OK- it just dawned on me! I’ve been praying for help on being a better mother by providing tasty meals for my family. We seldom eat together as a family and dinner is a hit or miss. I AM not a good cook and rather organize my home or take on a interior design project. I’m realizing since your pie series began… I’ve been more inspired to get into the kitchen. I made a successful lasagna tonight and a tasty shrimp stir fry yesterday… and last week a pear tart!! Shut the front door! You are such a blessing to us people who didn’t have home economics in school or Mom’s and Grandma’s to teach us how to prepare meals… it wasn’t until I was 45 that I was taught by my husband’s cousin that cold water should be add to cornstarch…go figure why my gravy always came out lumpy. Thank you SO much Meghan! You rock! Now I’m going to read the comments to see why you keep putting beans in the pie crust when baking them.🤔

So I do mine a smidge differently. I slice the tomatoes salt to sweat them then press them with kitchen towel ..alot of times. I use either fresh grated onion or slowly caramelized onion and dredge the dried tomato in a seasoned flour s/p, garlic powder, pepper and the rest is the same...lol and always the Dukes..voila.. I'll have to try chopping the tomatoes

Looks so delicious! I’m with Jude - I love tomatoes, too. My grandmother used to make tomato dumplings (depression-era cooking). I remember being around 4 when she tricked me and my cousins into eating them. She said they had sugar in them, thinking we would love it, but we made faces because we were used to eating tomatoes with salt, not sugar. So, she put some on our plates and said that batch was made with salt (not a lie, she did add salt, too), and we ate it. To our surprise, we loved them! They did have sugar in them, but also salt and herbs from the garden, so they were savory and sweet, and so delicious. I will definitely try this pie, and I’m loving your September pie series!👍

This is the BEST idea for your channel (along with the others)! You make everything look so easy. I've always been afraid of making pies, mainly because I love flaky crusts, and never really achieved that. Now, I am going to try again with all the different pie recipes you create. Thank you for your wise videography, no lengthy stirring, explanations, etc. Just the right speed and length to keep interesting and love the taste testing!!! So cute!

Definitely trying this one... I love tomatoes! My mom makes many pies and I've never seen her put beans on the crusts that she pre-bakes. She just takes a fork and pricks the uncooked pie crust several times over the bottom and sides before baking. It never puffs up and you can't see the holes when it's done either. Can't wait for tomorrow's pie.

If they really like tomato pie I bet they would LOVE Cheese burger pie. When I make it I use ground turkey (recently I made it with impossible meat ) instead of beef; brown the meat with garlic and onion drain well; pre bake a pie crust then layer in the meat, cheese ( I've even done diary free american cheese slices ) of your choice, sliced tomato or ketchup and leftover mashed potatoes on top. We like it with lettuce and tomato in oil and vinegar as a side salad.

If you guys like tomato pie, you would like Tomato Tart. Here is the recipe! Super Easy! This time of year while fun is busy and I recently found this recipe for Tomato Tart to be perfect for a light dinner or a snack when friends come knocking on the door, You can't go wrong when there is puff pastry in the recipe. So light, buttery, and flaky! You will need 1 sheet of puff pastry, three plum tomatoes, salt, pepper, 1 cup of Gruyere Cheese, 1 teaspoon of thyme, and 2 slices of cooked bacon.
Defrost puff pastry and roll out to be 10 inches by 14 inches, In the center sprinkle cheese then sliced tomatoes then sprinkle with salt, pepper, thyme, and chopped bacon., Fold in the sides and with the egg mix with a splash of water to make an egg wash and brush on the edges of the pastry. Bake at 425 degrees for 20 to 25 minutes until the pastry is cooked and golden brown. Perfect by itself or with a side salad servings depending on the size of the slice but serves approximately 8 people.
