Sheldon Simeon’s Pancit Filipino Noodle Dish Will Be The Star of Your Next Cookout | Chefs At Home

  • Sheldon Simeon-two-time Top Chef finalist and author of “Cook Real Hawai’i”-shares his family recipe for a Pancit Filipino noodle dish that’s sure to be the star of your next cookout! This Pancit is a stir-fry packed with vegetables and three kinds of protein, piled high with noodles, and tossed in a salty-savory sauce that ties the dish together. It's a Filipino classic that's easy to scale up for a crowd, just as long as you have a wok big enough! (Recipe below)

    For the fried garlic:
    1/2 pound peeled garlic (from 4 medium heads)
    Neutral oil, for frying
    Kosher salt
    For the pancit:
    Kosher salt
    1pound fresh chow mein noodles (pancit Canton) or other fresh thin egg noodles
    4 tablespoons neutral-flavored oil, divided
    1 cup chicken stock
    1/4 cup oyster sauce
    1 tablespoon plus 1 teaspoon fish sauce
    1 teaspoon ground annatto
    2 tablespoons minced garlic
    6 ounces boneless, skinless chicken thighs (about 2), cut into 3/4-inch pieces
    6 ounces pork tenderloin, cut into 3/4-inch pieces
    1/2 pound peeled and deveined large shrimp, cut in half
    Ground black pepper
    4 ounces mushrooms (any kind), stems discarded, and caps thinly sliced
    1 medium carrot, thinly sliced then cut into strips
    1/2 medium red onion, thinly sliced
    4 ounces Napa or green cabbage, chopped
    3 scallions, dark green tops only, cut into 2-inch pieces
    Calamansi or lemon wedges, for serving
    Hot sauce, for serving
    1.Make the fried garlic: Preheat the oven 250°F. Line a baking sheet with paper towels. In a food processor, pulse the garlic until finely minced.
    2. Fill a medium-width, deep-sided pot halfway with water and bring to a boil, then turn off the heat. Fill a large bowl with ice water. Transfer the garlic to a sieve and submerge in the hot water, blanching for about 2 minutes. Remove and dunk the garlic in the ice water until cooled, then drain well and spread evenly onto the lined baking sheet. Bake until the garlic is dry to the touch, 12 to 15 minutes.
    3. While the garlic is drying, empty out the pot and dry well. Fill the pot with at least 2 inches of oil, making sure to leave a few inches of clearance from the top of the pot. Heat the oil over medium-high until it reaches 350°F (use a thermometer).
    4. Have the baking sheet lined with paper towels at the ready. Add the garlic and fry until the bubbles begin to subside and the garlic turns golden and rises to the surface, 3 to 4 minutes. Transfer the fried garlic back to the paper towels and let cool completely. Season generously with salt, then transfer to a sealable container and store in a cool, dry place for up to 3 weeks. Reserve the garlic-flavored frying oil for future use.
    5. Make the pancit: Bring a large pot of salted water to a boil and blanch the fresh noodles according to the package directions (or cook until they’re pliable but firm, not more than a minute or two). Drain well and toss with 1 tablespoon of the neutral oil.
    6. In a small bowl, whisk together the stock, oyster sauce, fish sauce, and annatto. In a wok or very large skillet, heat 3 tablespoons of the oil over high heat until shimmering hot. Add the garlic, chicken, pork, and shrimp and stir-fry until the proteins are mostly cooked, about 2 minutes. Season with salt and pepper.
    7. Add the mushrooms, carrot, and red onion and stir-fry until softened, about 3 minutes. Stir in the noodles, then add the oyster sauce mixture and stir-fry until the noodles are heated through and the sauce is absorbed, about 3 minutes. Add the cabbage and scallions. Reduce the heat and cook until the noodles are glazed and the vegetables are soft, just a few minutes. Transfer to a serving plate. Garnish with some of the fried garlic and serve with citrus wedges and hot sauce.

    My mouth is watering. I grew up in a community that was primarily Mexican but there was a large Filipino community as well. Any potlucks at school always had pancit and I crave it to this dayyyy.

    I’m so in love! My Filipino coworkers at my hospital make this delicious dish to sell and raise money for a lot of different agencies, I buy buy buy every time they make it!! They also make the egg rolls which are so delicious with the lumpia sauce!!! Their noodles are much skinnier than these though.

      pancit guisado, the thinner noodles. This is pancit canton. We have the mix guisado-canton as well, and the lomi and the miki and so many others :)

      he used pancit canton on this one. I think you tasted the pancit bihon but there is also a version that combines bihon and canton version. There's so many versions of this. It would have been amazing if he put some crushed chicharon 🙂

    OMG my mom is Ilocano!! Mabuhay!! Love it!! Everyone has their own way. My mom uses pancit bihon....maybe because that's what is available here. She thinks my pancit is better than hers.....too be expected, I learned from the best!! I also make some bomb a$$ lumpia!!

    The wok is the main cooking vessel in south-east Asia and China. Pansit, pad Thai, fried rice, fish head curry, etc. There's a whole lot of dishes cooked in a wok so having one opens up a lot of possibilities.

    I remembered the time when my grandfather was so pissed at this food. We yse to cook and eat pancit during birthday because it was said that it can make you life longer. My grandfather on of his birthday was so pissed that he eventually said that this food is a curse making it a hindrance for him to rest for good because he ate to much of it

    I'm glad he knows he's filipino. Hawaiian story here.. Early 2000s. I visited Hawaii for the 1st time. Chatted with some locals. Asked for their name and it sounded filipino to me. So i say they're filipino. They say they're not. They're Hawaiians they say. I said nah.. I meant your heritage. They said no. Because they're from iloilo. They said this with confidence. Soo i digress. Then later on this happened again. Lol. So i came to realization that some filipino Hawaiians don't know their heritage.
    I know this doesn't have anything to do with the vid. Just felt like telling a short story. 😅
    The pancit looks delicious. Easy to cook. But preparation is a hassle. Lol ..... Will only make this when I'm feeling less lazy i guess. Two thing i picked up in Hawaii, spam and L&L .... Love'em both.

    Always love how Chef Sheldon recognizes that people will always say the best is from their mom. That’s why I laugh when people say a restaurant doesn’t make a dish right when it’s something like pancit when it’s such a regionally diverse dish. Even a chef in the next street or town over could have a distinctly different version of a dish.

    I believe that you can cook anything in a wok! When I was moving from San Jose to Pennsylvania, I was in my apartment with everything shipped out. I only had a bowl a plate a cup and my wok. I learned just how versatile my wok was. If you can only have one pan, it should be a wok.

    Our family style is very similar, only we use bihon noodles, more patis and soy sauce, no oyster sauce nor anato seeds. The rest is almost the same. Cabbage, carrots, lots of garlic and sometimes green beans with pork and chicken, or chicken and shrimp. your version is really nice too though. Always love to try other versions of pancit.

    Looks awesome. A Vietnamese buddy of mine suggested if I was going to wok I should get a burner and do it in the garage. 😊. My son, living on Oahu, would have loved the dish and appreciate your rack of boards on the wall. Sadly both my son and buddy past last year. I loved your video but it did choke me up.     I was watching your other video on making the Poke. I came across this one for the Pancit. Mistisa Ako, and yes there are SO many versions of Pancit! It depends on the occasion and who I am cooking for. My Nephew and myself prefer Canton and Bihon while the rest of the family likes Canton only ! I have never has Poke and can not wait to try it. I have found a couple of restaurants here in my area. I think I will try a restaurant Poke first before I venture on to make it myself! Thanks for the recipes and videos I can’t wait to try some Poke!
