    The thing is that he only has two Porcini. I live in Scotland and went hunting and found a clutch of the beauties. I sliced up the bigger ones adn cooked them off. Stored the slices in jars with Olive Oil I kept the four smallest/younger ones although like most Porcini they were substantial. I threw them in whole into Chinese spare ribs with bamboo shoots in a thick Soya Sauce, Garlic, Spices, Oyster Sauce, Chinese wine sauce. I couldn't believe how delicious the Porcini were. They soak up any flavour that surrounds them and the texture turns to a nutty jelly. Absolutely Divine.

    Cooked my first found Porchini this way and fried the bread in olive oil, turned out great 👌🏼

    I found quite a bit of porcini today and was wondering if one can prepare it for freezing for eating later. Do Italians do that as well?

      Definitely can do it! But my advise would be to consume them within 3 months, not to lose too much of the texture and taste

      Dry them. Concentrates the taste.

      I don't know where you are in England but I'm in Devon right now and gathering porcini every time I go to forage. I love them!

    Olive oil and parsley? You are killing the very essence of the mushroom. Try butter and dill instead.

    Never wash mushrooms just wipe it with paper towel or peel off outer layer with a knife
