I hope I can try this recipe someday. I found quite a lot of porcini mushrooms here in Norway this autumn (which I''ve dried) ... they are loaded with flavour. I have been experimenting with risotto and ready-made papardelle. Thanks!
@@hulkhogan2113 yeah, they hold to much moisture when your cooking them. We are probably spoiled here because the picking is so good here, if we had to buy them like most folks and pay those prices, we would eat every bit of them to!
these were found in scotland where there is no culture of picking them...there is this 80+ family friend, italian guy...everything he goes out comes bag with buckets full

Fantastic! Other option than drying them is to cook them as i did in the video and freeze them in a jar. Different texture for your risottos!

Remove the spore sponge from underneath the caps of the cape before cooking ! Uck!
The gills are fine to eat, when they are young they taste great, older ones with yellow green gills should be removed but still fine to eat regardless
