Pretty sure JP just wanted to say one thing to him and move on, but Van would rather let his immature attitude drag a petty argument out for the whole night instead of taking 2 seconds to listen for once.

That's the point of Hell's Kitchen being such a high-stress environment and Ramsay constantly being in their face, to prepare them for what a career as a leading chef in a 3-Michelan Star restaurant is really like. This isn't overexaggerated or shown up for TV (outside of the editing), this is how it really is in the kitchen of a top-dollar eatery. If you can't cope here, you'll never survive in one of Caesar's Palace's kitchens.
