STRAWBERRY RHUBARB PIE : SEPTEMBER PIES DAY 12

  • Today's pie is Strawberry Rhubarb and it was delicious!!

    And here's the lard pie crust recipe as seen in Ken Haedrich's "Pie" book:
    FOR A SINGLE CRUST
    1¼ cups all-purpose flour
    1/ teaspoon salt
    ½/ cup cold lard, cut into pieces
    3 to 4 tablespoons cold water, as needed
    FOR A DOUBLE CRUST
    2.5 cups all-purpose flour
    1 teaspoon salt
    1 cup cold lard, cut into pieces
    1 to 1/ cup cold water, as needed
    1. TO MAKE IN A FOOD PROCESSOR Put the flour and salt in the food processor. Pulse several times to mix. Scatter the lard over the dry ingredients and pulse 5 or 6 times to cut it in. Fluff the mixture with a fork, lifting it up from the bottom of the bowl. Drizzle 1½ tablespoons (3 tablespoons for double crust) of the water over the mixture and pulse 5 or 6 times. Fluff the mixture and sprinkle on another 1½ tablespoons (2½ tablespoons for double crust) water. Pulse 3 or 4 times more, until the dough starts to form clumps. Overall, it will look like coarse crumbs. Dump the contents of the processor bowl into a large bowl. Test the dough by squeezing it between your fingers. If it seems a little dry,
    drizzle more water over it, about ½ tablespoon at a time, working it in by hand.
    TO MAKE BY HAND Combine the Flour and salt in a large bowl. Toss well, by hand, to mix. Scatter the lard over the flour and toss to mix. Using a pastry blender, 2 knives, or your fingertips, cut or rub the lard into the flour until it is broken into small clumps. Drizzle 1½2 tablespoons (3 tablespoons for double crust) of the water over the mixture and combine, then sprinkle on another 1½ tablespoons (2½ tablespoons for double crust) water and combine.
    TO MAKE WITH AN ELECTRIC MIXER Combine the flour and salt in a large bowl. Blend briefly to mix. Add the lard. With the mixer on low speed, blend it into the four until you have what looks like coarse, damp meal. Turning the mixer on and off, blend in 1% tablespoons (3 tablespoons for double crust) of the water, mixing briefly on low speed. Sprinkle on another 1½ tablespoons (2½ tablespoons for double crust) water, mixing slowly until the dough forms large clumps. If you're using a stand mixer, stop periodically to stir the mixture up from the bottom of the bowl.
    Using your hands, pack the pastry into a ball (2 if you're making a double crust) as you would pack a snowball. If you're making a double crust, make one ball slightly larger than the other; this will be your bottom crust. Knead each ball once or twice, then flatten the balls into 3/-inch-thick disks on a floured work surface. Wrap the disks in plastic wrap and refrigerate for at least an hour or overnight before rolling.

    I know this series is SO. Much. Work. for you. But I LOVE IT. You could create an entire separate channel with longer form, weekly pie making. I'd totally continue to watch after September. Also, I'm totally on board with getting back to lard as a staple in our home kitchens.

    It amazes me how far you stretch one pie for so many people! I’ve never got more than 8 pieces out of a pie. Kudos!

      I think she uses oversized pie dishes which could be why. I am going to pay closer attention now on that one.

      I know she has two oversized pie plates. Maybe both are used sometimes. It’s so beautifully edited and lovely to watch the process while being enchanted by the music I couldn’t tell how many were made. I’m sure if she were making the occasional pie in a regular pan she would give a normal size slice and run out with a dozen people. When I see people eating the pie they are not skimpy pieces and everyone gets some! Maybe it’s a loaves and fishes miracle.

    I'd save all the crustl scraps to make what we have always known as curlers. Just roll out cut into triangles and coat w cinnamon and sugar (brown/white...both if you feel wild) and bake off so nice w a cup of tea

      In Quebec and some other parts of Canada , those cinnamon brown sugar pie crust roll ups are called “pêtes de soeur” which translates to “nun farts” lol.

    My Mom always used lard. I remember when Dad would slaughter a hog and mom would render the fat for lard .Dad would also make meat skins out of the pig nothing went to waste.

    When my kids were little I would take leftover dough roll out sprinkle with sugar and cinnamon . Bake it they loved it. But you had to watch close. Pretty pie! Good Lard!!! Lol !

      Same here! Or my sometimes if my mom had a little extra filling, she’d make a little pie in a tiny cast iron skillet. Such wonderful memories of cooking with my mom.

      I did that too! Sometimes we cut it into shapes with cookie cutters. They really looked forward to eating the crust
      though.

    Just like my German Grandmother made!!! Looks great! Love lard crust!
    My southern Grandmother used lard for fried peach pies and biscuits and, also, to season green beans and green collards. It all tastes yummy. We didn't eat tons of it but it wasn't as bad for you as was proclaimed by makers of Crisco and vegtable oil. Neither is butter.

    Thank you for recognizing that lard is not bad for you. That myth was started by the hydrogenated fats people. Everything tastes better with lard, supposedly even biscuits.

      The Weston A. Price organization promotes returning to a traditional way of cooking snd farming. Perhaps you have heard of Sally Fallon and her book Nourishing Traditions.

