I live in Hawaii so I've actually been to his restaurant in Maui a lot. It's a small little shop by the airport and everytime it's open, it's packed with people. The food there is great, perfect for lunch! Good to know the owner is such a cool wholesome guy. :)

I made this for my brother, my partner and myself a few weeks back 😍 there are no words. The flavours, the textures, so much but all so balanced. It was a goddamn treat. Made it again a week later 🤣 my brother and my partner had their chicken with the aioli in brioche buns, my brother had all the fixings in there too. I just had it as per the recipe. And once again, blew us away Host is class too! Would love to one day visit his restaurant and personally thank him. We are the UK and honestly knew nothing about Hawaiian cuisine specifically, we are sold

Couldnt get the same furikake, or the crackers, could have ordered them online though, but I am in the UK and bought some rice crackers from an Asian supermarket and glazed them in soy and mirin and baked them 10 mins. I think everything else I did the same. We have mirin and gochujang etc in the house always tbh so it wasnt too bad. I am that kinda person who will try these things, wasnt difficult or complicated, can prep a lot of it ahead :)
From Korea. I love how you combine three sauces. Mayo, Miso, Gochujang damn... what can go wrong? +Furikake is delicious and savory, I like it on rice and noodle.

I've had the pleasure of consuming this dish here in Japan, and the I can vouch for the Mochiko chicken by saying it was delicious. Since I have moved to Japan this dish along with a number of other delicacies here I consume on the regular. I will take my hand in trying to create this meal myself. Wonderful food.
Can't tell you how excited I am for this! I moved to the bay and been craving so much hawaii food, one being mochiko chicken. I haven't found anywhere who makes it but now imma attempt this so thank you!!
I went to Maui for my honeymoon. Tin Roof was a random lunch spot we picked after the 5 hour flight from California. Best decision we made and by far the best food we had the whole trip, and it's not even close. This recipe seems a little over my skill level but I'm excited to give it a try. Can't wait to go back to Tin Roof.
Love this!!!! Um im from hilo and the one thing we do is oyster chicken. From talking with folks is a Hilo things. Same idea if fried chicken but with a very rich gravy on top.

The question is the gravy. Brown gravy with hint of soy sauce and oyste sauce. If you ask even jn honolulu for oyster chicken and people give you a huh? Look. Same up here on the mainland. Hilo had a number of family owned spots that do it. I make my own version that my friends here like but its not the same. Gravy i make is typical chicken gravy, rouxe thickened, seasoned with soy sauce, garlic and ginger, and oyster sauce. Wish i had better info.
