After reading everyone's comments and attempted at baking the cake, I have used Self-raising flour instead and 1 tsp of Baking Powder and it works perfectly! The cake even open widely like a flower!! Try it everyone!
The water she used to mix with the pandan leaves may be any fizzy liquid like seltzer water or 7 up. Someone said they used self rising flour and 1 teaspoon if baking powder. Key I think from reading comments is making sure to whip up the eggs until thick and white where it is no longer yellow. Maybe use cake flour for a lighter texture. Also, a dim sum bamboo steamer if you can't find the basket she uses.

Swim With Sue & @Adeline Chung. Yes totally agree with Swim with Sue, this is the traditional recipe, with just plain flour. My mother used to make this. Those days she used only a hand held whisk, whisked for an hour or more, till the sugar melted totally and the whole mixture was very, very fluffy. The cake was absolutely light and fluffy!😋. And yes opened up like a flower, as showed in the photo!
You have no idea how much afford teacher has put into this, Ten years of practice for one minute on the stage, if u want shortcut i susgest u go buy from outside
True I agree with you. There’s something that KK has added but did not reveal. No way it can rise and top of cake “opened up like a flower”. I tried making according to her recipe, texture seems ok but flat top. So quite a put off.

I followed your recipe and tried 3 times, all failed. The top is well steamed but the middle to the bottom is all dense and seemed u cooked. I steamed for 35 mins. Please advise. Thank you

Following the whole recipe and step and exact ingredients. But failed so badly. I tried 4 times and each time failed miserably. I’m using stand mixer to beat the eggs and sugar to super fluffy. I think this recipe inaccurate !

分享下我做的过程:
~全部分量我严谨跟着食谱(除了班兰叶我放多放几片)
~鸡蛋加糖后我用中速打至发白再打多一阵子,然后转低速打一下子(我打到够白和浓稠)
~我用8寸圆活底模+铺纸 (大概是65%满)个人觉得7寸圆模可能会更满更美。
~没放发粉,也没用自发粉,就用普通中筋面粉(我个人觉得关键是蛋要打到够白)

@@wendychong9069 开始时是全黄的液体,然后继续打下去时会慢慢从黄色变乳白色,不是全白到像A4纸,是带微微浅米色,整体看是乳白色的,大约是white chocolate coin 的颜色吧。(用白砂糖)。我做时都是以颜色来测试的,没注意过时间,下次做时注意下😅

She replaced the 100plus with pandan juice in this recipe. If you opt for 100plus then your cake will be plain flavour.

刚刚试做了两次。第一次蒸不熟(应该是没打发够);第2个还可以,可是底部还是不熟,但是蛋糕不能发开口。我用中大火蒸45分钟(不知道是不是火炉的原因)。还有好多pandan叶,我晚上再试试好了

Just finished steam. It seems not rise and hard. I think should be baking powder and not normal flour.
It does not rise with plain flour, substitute with self raising flour and 1tsp of baking powder. It works perfectly!!!

蒸了三次都不發还很硬 我用B号蛋每个60克 不过我拌好的面糊是有点浓度的 不是会流動的是否蛋太小粒?新西蘭朋友
用A蛋,最好别减少糖,面糊倒入蓝最好是8分滿,蓝子不要太大。拌入面粉手要轻以免拌出筋

Usually will add Ammonia to make it open up
