      The school is 1 hour from Kyoto Station, so you could make this happen no problem.

    Thank you for this video Brian. I've lived in Japan most of my life and I Love ramen, but I never had the ambition to go to a ramen school, or to just make it myself. But after watching the video I feel like I can casually visit one and learn how to make a bowl.

    Any change I can get a bit more details on the vegan ramen??? I already make my own version of vegan ramen, but I'd like to know more about what they suggest.

      They make one with a mushroom broth and soy milk. The base and tare are similar to the video I did recently with avocado tsukemen.

    So, where exactly can one purchase/import/source one of these professional pressure cookers? I have been looking all over websites in the USA and I cannot find anything that will go above 15psi. Do you have a source, can you direct me?

    What is your camera setup for those long walking shots to apartments? Is it a DSLR or camcorder? Handeheld, on a backpack like Gopro or some gimbal?
    Would love to take such videos for holidays.

      That one was a DJI Osmo+ gimbal. Cool camera but a pain to set up. Now I use a GoPro.

    great experience! have you said to the master, do pressure cooker effect the taste? how's compare to almost a day boiling the soup broth?

      Pressure cooker tends to be a bit creamier in my opinion.

    For a foreigner that also doesn't speak Japanese, can I just go to any ramen shop? Are there rules that I should follow in choosing what kind of ramen shop I should consider?

      The only big rule is - get in, eat, and get out. Shops in Japan really hate it when people hang out for longer than it takes to slurp a bowl. Especially if there is a line.

      Japanese brands tend not to fit me. I'm thin but very tall. American brands are too dumpy. When I found that G-Star fit well, I just kind of got obsessed. Also, you can order online with free shipping (sounds like I'm sponsored lol) which was a bonus. Shopping in Japan can be annoying; I'll find something I like but it won't fit.

      In Japan, people lease the big ones for a few hundred dollars a month (maybe as much as 600 but I'm not sure).

    Hi Brian, I checked the corresponding link for your blog to look for the school fee, it says for 1 or 2 students will cost me 55,000 Yen but on the link for the school says higher amount that I don't think I can afford. I am really interested in learning how to make ramen and I really wish to enroll in this school.

      I'm not sure. The school has a hookup with the company. I don't think they are sold to the public, only restaurants.

    Pressure cookers go up to 15 psi period. Three times that is 45 psi. That pot doesn't look no where near robust enough to handle a pressure that high. Sounds like a marketing gimmick/lie. And there are regulatory boards to make sure pressure appliances or machinery meet certain specs and adhere to codes/inspections. And I'm *quite* sure Japan adheres to them since their society is all about safety.

    Why is it important to tie the pork when you're just cooking it in a pot with liquid?

      It keeps it formed so it can later be sliced up in round pieces

      Once the bones are soft, kick up the temperature and get all the creamy collagen out! There is much more to it, but that’s the gist.

      The vegan soup is made with mushrooms and soy milk.

    So many missed opportunities in this video. Where is the detail? The depth? I tuned in to watch and see how Ramen was made at this school. I got none of that. Way too shallow. And I'd love to see a vid about the knife making too! I'm a regular viewer, but feel like you dropped the ball on this vid. . .

      I see what you mean. I was just trying to show a quick snapshot of what the school is like and what you get to do there without going into the details of the class.
      I just added the knife stuff as an aside, but I would love to go back and spend a day shooting all the aspects of knife making. I'll be in Osaka in a couple months, so I have a chance.

      Hey! Awesome of you to respond so quickly! I meant no disrespect, believe me. I freaking LOVE RAMEN. Maybe as much as you! I actually have just learned to make my own Tonkotsu totally from scratch. It's part of the reason I was so anxious to see this school in depth and in action. Takes 22 hours to boil, and about 3 days to really prep it all. I honestly believe you would really enjoy mine. I envy your life brother and wish you well. Keep the vids coming! Would love to see that knife making vid. I'm super intrigued with that smoking/hammering thing going on. I'm an amateur chef myself and just ordered my first, honest Japanese steel knife. Cannot wait to get it! Looking forward to more of your "Adventures"

    For the Chashu, really dumb question but do you skin the pork belly? Or does it come with the skin off? I've never payed attention while i'm eating it. I skin mine but its kind of tricky and I'm wondering if I"m buying the wrong stuff or simply doing it wrong.
