I'll tell you what is still cheap, though: _Liver._ Some friends of mine were sadly tortured with liver as they were kids, so they can't eat it anymore without convulsing. But my mother taught me how to make the most of it. The key is to not over-cook it, but instead fry it really fast in lots of butter. And then use onions and cream to make a delicious, delicious stew with it. But what really does it is adding the magic ingredient: Small dices of fry-crusted bacon. You can do just about same process with whale meat, though it's probably not legal in Britain. I think seal meat is still legal tho (harbor seal is best, also because there's an over-population of it), which does about the same trick. But getting a good cut is difficult, and you're prone to getting stuff that smells of cod liver oil, so just be mindful of that. Well, this got exotic sooner than expected! So I'll head back out to the Barents Sea now. Bye!

People say you can’t learn about cooking from TH-cam. That’s not true. Also, cook A LOT. More experience means more skill.
Come to the Midwest USA.. literally competitions to see who finds the biggest ones in small town bars. Bartenders measure them and date and initial your murel mushroom. Usually have two weeks to compete.

I forage wild mushrooms in the forest. Such a rewarding hobby! So many mushrooms, so many textures and flavors. Morel season is traveling north currently. Check in your area. Am finding Chicken of the Woods right now but chanterelles will be fruiting in a month or so. Go get you some mushrooms and experiment with some dishes. Instead of generic "cream of mushroom" soup; try "cream of chanterelle" soup.

This is a lil late but a good tip on how to practice flipping food in a skillet is simply a small skillet that you plan on using and a piece of bread. No heat or cooking. Just the skillet and piece of bread. And it's all in the wrist. All in the wrist and what Gordon says in the clip.

Hi Gordon. I think I can say in behalf of most of the Slavic people, if you really want to experience what mushrooms are about, go to Eastern Europe. There is this huge world of flavours waiting for you, that you had no idea even exist! 😉 We have literally hundreds of edible kinds, that you cannot find anywhere in the shops. Only can be found with an experienced guide (usually Slavic grandparents 😃)
This is one reason I want to live in Slavic countries for a bit; I love the idea of just being able to forage food, not buy it. So many varieties to explore, so many culinary opportunities, its like a dream come true.

Love mushrooms, although people don't fry them long enough, they end up boiling them in there own water instead of cooking on high heat an evaporating water. One of my faves is mushrooms with white wine, worcestershire, cream and stilton on toasted ciabbatta or replace the wine with masala and replace cheese with wholegrain mustard
Next April come to Southern Indiana and we will take you to our spot in the woods to hunt for morels. We find bags of them every year so you are guaranteed to find some. We just fried up our morels lastnight. They were so yummy.

Up in Washington, all you need is a rainy day, and the woods become all you can eat. Where I am particularly, I get a lot of oyster mushrooms, morels, and shaggy mane.
I really appreciate this video!! The short rib recipe in particular made me feel so much more confident, but eager to keep learning and trying more. That recipe wasn't TOO much different from what I already do...but the slight differences are what really make HIM the chef!! But they're approachable differences, and things I can work toward, and I'm really excited for this coming slow-cook season!!!! Thank you, Gordon!
The house I used to own had an apple tree out back and every year without fail..... a couple dozen morels would show up under it. Only place I ever knew of where I could check on them as they grew and pick them at their peak.
