When I lived in Kyoto, okonomiyaki quickly became one of my favorite foods. I had never had katsuobushi as a topping before that, but it absolutely makes this dish. Along with the mayo and sauce, it's the perfect combination for savory comfort food.
@sushibykunihiro7534 Have a request to make, Could you please suggest the Alternative for Pork Belly slices, as we Do not consume pork beef or mutton, Can we Use chicken slices for it? Also, Could you please suggest a vegetarian substitute for Meat and Eggs and Bonito flakes ?As I wish to make a Vegetarian version of This Dish?

Ah, the fabled Japanese pizza/pancake! I've attempted to make this a couple of times (around 15 years ago), but I only had pictures to follow and had to substitute a lot of ingredients. I am so delighted to see this video from you, Kunihiro! As always, good work and thank you for sharing it and how to do it, with the world! Stay safe and keep on being awesome!
Okonomiyaki is a simple yet beloved dish in my region, the Kansai region. While many Okonomiyaki restaurants now serve fancier versions, we still cherish the simplicity and authenticity of the homemade recipe. In my experience, the key to a delicious Okonomiyaki lies in the careful combination of cabbage and batter, as well as getting the ratio just right. By keeping these things in mind, you're sure to create a tasty Okonomiyaki. Fortunately, all the essential ingredients are available in the US, so please give this recipe a try. 😊 I'm always happy to hear from you. Thank you so much for your support. Stay safe and healthy. ☺️

こんにちは! I am Belarusian and my husband is Japanese and I so much adore Japanese cuisine and I really tried Osaka style okonomiyaki, so at least I knew the taste) I found your recipe and made 2 portions of okonomiyaki today, my husband said that it is unbelievably delicious and I agree with that! どうもありがとうございます!
I tried Okonomiyaki once when I visited Japan and it was amazing. So I decided to try and make one but it took me a while to gathered the necessary ingredients. Especially the onkono sauce and Japanese mayonnaise but fortunately I found a store that sells Japanese products. The results was amazing for my first time your video was so helpful thank you.
very tasty and simple to make. I added shredded carrots to mine for more veggies and omitted bacon for a delicious vegetarian treat. This is now on our family's meal rotation. Thank you for sharing!
This looks delicious. I imagine that, like most pancakes around the world, there are many variations on extra or different add-ins. What varieties do you like? I would imagine a seafood version is delicious, too.
I also enjoy adding seafood such as Shrimp and Squid to Okonomiyaki along with pork belly. But my No 1favorite is the straightforward Cabbage and Pork belly combination. 😋
Thank you! Looks delicious and I will make it. Your instructions are very clear and easy to follow. Being third Japanese Canadian I never grew up with okonomiyaki but have always wanted to try it. Really enjoy subscribing to your channel
That's awesome! I'm so glad to hear that you enjoyed the okonomiyaki recipe! Thanks for trying it out, and I hope it becomes a regular on your dinner menu! 😊
I grew up in Kansai Japan, my mom used to make Okonomiyaki every week!! Just watching this video brought me so many memories.... made me homesick!! I definitely make it soon. Thank you!!!
This is the Okonomiyaki I grew up eating every week. I hope you'll like it. Actually, the alternative to the Okonomiyaki sauce is much tastier than a store bought. Please give it a try.😊
They are definitely similar. Only differences are takoyaki sauce is a little sweeter and thicker. I sometimes use takoyaki sauce for my okonomiyaki. It’s still delicious. So you can use them interchangeably. Thank you for the comment.😁
I like to use Napa cabbage for this recipe. I am fortunate to have a good Asian market that sells miniature Napa cabbages at certain times of the year. One is the perfect size for this recipe. I know this is not traditional, but I prefer to use non-sliced pork belly, cut into tiny cubes, and cooked until crispy ahead of time, which I then mix into the batter. It adds a nice texture and makes the fritter easier to cut than with the strips of meat.
Just returned from Japan & while there I had okonomiyaki in Osaka for my 1st time. It was prepared with shrimp since I rarely eat meat and have to say it was the most delicious satisfying comfort food I've had in awhile. Started looking for recipes on youtube & came across this one. Kunihiro san, can't wait to make your recipe substituting shrimp instead. Arigato gozaimasu!
My recipe is also Osaka-style Okonomiyaki. One of the key characteristics of Osaka style is that we use lots of cabbage. You might feel hesitant about adding so much cabbage to your batter, but that's how it's supposed to be. Even though many foreigners call it a Japanese pancake, we consider cabbage to be the main ingredient of Okonomiyaki.😊
I love watching your videos. The first time I ate this classic dish, I was addicted to the flavors and textures. Being a knife nerd, which knife are you using in this video, and what is your favorite steel and manufacturer?

Great recipe and explanation. Thank you for including how to make sauce substitute. I live in a small town and have limited resources to Asian food products. Hello from Corvallis US.
I just google searched Corvallis US. I drove pass your city when I went to Oregon coast. Your city has many big supermarkets that carry asian products. 😊 Thank you for watching.

@@sushibykunihiro7534 Sendai is the sister city to my hometown in California. I was there (in the early 90’s) during the Tanabata festival. I was in the parade that carried the shrine. Loved all of it!!! So many have no idea just how magical and beautiful Japan is. I can’t wait to come Back.

