i hail from the north of luzon Philippines and this is what I call comfort food so simple so organic and so awesome food I grew up with. Making me miss my mom up in heaven she cooked this the best!
GI (Genuine Ilokano) here and thanks Sheldon in continuing our traditional food. I miss katuday, I have not seen anything it here in San Diego but we are slowly obtaining all the Ilokano veggies that we need for our denengdeng.
Not one to comment, but this if by far my favorite feature on the Halo-Halo series. So great to watch from the brief history narration to the cooking and most especially the harvest. The Filipino Hawaiian heritage lives on.
When my father was sick he was bed ridden for a few weeks. He couldn't speak because he had a tube in his throat. His lips to point out the thinks he wants made every nurse and doctor laugh. One of the doctors has a Filipino wife. He understood my father
Brings me home. Sugar cane is what brought my grandparents to Hawaii in pursuit of a better life. The sight of sugar cane growing, transports me to my childhood and these dishes warms my soul! Thank you Francesca!

Thank you to EATER for producing this video. Ched Sheldon's cuisine and heritage brings back memories of Good Old Hawaiian Plantation Days. I'm proud to be an Ilocano and am greatfull to my grandparents who were also Sakadas and who worked hard for us.
Both my paternal and maternal great grandfathers were Sakadas. My father's grandfather eventually moved to California and became a grape farmer, that's where he met his demise though. While my mother's paternal grandfather had a heart attack on the ship, while he was coming back to Ilocos to bring his family to Hawaii.
Chef Sheldon, I believe in your cooking! You have to have your own cooking show. It’s so clear that you have captured the very essence of pork adobo in the other show. Never had I ever experiment in putting coconut milk on adobo cause sour vinegar on milky coconut milk will just clash. Sour-milky mimics spoilage taste. In tinola yes, cause it compliments the ginger papaya dish. I hope you continue innovate more new Hawaiian-filipino dish.
I use many Filipino ingredients when I make Italian food(Italy Italian - not American Italian)...like using bagoong alamang, bitter mellon aka amaplaya, malunggay, and patis...it really mixes well...my next challenge is to make Filipino food with Italian ingredients - which is a little bit harder...ciao!!!
Try redwine adobo, with calabrian chili paste when you make the sofrito. Also Osso Buco Caldereta style (liver spread and cilantro) with Orange Juice and Zest

ilocanos make up majority of the filipino population in hawaii. dont speak it but my grandparents do. born/growing up in hawaii and having the filipino culture is the best of both worlds!

Filipino food is the only asian food Americans don’t eat. Everyone goes out for Chinese, Japanese, Korean, Vietnamese, Thai, ect. But no one ever says lets go get Filipino. Aside from lumpia and pork skewers. Most people know nothing about it. Nice to see someone promoting it. Honestly, I still don’t think it will catch on.
