MY recipe cook on water the lentils until a bit soft not so soft but some medium cook. fried carrots onion garlic and fresh chopped tomatoes. Put the lentils on the mix with the broth you cook the lentils . Add bay leaf . Salt and pepper . Pinch of oregano and fresh chopped silandro.
1 cup red lentils 1 ripe tomato garlic basil salt pepper ,soak lentils, chop tomato cook till slightly thickens add half teaspoon olive oil basil pepper salt chopped clove garlic cook five minutes on low italian dhal
Currently eating it while watching this I don't have to soak it before using it, just wash it with hot water, and the rest of the ingredients and let it cook, super easy to cook and perfect for cold water, cozy and warm 😇

I recently found a booklet titled 'The Gut Microbiome and the Book of Mormon' on Amazon Kindle. A quick read and provides interesting insight to health.
Eating healthy without eating lentils or legumes is very hard, because you are left with little or no foods "checking the boxes". And those are: high high fiber while being satiating and having moderate calorie density, high protein with low fat. While there are foods which check one or two of those "boxes" - only lentils/legumes check them all and then some.

Excess gets either burned by extra unconscious movement or stored as fat, with 30% of calories being consumed during the process (called de novo lipogenesis). Low fat is how our ancestors lived, since no fatty food storage (aka fridge) was not widely available, nor was fatty food (oils were expensive and used for industrial lubrication, farm animals were the machines of today, working in the field, too expensive to be eaten by the masses). And the "protein" our ancestors caught and ate was low fat - aka rabbits and wild birds, which are nothing like modern cows and chickens, which have 50% fat even in "lean meat".
I wouldn’t combine lentils with rice. It might be tasty, but too many carbs. If you’re not going to have it on its own, then combine it with meat and/or veggies.
