So in Canada, the McChicken comes on a sesame seed bun and I think it's a bigger patty overall. The American McChicken is the Canadian Junior Chicken. We also had a grilled Junior Chicken but they discontinued that years ago. Sad days.

As someone who sees how those ads are made, how meticulously the chef assembles that one "perfect" burger in long hours of shots, you've just made it out in one go without even using a hair spray. Every time I try to make a recipe … between buying ingredients on line, mise en place, getting all the equipment and cleaning up … it is hours (I.e., all day). Well worth the effort AND I would have to retire (if I could afford it) & spend all day every day cooking to do one meal a day! THAT is why Mom & Nana could do a full sit down meal every day! When I worked for The Don as a teenager the McChicken was my go to favorite (and still is). I added bacon and dipped it in buffalo sauce to make it perfect. Seeing this makes me think it wasn't perfect at all. 😅

Hey Josh! So as we all know, you live in Texas...but that might be a problem. You see, I live in the state with the highest number of Runzas. And Runza is (in my opinion) really good! So if there was a way for you to travel to Nebraska just to get a burger, and then make it but better, I would be honored. And also amazed because Runza truly is amazing. (Again, to me)
It's crazy how this is almost identical to how I make my homemade chicken patties. Main difference is I use beef tallow instead of pork fat, and a slightly different seasoning (i really really like the combo of chicken and rosemary). I also usually make a larger batch, pre-fry the patties that I'm not gonna use right away and throw them in the freezer for future use, then deep fry them frozen at high temp to give them crisp and color whenever I feel like a chicken sandwich. Haven't found any store bought chicken patty that even comes remotely close.
For me, it's the McChicken. The best fast food sandwich. I even ask for extra McChicken sauce packets and the staff is so friendly and more than willing to oblige. One time I asked for McChicken sauce packets and they gave me three. I said, "Wow, three for free!" and the nice friendly McDonald's worker laughed and said, "I'm going to call you 3-for-free!". Now the staff greets me with "hey it's 3-for-free!" and ALWAYS give me three packets. It's such a fun and cool atmosphere at my local McDonald's restaurant, I go there at least 3 times a week for lunch and a large iced coffee with milk instead of cream, 1-2 times for breakfast on the weekend, and maybe once for dinner when I'm in a rush but want a great meal that is affordable, fast, and can match my daily nutritional needs. I even dip my fries in McChicken sauce, it's delicious! What a great restaurant.
I made this last week to surprise my husband. He gifted me a meat grinder attachment last year but I’ve only used it once so I was happy to be using it again. For the patty I used some fat I trimmed off a Boston butt roast that I was had for making carnitas. Thank you Josh he said this was amazing! That shredduce was sooo good
The meat grinder attachment for the Kithchenaid is awesome. If you don't have a ground meat guy, preferably one with a penchant for flannel and selling meat out of his trunk, grind your own. Game changer.

I really wanna see a "but better" series with a set rules in it, like : - you can't exceed the cost of the ingredients used in the thing you are trying to "defeat", and if you are up against a fast food item, it's going to be interesting if you can do that in less than an hour at most because taking too much time prepping your ingredients kinda kills the "but better" meaning when you are up against a fast food item, right? - you must have several taste-testers because simply using your own palate to judge whether or not it's better kinda felt unfair, don't you think? giving both the one you made and the fast food made one to some random people should do the trick for this one - if you test the food after being wrapped for a while in a bag and compare it to your freshly made one, that's quite unfair on its own, so you should also do the same to your food and see if it can still taste better after it went through the same thing the other one got I think it's going to be more interesting that way
I agree with you, rules like this make sense, of course you can cook better food if you have enough prep time, but fast food restaurants are suppose to take no more than half an hour to an hour at most, if not within a few minutes, it's because of that factor the food is as bland as he says
That last point is one I've considered ever since I watched. He'll pick up a fast food item and then let it sit for HOURS while he puts all this stuff together, including setting up the camera to refocus it and do more B-roll. Then he'll bring his personal friend onto the show to taste test his stuff which was made within the hour and sometimes still has steam coming off of it. Who probably receives a portion of the income for the video if they're also a part of staff... Wow, he likes everything you recently made over the 5 hour old take-out made by immigrants and the impoverished! Yippee! I know the food isn't perfect, but it's being made by people who make what he makes off of one video in book/merch sales and ad revenue alone in like... 4-12 months. Made for people who aren't really doing much better than the food service underclass and can't really afford the time or money to make anything from scratch anymore. Not to sound like a soy inhaling socialist but if anything, this is "Fast Food Item: But Privileged" the series. That said, it's a TH-cam video, so I'll try not to get *too* worked up over it. I love his "but cheaper" series, even if the prices are both in bulk and out of date, but the second part isn't his fault, and price checking every size available of every ingredient is and INSANE amount of effort I wouldn't expect of anyone except maybe a channel dedicated to that kind of niche thing.

