Jean-Phillipe and Gordon Ramsay are both awesome in their own way, sort of like a Yin-Yang relationship. Ramsay is usually yelling during dinner service, but also has a nice side that shows through sometimes. JP is usually calm during service, but he has an angry side that shows through sometimes. They balance each other out to make dinner service run smoothly.

I've been there and couldn't deal with stress, so a friend of my father who's a top chef teached me how to deal with stress and since then I've been calm. Even in stressful situations.
Remember on Hell's Kitchen game quote: The customers can be impatient. Learning how to cook under pressure will compensate for the customer's impatience.
