As a substitute for the yam I've landed on a combination of tapioca flour, which has a lot of mucilaginous fiber which is what makes the yam so slimey, baking powder, to replace the air that's added when you grate it, and a bit more water to make sure the batter isn't too dry

There’s also a teppanyaki place in Amstelveen that does seriously good Takoyaki and Okonomiyaki, both in Osaka style and Hiroshima style. Look up Ichii Amstelveen. 👍

Awesome video! One of my favourite memories on my second trip to Japan was walking into a very small local restaurant where an older woman was clearly the one in charge and having her daughter assist on a very busy night. We were in Miyajima and got served an absolutely amazing Hiroshima-style okonomiyaki. Since then, we have been making it at home as well.
Tried making okonamiyaki recently and from other recipes I've read, adding baking powder makes it fluffy. So, if you can't find the yam like I can't, try it with the baking powder hack, it works.

This channel is so charming. I love Japanese food, I also boxed long ago. What I love most about the videos is the washing of dishes in the credits. I hate doing dishes, but this makes it easier for me to think of it as relaxing, instead.

And what a crazy coincidence! I’ve been watching Abroad in Japan for years and love Ryotaro as well as his new channel. I got so excited when I saw he was featured in this video! It would be so much fun if you did a cooking tutorial with Chris from Abroad in Japan! He could really use one. He’s always going on about how poor his cooking skills are. Microwaving cup ramen is about the extent of Chris’ culinary skills.
I'm just eating this now after trying to make it for the first time. It turned our all right I think. I'm full, but I can't stop eating, it is just so good.

I usually use a premade flour mix, coleslaw mix (so there is also little strings of carrot and some red cabbage), and I like to cut up bacon to stir into the batter as well.

I prefer Hiroshima style okonomiyaki, but all of it is good. Every style, every topping - it's just out of control how delicious a dish it is. God bless Japanese comfort food! (also Ryotaro is TOTALLY correct: okonomiyaki *needs* kewpie mayo.)
I learned how to make okonomiyaki earlier this year, after enjoying it in Japan many times. My wife gets a stomachache from eggs, so I made it without egg. It worked just as well. I make my own sauce and kewpie-style mayonnaise. It's easy.
I was introduced to okonomiyaki by a coworker who brought some to work about 5 years ago and I’ve been obsessed ever since. Your version looks delicious and 100% needs mayo! No healthy eater here
It's true about the lid! It seemed natural to do this, and cook everything well, but the texture of the pancake was very soft, almost "melted"! I tried again, and turned the heat up at the end to make it brown and crispy on the outside.... THEN I thought: "I should watch that video again, I"m just guessing". Maybe tomorrow I'll go find a piece of that mountain yam! You can buy it here (Florida, USA)
This recipe is fantastic, but I gotta say I like Hiroshimayaki more. It's probably just because I had a wonderful experience visiting Hiroshima, and that was capped off with some good Hiroshima-style okonomiyaki after a long, rewarding day sightseeing on Miyajima.

Actually made this tonight (no mochi or Japanese yam) pretty tasty it tastes very similar to what I had previously purchased as a microwave meal from the Asian grocery (though I missed the chew of the mochi that the store one has) at first I was unsure about the sauce mix it seemed to wochester for me but actually on the pancake it was quite good! Will make this again.

Hey Champ, I recommend adding potato starch if you don't have Nagaimo. Around 20% potato starch and 80% flour is good!

Tried it today. I've made some before but this recipe is better. Note if you don't have rice cake and yam make sure to add more flour mixture.

醤油は生地に入れなくても良いです。