      As long as I don't need to get that toxic stuff down my troath. In Belgium they fry their fries in it. Not only because I love vegs, but also because nowadays there s no need to kill many animals, people could hunt some, as the vast majority doesn t need all that fat and calories, less physical labour , more office workers.
      Needless to say fat and grease will never be healthy, why not enjoy beans instead. 🙂

    My dad one year planted some rhubarb in the garden and my mom made this awesome rhubarb cake with it. The rhubarb planted loved being in our garden and kept coming back. So we had that cake multiple times. I would think that the new owners of that house still have that rhubarb plant hanging around. I love the little bit of tartness it gave the cake

    Reminds me of visiting North Dakota (my husband's grandparents). She had Rhubarb in her back yard and they make Rhubarb pie, bars, jellies, everything. yum!

    Love pie September! In the uk we use lard and butter in our pastry (half and half) .. Rhubarb pie is a favourite in our house! Looking forward to more of your pies!

    Thought I would toss out an idea for you to ponder for the month of October, since it will be the month before Thanksgiving. That would be to create side dishes that whether sweet or salty (meaning not sweet) to give individual ideas to add to some of their favorites for the upcoming holiday season or for “just be because”😃👍🏼. I know someone else also mentioned a new cookie recipe, or it could be something of a bar type. There are so many ways you can continue to try new things, while sharing and encouraging everyone watching to do the same 😃👍🏼 Thank you for taking the time to do this and to share with all of us❤️Blessings

    Lard pastry is the type my granny always used, she was born in the 20s so that figures! But it makes the best pastry & is even better when you let it overcook ever so slightly!

    Leaf lard is the best with no meaty taste. It’s really white and looks like that might be what you had. Beautiful pie!🌟

    Beautiful! Half Crisco or (lard preferred) and butter are my standard crust recipe. I keep a small can of crisco chilling in the fridge just for crusts. Also, strawberry rhubarb is a favorite of mine, yummmmy! My standard-
    1 1/2 sticks cold butter
    3 cups AP flour
    1 tsp salt
    1 tablespoon sugar
    1/2 tsp cinnamon, optional
    1/3 cup very cold crisco
    6 to 8 tablespoons ice water

    Living in the south many older folks rave about the lard of their youth. Lol. I’ve always wanted to try it in biscuits. I’m with you, our bodies know how to digest animal fat. Not so much with the hydrogenated oils. It’s lard or butter for me!

    Yum! My grandma used to grow rhubarb. It came back every year. Easy growing. Easy to fix just like applesauce. Cook on stove with water and add sugar.

    We've made 2 of your pies so far. Both were winners!!
    Strawberry rhubarb pie was my dad's favorite. He had a vegetable garden in our backyard and he grew rhubarb along the fence line. This brings back some good memories. Sometimes you'll bite into a rhubarb pie and get a big taste of sour but it's a good sour. I don't know how else to describe it:)

    I love strawberry rhubarb pie🤠❤️. When we lived in Ohio, I was in High School. The first church service we attended at our new church the Pastor when he prayed said, “Dear Lard” my sister and I could not help laughing. Have used lard to make retried beans.

    As a child, my mom would give us a rib of rhubarb with a small container of sugar. We would dip the rhubarb in the sugar and just love it. On it's own, rhubarb is very sour.

    Here in Canada we usually use Tenderflake. I follow the directions on the box it's so easy and I can get 5 pies out of it, to make tops and bottoms. One of our summer favorites is Rhubarb/strawberry pie!!! Yum. Yours looks perfectly delicious! Enjoy

    I have always used half lard and half butter for my pastry, also if making a sweet pie i use ice cold orange juice to bring the pastry together in place of the water, again a lovely looking pie Megan, well done xx

    Other awesome pies are pecan, pumpkin, and sweet potato. I have made a keto chayote squash pie. It’s low carb and with the right spices and low carb sweetener tastes like an apple pie. Replace apples with chayote squash. Also a staple for Thanksgiving at my husband family dinner is Tollhouse cookie pie. Bet the kids would love that if they like chocolate chip cookies. Love watching your pie making.

    My grandmother grew up eating lard and pork and continued to eat it most of her long life. BYW, she lived to be 107 years old.

    Absolutely loving the pie series Megan! Small suggestion about measuring ingredients: get a kitchen scale! That way all the measurements are more precise and you’ll have less dishes/cutlery to wash!

    This is my husband's favorite pie but we live in Texas and Rhubarb is hard to come by here. I usually am able to find it once a year to make a pie. My grandmother use to make Lard crust for her pies and they were the best! I am going to give it a try!

    lard crust looked lovely to work with my mums used to make a rhubarb pie but always used to steam it first then the juice from that was mixed in with the sugar to make a syrup to coat the rhubarb but yours look so yummy

    Love the lattice work! Inspired me to try it! Also strawberry rhubarb… yum. I am the only one in my family who likes it so I can’t make it. I would weigh soooo much!

    Rhubarb pie is so good. The lattice really made the pie pretty. Going to try the lard in my pie crust next time.

    Both of my Grandmothers used lard for their pie crust ,that's what I learned to use.
    You are a 100% correct it is so much easier to work with .
    My Russian Grandmother made a Is rhubarb custard pie.
    It's totally amazing!

    I love all this pie baking series you’re doing. What a great way to learn and better your skills! I used to cook with lard a lot and it was a lot better to use for baking, in my opinion. Love your family!!

    That was soooo beautiful Megan!! Crisco is lard!! My grandma always made her crust with crisco.

    Finally, you made my favorite pie. My Grandma made this pie when we would come for vacation and that is one of my best memories. And lard is a must for pie dough.

    Hi Ryan's mom Sam here.... another Beautiful pie and yes here in the UK we use Lard sometimes half lard and half butter 😁 and with the rest of your rhubarb you could do a Rhubarb Crumble 😁