Josh gets someone from the crew to run out and grab the item again right as Josh's but better version is almost complete, which means both are "technically" sitting for the same time. A lot of complaining on Josh's videos (particularly the but betters) is kinda stupid anyway since you can use common sense to cut time (don't marinade for more than like 2 minutes, get basic ahh lettuce if you want to, buy good quality buns/bread from a good bakery, etc)..
My favorite "hack" to do when i order a McChicken is replace the mayo with BBQ sauce. They usually just throw a McNugget bbq packet and I just add it. It complements the spicy flavor of the McChicken just right.
I would love to be one of his close friends to be able to actually try all of his masterful creations instead of salivate while watching him throw it down in the kitchen 🤤
This is to my knowledge the first chicken sandwich he actually tried to replicate the same sandwich with the same ingredients. I.e. lettuce, bun, chicken, mayo. He did a great job. The Wendy’s spicy chicken. He made a Nashville hot. It’s not the same damn thing. You have to recreate the same sandwich “but better”. Now. Make 1,000 of them. And keep the same quality.

This is so different to the UK one, which is much larger, snd comes in a crispy batter, in a seeded bun. I think there might be a little mustard in the mayo too? It's pretty great. Or at least, they used to be. These look like the ones that are sold as "Mayo Chicken" over here, much smaller and from their saver menu.
yeah this looks like our chicken and cheese burger size in Australia, we have mcchicken which is the size of a quater pounder and then chicken deluxe that has cheese and tomato on it also.
I had not heard of Dry Malt (Diastatic) baking Powder. I bake a lot of stuff using recipes (I don't know that much about baking, I just try a lot). This is the first recipe I have seen that calls for this product. It's very interesting. Great video!
He also uses diastatic malt powder in his Domino's Pizza But Better episode. In that video, he says that it just contributes to the browning of the bread when baking, so I'm pretty sure it has the same purpose here.
Can you make Girl Scout cookies? Maybe a bit controversial considering the proceeds go to paying for everything they do for the kids, but you can only really get them at a specific time of year, and it's so hard to find a troop selling them if you live in a no soliciting area.

This is interesting. Here in Australia the McChicken is a full sized burger (as far as anything at Maccas is). The one seen here looks more like a chicken version of a junior burger, even down to the bun. I wish I could justify having enough oil on hand to deep fry, but sadly I'm even less allowed it than Josh is.

Interestingly, that sandwich is called a Junior chicken over in Canada. Mcchickens here are even less flavourful haha, the Pattie’s are just giant giant nuggets. At least the junior chicken has seasoning. Only good thing about our mcchickens is that the sauce is really good (habanero sauce go brrrr)

It might be unfair for both sides since fast food is mass produced so technically they get the ingredients cheaper but fast food can make it better to their is no price limit hope you get my point. - you must have several taste-testers because simply using your own palate to judge whether or not it's better kinda felt unfair, don't you think? giving both the one you made and the fast food made one to some random people should do the trick for this one
- if you test the food after being wrapped for a while in a bag and compare it to your freshly made one, that's quite unfair on its own, so you should also do the same to your food and see if it can still taste better after it went through the same thing the other one got

I agree with you, rules like this make sense, of course you can cook better food if you have enough prep time, but fast food restaurants are suppose to take no more than half an hour to an hour at most, if not within a few minutes, it's because of that factor the food is as bland as he says

