How To Make Saimin - Hawaii's Ramen Noodle Soup

  • Chef Sheldon Simeon shares a comfort food from his home state of Hawaii: saimin noodle soup. Somewhat similar to ramen, Sheldon explains how this dish, found only in Hawaii, is the product of multiple ethnic cuisines.
    Sheldon starts with a pressure-cooked broth made from chicken and pork and adds a variety of Japanese ingredients, like kombu (dried kelp), dried shiitake mushrooms, dried shrimp, plus garlic, ginger, carrots, and leeks, for flavor. Next, Sheldon marinates and preps some beef for barbecue skewers that traditionally accompany saimin. Finally, Sheldon boils instant ramen noodles and assembles the saimin with green onions and kamaboko (cured fish cake) for garnish and Chinese hot mustard on the side.

    What’s cool about Sheldon is he’s so proud of being from Hawaii. I was the same way growing up only knowing top ramen as package saimin. We also called edamame just soy beans growing up and the person who taught me that Japanese word was a white guy in college. I’m ethnically Japanese 😅

      Don't be to hard on yourself on not using Japanese terms. Japanese cuisine gets a free pass in having its techniques, dishes, and ingredients untranslated in English conversation. Unlike Chinese cuisine, which is clumsily translated into English.
      People know ramen, but not lamian. They know wasabi, but not huajiao. They know gyoza, but not jiaozi.

    Back in the 1970's when I lived and worked in Hawaii, I was surprised this was on McDonald's menu. Along with Portuguese sausage, eggs, and rice for breakfast. But my favorite fast food out there was Zippy's Zip Pac. A piece of fried chicken, a piece of fried fish, some teriyaki beef, and what my local friends called a Samoan steak (Spam) - served on a bed of rice. It's hard to believe it's been over 40 years since I lived there. But if this Kama'aina ever gets back, my first stop will be Zippy's.

    I love how he showed it with he packaged noodles tho...more typical for the average household here.
    I grew up eating this stuff everyday.

      I transferred school there for college from the East Coast a while ago. Immediately, I realized I walked too fast when going to class. Everyone was strolling along and I was doing the East Coast speed walk. Never really adjusted to the pace there and settled on the compromise of West Coast. Happy medium between East Coast and Hawaii.

      Kevin Gualberto being Hawaiian is different from being born/living there. It’s not the same as a person born in Texas being a Texan, because being Hawaiian is an actual ethnicity, it won’t show “Texan” on somebodies birth certificate just because they were born in Texas, and it doesn’t show “Hawaiian” because they were born in Hawai’i.

    Haven't been to Hawaii in like 20 years, but, when I was last there, one of my favorite things to do was hit up Zippys and place an order consisting of saimin, chilli and rice, and a fruit punch. I can only hope and pray that Zippys is still around, so others can taste the amazing flavors of that meal.

    Grew up always calling Top Ramen Saimin. We didn't live in Hawaii, but my dad is Hawaiian and that's what he called it. I felt so weird when my friends didn't know what I was talking about. Totally vindicated when we ended up visiting Maui a few years ago and saimin was everywhere.

    My Grandma always called noodle soup (Top Ramen) Saimin. Lol, i never knew it was a Hawiian. When I'd spend my weekends at my grandparents house she would always make saimin for breakfast for me and my sister. RIP Grandma

    Lived on Oahu for six months a long, long time ago. Once a week we’d go to Palace Saimin for dinner. Lots of little old ladies in the kitchen, order at a small window, get your cold drinks from a couple coke machines, sit at picnic tables with other folks. A couple orders of beef saté to go with the noodles. Christ, that stuff was delicious. Comfort food, Hawaiian soul food. I sure miss that.

    I had siamin in Hilo on a cold rainy day. Was perfect after exploring the volcano park and being outside all day. Good stuff!!

      Lol me too when I first moved to the mainland in my own, I had to learn only to use that term at Hawaiian eateries because no one knows what Saimin is.

    Ramen noodles!!! I ate 5 days a week when in college. You think I would be tired of it... but nooooo. Cook With soup, cook without soup, eat it dry without cooking, stir fry, deep fry, making dessert out of it, making salad out of it... Just can’t get enough of it!!! 👍👍👍👍👍😍😍😍😍😍😍

    growing up in Hawaii dishes like this was more common than typical American breakfast, eating Cereal in the morning was more for the privileged kids... those rich faka's.
    Sheldon picked beef skewers as his meat w/ saimin and how it was prepared...I'm over here like.... Ah to lazy for that, I think SPAM will do just fine.

      P3rformula so what? Oh god if used some pearls of Chinese egg noodles, or a pack of soba it’s somehow better? Noodles are noodles my dude. They’re either homemade or they’re dried and in a flavorful broth like that it really doesn’t matter that much.

    My mom grew up in Hawaii and we had Saimin all the time when I was a kid. My mom always used Spam in hers. I Spam a traditional ingredient?

      MonoLake02 pretty much. Like rice, spam is used a bunch here. Even today I had myself a spam musubi.

    I made this and it’s now my favorite dish. I just wonder what you could do with the leftover chicken and pork, and even the leftover aromatics that you use to steep.
    In any case this soups rocks!! And is great first thing on a cold morning :)
