the beauty of Filipino cooking is that we're not so hung up on "traditional", even our national dish called the Adobo has more than a hundred versions, probably thousands (each household has its own quirk). Adding chili is definitely a good one!

Its not that they dont give you the recipe. Its just to give you the exact amoumnt of measurements for the ingredients its what takes time to make.
Mostly it because its just made to taste after you deSired

hello Ms. Marion. though I'm a Filipino, I must confess that I don't know / have difficulty cooking pancit bihon. to think its one of my favorite dish ever. a few years after I arrived in the US, I had to buy pancit bihon from Filipinas who cook n' sell on the side. I guess what intimidated me to cook pancit bihon is the fact that my mother would cook this in a "kawa" which is a super wide old fashioned metal cookware, everything eye ball, no measurement at all.
you can't imagine how happy I was when I cooked pancit bihon following your recipe. I was dancing with joy. as I wrote this, its already the 2nd time I made it. the entire recipe exactly fits my cast iron pan! thanks for posting. love you so much!

  • @911reymond

Marion, you rock! You nailed it! That is how we exactly cook it. Aside from being more tasty, throwing the noodles straight to the pan ensures longer lifespan of the dish. It doesn't spoil easily. Because as per my experience, i soak it before in plain water and it turns out that the noodles not just becoming bland and soggy at some point but easily spoils as well.

I did this recipe twice already, Marion. I'm Filipino and I don't usually cook. I am impressed by this! So so good. When I did it the first time, I didn't put dark soy sauce. Hence my pansit looked paler than it should be. In my second try, I tried it with dark soy sauce and the color perfectly came out the same as we have in PH. No snow peas and chicken in both times but I used carrots and pork slices. Perfect recipe. Thank you xx

I love your take on this dish. Only one thing I would add that I've seen in other recipes is chicken liver. My mother, who is Italian, has always made this while we were growing up as she had learned from a neighbor when my father was in the Navy and we lived on base. Now I want to implement your version and take it up a notch. Thank you!

    • @michelangelomiguel1596

And you pronounced pancit bihon very well but if you want to sound even more correct (not necessary but since you mentioned), just need round out your 'a' sound a little bit more. Since it's a daily menu that's why it's very easy to cook. I'm glad you liked it Marion!!!

Tried it today... love from the first bite! A few footnotes, for the next time:
    1. Used an unsalted chicken broth, so it still needed salt at the end
    2. 2 cups of broth was a little too little (the noodle soaked it up in no time, so at the end, it was pretty dry), so next time it's 2.5 cups for me.
    3. A tart note is a MUST!
Otherwise, it was quick, easy and most of all YUMMY!!!

I made this last week. I had pork belly, but no chicken thawed. So I used shrimp 😃
What a delicious, simple, kid friendly dish! And only one pan to wash. I’ll be making this again soon. Thanks, Marion 😘

Made this for dinner - how is this food so flavourful with such simple ingredients? Honestly. This was so quick to make and so flexible - having the carrot in there makes such an amazing crunch and sweetness. Love. New week night dinner - confirmed.

Filipino tip, it is best to eat it with Pan-desal (or any plain bread)
We usually eat pancit bihon with a plain bread. Perfect for birthdays and any occasion or just any day!
You pronounced it correctly with your lovely accent 😊
Thank you for cooking this dish now I will cook this tomorrow ☺️. Been living in different countries for a very long time now and food always brings me back good memories.

Thanks Marion for showing this dish, some filipino they add the the veggies when the pancit is almost cooked, or the stock is almost gone. The reason is they want the veggies crunchy. I prefer both. And sometimes they add chicken liver too or kikiam, fishball, shrimp. 😊
