Delicious Dessert for Breakfast: Sweet Potato with Decadent Chocolate Hummus

- An amazingly delicious, nutritious, and filling breakfast that will keep you fueled for the morning. Chocolate hummus is super versatile. Play around with the ingredients and amounts and experiment with flavors to make it how you like it.
Chocolate Orange Hummus Recipe
~ 3 cups chickpeas
~ 1/3 cup cocoa powder
~ 1/4 cup almond butter
~ 1/4 cup maple syrup*
~ 1-1.5 cups liquid (water/milk/orange juice)
Zest of 2 or 3 oranges (or use 1-2 tsp of orange extract)
Place all ingredients in blender or food processor and blend until you get a smooth consistency. If the blender blades get stuck, repeatedly scrape down or add more liquid.
*I use a minimal amount of maple syrup, because I prefer to get the sweetness of the dish from the sweet potato and fruit. If you want it sweeter, just add more maple syrup - or any other sweetener you prefer.
To make chocolate peanut butter hummus, replace almond butter with peanut butter (you may want to add more than .25 cup to increase flavor - you could also try adding PB powder to keep fat content down).
To make chocolate hazelnut hummus use hazelnut butter and/or hazelnut extract.
To make chocolate almond butter use almond extract.
Bake a sweet potato in the microwave for about 7 mins (or in oven or instant pot). You could cook several sweet potatoes at the beginning of the week and keep them in the fridge to speed things up in the morning.
Add whatever fruit and nuts you like. To speed things up for breakfast I’ve made a fruit compote at the beginning of the week by cooking a mix of frozen berries on the stovetop with a small amount of water. Keep the compote in the fridge and spoon it over the sweet potato and chocolate hummus when you’re ready to eat. So delicious!!

Tried the hummus- pretty good. I didn't have almond butter and used peanut butter instead. Also added some honey and Nutella. My 2yr old was eating it up with a spoon! 😊

I might try the hummus. I love hummus, but I'm not sure I'd put it on sweet potato.
My sister agrees with you! She thinks sweet potatoes and chocolate hummus don't go together. I love it though! If you do make it, I highly recommend adding more maple syrup (or any other sweetener).
