large eggs until they are one color.
    You can also use 5 medium or 6 small eggs. Add 1/2 cup of white sugar, 1 cup of sour cream (8 oz.) 1 tsp. vanilla, 1/8 tsp. nutmeg, then add 2 cans of creamed corn. 2 cups of kernel corn, and mix well.
    Then add one 8.5 oz box of Jiffy Corn Muffin Mix, and 1 cup of melted (unsalted) butter.
    (Let the butter cool down to room temp so it don't cook the eggs) Now fold everything together with a spatula or large spoon.
    Put it all into a 12 inch Cast Iron pan. Rub the pan with butter or spay it with cooking spray first. Now bake it in the oven at 350 degrees for 45 to 50 minutes or until it is golden brown. Then turn off the oven and crack the door for 15 minutes and let it cool down a bit more.
    Now set it on top the stove and let it cool down a bit more.
    Serve it warm!
    Because it is so good and almost like a dessert I wanted to spay some whipped Cream on top! (That might be going to far)

    I use my granny's secret for makin' puddin' or just plain ol' cornbread. She always fried up some good bacon, left the grease, and used canned milk in the batter. She'd get that skillet hotter than blue blazes and pour that batter out, you could hear it sizzle. Then it went in the oven. To test it she would rip a straw off her broom. When I was young she had a wood burnin' srove and a red hand water pump at the sink. Loved your video. P.S. I am 80 years young.

      I preheat my skillet for cornbread and add butter to it just before pouring in the batter. It gives it a nice brown crust on the bottom and sides. I'm going to have to try it with corn pudding now.

    I have been watching these videos for a while now and I did not know that Steve had passed away. He was so funny and I learned a lot of recipes from him.     Loved the recipe. Jiffy is always glued to the bottom. That's the beauty of their mixes. You open the box and unfold the envelope and pour! I use them all the time,

    I'm with Ya, Sheila!!
    Butter on Butter, LOL!!
    This is similar to something we make here in Texas called Mexican Cornbread.
    It's just as you made it but add:
    1 Fresh Jalapeno, chopped(remove seeds and veins)
    1- 11/2 Cup(s) grated Sharp Cheddar Cheese (mixed in)
    1 Half Cup Sharp Cheddar with 1 Half Cup Monterey Jack Cheese Sprinkled on top just before baking.
    Bake as you did your recipe.
    The version that was given to me was from an old man in the country...
    His instructions were to "Beat the H*LL out of the whole mess, then dump in a cast iron skillet."
    Geez...I LOVE Precious Country Folk!!
    My family was from Sparta, TN and I married a wonderful Texas Man (Born & Raised).
    Been married for 36 years and LOVE it here in Texas (but y'all just make me happy)!!

      Mexican Cornbread could be made slightly easier too, IF.... 1 box mix, 1-2 egg, 1 stick butter, 8oz sour cream, 1 can cream corn... + 1 can drained "mexicorn" kernels (has peppers already cut up & in it, sold by canned corn)... maybe some shredded 'mexican style' cheese blend IN it + if want slightly more 'kick'.. a splash of whatever favorite salsa you have on-hand (for flavor & added chunks of veggies) & some chiuhaua or cotija (that's more of a crumbly grated consistency & authentic) w/ a tiny bit of 'cumin' seasoning (or adobo) on top, added just before baking .... nom... nom. (gonna have to go make that now, darn it!) Could be served w/ a little extra sour cream, salsa or just butter on side.... or nothing, just eaten as is. Deeeeeelish! ENJOY :)

    My Grandad kinda sorta looked like Shotgun Red. When I was a kid we took a family vacation to Nashville. While there we had to buy a Shotgun Red doll for Gramps. I have lost all my Grandparents and miss them all terribly. I came across this video and was pleasantly surprised to see Shotgun Red. It brought a tear to my eye but also a lifetime of happy memories. Wish I knew what happened to that old doll. Thanks for helping me remember good times with the ones I loved most. On top of that... I loved the video and will definitely be trying this recipe and subscribing to you channel. Thanks again!

    I love spoon bread! It’s not so sweet, just the sweetness of the corn cones thru. Then you melt butter on top of each serving at the table. It’s a wonderful side dish. Thanks Red!

    When I make this I put 1/2 lb freshly grated cheddar cheese in the mix as well as a small can of chopped green chilies, mild. It’s totally awesome.