That last point is one I've considered ever since I watched. He'll pick up a fast food item and then let it sit for HOURS while he puts all this stuff together, including setting up the camera to refocus it and do more B-roll. Then he'll bring his personal friend onto the show to taste test his stuff which was made within the hour and sometimes still has steam coming off of it. Who probably receives a portion of the income for the video if they're also a part of staff... Wow, he likes everything you recently made over the 5 hour old take-out made by immigrants and the impoverished! Yippee!
I know the food isn't perfect, but it's being made by people who make what he makes off of one video in book/merch sales and ad revenue alone in like... 4-12 months. Made for people who aren't really doing much better than the food service underclass and can't really afford the time or money to make anything from scratch anymore. Not to sound like a soy inhaling socialist but if anything, this is "Fast Food Item: But Privileged" the series.
That said, it's a TH-cam video, so I'll try not to get *too* worked up over it. I love his "but cheaper" series, even if the prices are both in bulk and out of date, but the second part isn't his fault, and price checking every size available of every ingredient is and INSANE amount of effort I wouldn't expect of anyone except maybe a channel dedicated to that kind of niche thing.

Josh gets someone from the crew to run out and grab the item again right as Josh's but better version is almost complete, which means both are "technically" sitting for the same time. A lot of complaining on Josh's videos (particularly the but betters) is kinda stupid anyway since you can use common sense to cut time (don't marinade for more than like 2 minutes, get basic ahh lettuce if you want to, buy good quality buns/bread from a good bakery, etc)..

My favorite "hack" to do when i order a McChicken is replace the mayo with BBQ sauce. They usually just throw a McNugget bbq packet and I just add it. It complements the spicy flavor of the McChicken just right.

This is so different to the UK one, which is much larger, snd comes in a crispy batter, in a seeded bun. I think there might be a little mustard in the mayo too? It's pretty great. Or at least, they used to be.

yeah this looks like our chicken and cheese burger size in Australia, we have mcchicken which is the size of a quater pounder and then chicken deluxe that has cheese and tomato on it also.
I had not heard of Dry Malt (Diastatic) baking Powder. I bake a lot of stuff using recipes (I don't know that much about baking, I just try a lot). This is the first recipe I have seen that calls for this product. It's very interesting. Great video!
He also uses diastatic malt powder in his Domino's Pizza But Better episode. In that video, he says that it just contributes to the browning of the bread when baking, so I'm pretty sure it has the same purpose here.

Diastatic and non diastatic work quite differently. Diastatic malt also helps with fermentation but is mostly used commercially for even browning.
Can you make Girl Scout cookies? Maybe a bit controversial considering the proceeds go to paying for everything they do for the kids, but you can only really get them at a specific time of year, and it's so hard to find a troop selling them if you live in a no soliciting area.

One of the few fast food items we’ve all ate but never met anyone who truly loved them. Very easy to beat.
I love them for the price point. 99p here in the UK. But their chicken wrap of the day is £1.99 and they are *significantly* better, so you may as well get one of those instead.

This is interesting. Here in Australia the McChicken is a full sized burger (as far as anything at Maccas is). The one seen here looks more like a chicken version of a junior burger, even down to the bun. I wish I could justify having enough oil on hand to deep fry, but sadly I'm even less allowed it than Josh is.
The McChicken is honestly my go to when I go to McDonald's.
It's the sauce that makes me like it. It tastes different from normal mayo and it's very nice.

Interestingly, that sandwich is called a Junior chicken over in Canada. Mcchickens here are even less flavourful haha, the Pattie’s are just giant giant nuggets. At least the junior chicken has seasoning. Only good thing about our mcchickens is that the sauce is really good (habanero sauce go brrrr)

In some European countries the standard sauce for a McChicken is sweet and sour chili sauce. Like the one you dip krupuk in. Changes everything!

As a former McDonald's trainer from the mid 1970's- 1980's.. we would jazz up the sandwich by substituting the McNugget sauces for the mayo in the sandwich.

It might be unfair for both sides since fast food is mass produced so technically they get the ingredients cheaper but fast food can make it better to their is no price limit hope you get my point. Try making it not really the same but near the price of the product ( don’t include the salt, pepper and flour for the cost or etc it’s up to you )

in canada the u.s. mcchicken is called a junior chicken and a canadian mcchicken is like 2x the size. as a canadian what you made is a mcchicken ad what you bought is a junior chicken.
