Thanks for taking the time to post this video.

It’s just 1 cup of rice that you’ll waste if you don’t like her method. Besides, if you want it less mushy, don’t cook it for as long.

    • @zmodem4619
      @zmodem4619 6 ปีที่แล้ว +42

I completely agree. I like the rice to individualize as grain when it's finished. In my opinion, they've done two things slightly incorrect.
The first thing was that they've used too much water. I always go 1 3/4 liquid for every cup of rice (I don't ever use brown rice). So, 1 cup of rice = 1 3/4 cup of water (chicken or vegetable stock is WAY BETTER, though).
The second issue is how they've incorporated the rice to the water. You add the water to the pot _before_ the rice. You bring the water to a rolling boil, then dump in the rice, without stirring in the rice. After all the rice is dropped in one go, you stir it _one_ time so you don't release tons more starch. Once you've done that, bring the rice and liquid back to a rolling boil, reduce to simmer and cover for ~17 minutes. Turn off heat, move pot over cold burner grate, and steam with no heat for an additional 6-8 minutes.
And, that should make the perfect white rice.

“How to cook the perfect rice”
    1. Get a rice cooker or pot with tight fitting lid.
    2. Wash your rice in a bowl just barely
covered with water and gentle agitate with fingers. Drain well and repeat 2-3 times till water runs mostly clear.
    3. Put rice in pot and level out.
    4. Using your index finger, add enough water till it reaches the first knuckle.
    5. (Rice cooker) close with lid and put on cook mode. (Stove top) Turn heat low for 20-25 minutes.
    6. Let rice sit for 5 minutes before opening the lid. This allows the steam to settle and makes the perfect rice every time :)

*How to cook rice (as told by an Asian) :*
    1. Get rice and rinse it. Don't use a sieve. Take a pan and clean the rice. Don't push in them. Just make sure your fingers are touching them and not actually breaking to clean them.
Add water, rinse, drain. It do it until the water turns clear.
    2. Let the rice soak for a while. I do it 10 minutes tops to make them perfectly. Drain that water.
    3. Now get water gain and add your rice to a pan. Let them on a full flame for 3-4 minutes.
    4. Simmer down the flame and let them cook for another 10-15 minutes depending upon the quantity. *DON'T TOUCH THE RICE WHILE COOKING THEM. YOU DON'T WANT TO BREAK THEM.*
    5. After cooking them, check them if they have cooked but lifting them and pressing on them.
    6. If yes, turn teh flame off. And cover the rice. Let them cool for another 5 minutes without the flame. You don't want to cover the rice while making them. It'll make them mushy.
    7. Drain the water out.
Ratios: For one cup of rice, use 2.5 cups of water. This is for standard white rice.
Water is never excess. You can keep adding it if it evaporates. You'll drain it out in the end.
    *Alternatives: Buy a rice cooker.*

Then you let your finger be submerged to the mixture until the tip of your finger touches the rice. @@winterwin6971 Either your rice cooker is really bad, or you've got the wrong setting. Usually the bottom is the same as the top. Rice cooker should have only 1 setting and if you use something with multiple settings like an instant pot or so, it should still has a rice setting. It should bring the water up to a boil (the rice is moving around and would not stick to the bottom) and after that it steams the rice (it should be the same temperature everywhere). The only way I get hard rice with a rice cooker is when I reheat my rice in the rice cooker (or if i use not enough water=crunchy uncooked rice). Since there is no more water, the rice at the bottom gets all the heat and until the top part gets warm, the bottom part will be hard (Tip: just use a microwave or fry it in a pan).

Decoy i disagree with the cups of water she uses ... for brown rice you need 1 cup of rice using 2 cups of water .. and also she fail to mention you have to presoak the brown rice for at least 8hrs in water in the fridge and brown rice takes 1hr 20-30mins

I am Peruvian and all our dishes are also with rice. Usually at home we prepare it in a rice cooker. We put a little oil and fry a couple of minced garlic. Then the rice (well washed) and if you made 5 cups of rice it is 4 and 1/2 of water, we add a pinch of salt and that's it, we like grained rice, not sticky.
