    2 TBSP canola oil
    salt and pepper to taste
    6 sprigs of thyme
    3 cloves smashed garlic
    3 TBSP unsalted butter

      Love foraging. Mushrooms have become my addiction over the years. My family and I did a foraged Thanksgiving one year. fed 15 people with only foraged/hunted foods. We had duck, partridge, goose with lobster mushroom roux and burdock root mashed potatoes. Dandelion coffee with ground hazelnuts in the grounds added amazing flavor. To drink we had hard cider made earlier that fall. Blueberry, apple and pumpkin pies all made from foraged or home grown berries and pumpkins. The food was gourmet level as my family are all cooks in the industry at some point or another. One of the best nights of my life.

    I just discovered this channel about a month ago because all the short videos started popping up on my TH-cam feed. It's so interesting how your style of presentation has changed. Your energy, flair and humor are fun to watch, but I like this explanation of the porcini mushroom and simple no-nonsense presentation just as much - maybe more. I enjoyed seeing how you started off.

    Thank you so much for this! My husband and I met a mushroom hunter yesterday while out hiking in Macedonia; after visiting a bit, he graciously handed us about 1-1/2 lbs of fresh mushrooms (only about 7-8 mushrooms!). I was thrilled, but didn't know how to prepare them so this was very helpful; heading to the kitchen now...

    I just collected my first porcini yesterday (I’ve lived in the PNW for two decades and never trusted mushroom hunting). My friend didn’t think porcini was worth picking as she focused on Chanterelles. But, wow, what a win for me! I’m hooked now!

    Man I LOVE your passion here. You are right by the way. Mushroom hunting is satisfying because of that reason particularly. I have done it it Russia, Ukraine and Austria quite a lot. Nothing beats bringing some fresh mushrooms home and make a hardy dish together with your wife using those beauties. Thx for the kick! I loved seeing it!

    Yes, I do love foraging mushrooms. I've found several edible species myself. And I cook a few species I collect in the wild. The specimens of Porcini that you found have the cap much more darker than the ones I use to find. Maybe they are B.pinicola and not B.edulis.

    Nice, this is the first time I've seen someone baisting where it "made sense" to me. It seems like the flavor of the garlic wouldn't have enough time to come out, but I liked how you added it to the oil with thyme, waited a minute and then added butter. And got it to brown just a little bit before baisting.
    Ha idk. Im always trying to learn more in the kitchen and understand the techniques that puzzle me.
    I love your videos! Keep making longer ones! The shorts are cool too : )

    Nice work man! Lofty claims at the end on those matching or topping a ribeye, but I guess a vegetarian would agree with ya. Do you pepper your steak before let it rip on high heat? My chef would hit me in the back of the head if I did that, but I’ve done it at home like that for years.

    I experienced unforgettable huge, fresh porcini steaks at a restaurant in Rome in the mid 80s and have been searching for them in vain in NYC (or anywhere in US) ever since. Thanks for this demonstration!

    In cooking school this Italian man taught me to cook mushrooms for Marsala for anything to a nut like consistency get them Brown hard and then when you put moisture to them the flavor that comes out is incredible forget about it

    Clarified butter has a higher Flashpoint then canola oil. You can even deep fry in clarified butter. And it is a healthy fat.

    I live in Colorado, and lately, after a rain, there have been some humongous white mushrooms on my lawn. Can I eat those? The gills are a light brown color. They are just beautiful, but I have no mushroom hunting experience. 😊

    I would reccomend to roast them in medium heat. If you roast them to hot, the can become bitter tasting.

    Your Porcini caps are much more darker than the ones I find. Maybe they are not Boletus edulis but Boletus pinicola instead. Don't worry both are edible.

      Find In Nature hey, they are king boletes, aka porcini or ceps. Best Boletes you can find and they only grow at altitude.

      I would agree, these are more than likely not Boletus edulis but instead Boletus pinicola, I think they're known as the pinewood king bolete. Either way, I bet they taste just as good, great vid! :D

      They are definitely not Boletus Edulis. People still slang call them king boletes just like people seem to call all species of suillus mushrooms slippery jacks.

    Ouch… canola oil! This is not good for your health, contains trans fats, it’s a killer. In Europe we would use a good extra virgin olive oil for these beautiful mushrooms. They look delicious 😋