      They make that canned "mexicorn" now, too.... w/ tiny chopped up peppers in the mix. Sometimes, add a tiny bit of salsa if I want even more pepper/onion/flavor & a mexican or taco blend shredded cheese. Some chihuahua or cotija grated on top, nom nom! ~ Bet the one you make is awesome too! :) ENJOY

    Today is March 31, 2020, and the Covid-19 pandemic is wreaking all kinds of suffering and panic over the whole world. But, getting back to the things that will continue to be important years from now . . . this dish looks delicious. As a Canadian, I have never heard of Corn Pudding. I am a great fan of Corn Bread and Corn Muffins, though, so I am happily anticipating making and trying your recipe. That Jiffy stuff is another newcomer for me, but if I cannot find it up h

    I am so glad comments were re enabled for this video. It's one of my favorite cooking videos. I tried the recipe last thanksgiving and guess what...I forgot the dang Jiffy cornbread mix too. It didn't matter, it disappeared in the blink of an eye and I had plenty of compliments. I've tried it since with the Jiffy and it is even better with it. I understand why people disable comments, there are so many #!@&%!!! trolls out there. Keep making these great videos and know that there are plenty of us out here who really enjoy them. Not to mention learn from them.

    Finally made this as I needed a fast dish for an impromptu family get-together. I was so sure I had sour cream, but I didn't. I substituted cottage cheese. Turned out perfectly (higher protein and fewer calories....it's delicious.

    He made me laugh! Using a whole roll of paper towels to wipe up the cornbread mix! What he didn’t think of of was he will have to clean the cornbread mis off the floor! Haven’t tried the recipe yet but I will.

    Tried this recipe. Very good with a cup of hot coffee for breakfast. Maybe a little buttery and a little sweet. Next time will cut the butter and sugar in 1/2. Will use 1 stick of butter and only 1/4 cup of sugar. No need for butter patty on finished piece. Double the sprinkled sugar before baking.

    The bag inside the Jiffy Cornbread Mix has ALWAYS been glued to the bottom of the box. Doesn't make any sense to me either!

      Secret: You just open the top and don’t try to take it out the box, it’s not meant to come out the freshness pack, simply unfold it. 🤫

      Open the top of the inner bag and empty it into whatever bowl you are using.
      The glue keeps the bag from falling into the bowl.

      Agree, I think less sugar the better and Jiffy has lot's of it. Or find sugar free and ad a little per you taste. I'm going for the Jalepeno's hot n sweet. Great video and great recipe.

      Mom used to make something similar - except it didn't have any sugar in it. We ate it with fresh tomatoes and either bacon or fatback fried.

    The Jiffy corn bread mix boxes have perforations on the on the side. Jam a thumb in there through the box and the baggy and pull the top off.

    I like to put the castiron pan in the oven with the the butter then add the remainder of the ingredients & the seared ingredients underneath is amazing

    I used to make the Trader Joe's corn bread in a cast iron skillet but sifted out the corn to cut out the grains in my diet and melt butter instead of using oil. It was fabulous !!!

    Make it a whole meal by adding fried-cooked-drained crumbled hamburger meat to the skillet first and then pour the batter over the meat.

      Or cut up a pack of hot dogs and add to the Corn Pudding to make delicious Corn Dogs. Yumm!

      Pour the corn pudding over 2-3 cans of chili which have been dumped directly in the bottom of the skillet. Any left over sour cream makes a great topping when it is on the plate.

    I wonder if corn pudding is the same as corn pone? My mom and I went to a Mexican restaurant once and they had something like this. Mom said it reminded her of something they use to have when she was younger. I should have tried to find out and make it for her before she passed. That would have made her happy.

    I mix a tablespoon of flour with a half cup brown sugar and 2 tablespoons butter and make a crumble I’ll try that that might be good to

    It looks so good! I'm sure Steve is happy that he's still making people laugh and drool simultaneously! I think I'll try this though it's only me and I would have to freeze some of it. And I'm wondering how it would be with some crumbled bacon in. Oh - and those jiffy mixes aren't meant to be removed from the box - just unfold the wax paper bag and pour it in!

      Agreed!! I also saw someone above mentioning, the addition of cut up hot dogs. I've made so many versions over the years & sat here w/ my jaw open in shock thinking... "OMG, how did I never even think of that? " ..... Would prob taste like really good homemade corn-dogs!! :) ENJOY