Thank you so much for your kind words! I'm thrilled to hear that you enjoy my recipes and teaching! 😊 I’ll definitely make an Onigiri video in the near future.
Wow thank you very much for sharing, this is one of my favourites too, just wondering if you know the protein content of that flour as it just may be called something else in another country. Also what brand dashi powder do you use.. I will definitely give this a try very soon.
Cake flour in Japan and the US contains about 7-9% protein. And all purpose flour contains 10-12% protein. Cake flour is plain wheat flour with finer particles and less protein content compared to all purpose flour. And for Dashi powder, I usually use Hondashi Instant Dashi. I hope it'll help. Thank you so much for watching.😊
Do you add shrimp, eel or octopus into the batter? Long time since I was in Japan and there are two styles. I was told, pancakes how you like. Any other items to add? Hiroshima style or Osaka?
@@sushibykunihiro7534 I put shrimp in for the protein, fine without. Your okonomi sauce recipe is so much better than the bottled. I always make my own mayonnaise and did what you said to make it Japanese - saki and soy sauce.
I’m a new subscriber to your channel and was amaze how delicious and easy to make your recipes. However in this recipe you use pork. I do not eat pork. Can I substitute other meat instead?
Yes, you can. But please make sure to slice it thinly otherwise the meat won't cook thoroughly. And, I recommend using relatively fatty part of meat. Fattier meat makes Okonomiyaki tastier. Thank you so much for subscribing to my channel. 😊
I've had this in Hiroshima, their style! So now I'm going to make your original version tonight. I'm going to have to guess how the tempura bits are made, but that should be straight forward🥴, I hope! I'll let you know how I get on. Well I did it, and it turned out vey well. Not having Kewpie mayo', I followed your instruction, I have to say this was the least successful part, as it was too runny and not very rich. Maybe adding an extra egg yolk could help it in future? I particularly liked your suggestion of mixing most ingredients in a bowl beforehand. All I have to do now is practice the 'flipping-over' -a required art!
Actually people started to add nagaimo in recent years. Okonomiyaki is still enjoyed without Nagaimo in Japan. I love nagaimo itself, but I'm not a big fan of nagaimo in Okonomiyaki since the inside remains a little soggy.
Do Japanese ppl ever mix up the pancake ingredients? Like adding bits of meat, green onion, etc? I bought the katsuoboshi grinder and a couple expensive extremely hard fish, so far I stink at grinding it..I just make “fish dust,” but the miso soup I made with the dashi I made from it was the best tasting I ever made..
angie definitely click on the description found top right it's called a couple things like the three dot menu or the meatballs menu n well this is a cooking show sooo I thought the meatball menu was cute but nonetheless now you know what it is n where to find it.... I'm hungry again so I'll heat-up my homemade frozen dumpling-guys n the crunchy chili oil umami-bomb dipping sauce, recipes are great but tasting n creating a sauce you can't live without is priceless!!... (well for me n other's of us....)

Back.
Dashi is not available in my country tho?
I love your recipes, your teaching and your good English. Would you please teach how to make Onigiri? I bought all the bags and shapes but need directions how to make fillings
Thank you so much for your kind words! I'm thrilled to hear that you enjoy my recipes and teaching! 😊 I’ll definitely make an Onigiri video in the near future.
Chef is rocki'n it. Please keep doing what you are doing - you are on a rocket to the top! Thank you, new subscriber here...
Thank you so much for subscribing to my channel. I appreciate your kind words. 😊🙏
Arigatougu gozaimasu, Kunihiro. I just made this okinimiyaki for lunch. My kid loved it. Easy and yummy. More recipe videos. maybe chahan?
I'll definitely make a Chahan video. Thank you so much for your suggestion.😊
@@sushibykunihiro7534 thank you for your message. can't wait to watch.
Great recipe !
Thank you very much. I hope you'll give it a try.😊
I have ! It’s amazing.
I love it.....'Oishiisou.💖💖💖
Arigato~. Please give it a try.😊
Delicious
Thank you for watching. 😊 Please enjoy tasty Okonomiyaki.
I don’t know where to get the tempura bits near me so I get calbee shrimp chips and cut them into small pieces to add to the batter.
Wow thank you very much for sharing, this is one of my favourites too,
just wondering if you know the protein content of that flour as it just may be called something else in another country. Also what brand dashi powder do you use..
I will definitely give this a try very soon.
Cake flour in Japan and the US contains about 7-9% protein. And all purpose flour contains
10-12% protein. Cake flour is plain wheat flour with finer particles and less protein content compared to all purpose flour. And for Dashi powder, I usually use Hondashi Instant Dashi.
I hope it'll help. Thank you so much for watching.😊
Yummy!
Would gluten free flour work in the same amounts?
Yes! I make mine only with gluten free flour and it works just as well. I use Bob's 1 to 1 baking flower.
Do you have or do u work in a restaurant in SoCal by any chance? I would love to go eat!
I used to run a Japanese restaurant named Sushi By H in West Los Angeles. I closed it and retired back in 2019.
@@sushibykunihiro7534 ohhh wow... what a waste.... we would all enjoy your food... what a pity.
Visiting my Asian grocery store soon!
I hope you can find all the ingredients there. Thank you for watching. Good luck. 👍
How about a recipe for hijiki? If that is too short for a video, another one or two sides. 😊
Wow ❤
Thank you so much for watching! 😊🙏
Do you add shrimp, eel or octopus into the batter? Long time since I was in Japan and there are two styles. I was told, pancakes how you like. Any other items to add? Hiroshima style or Osaka?
If you include those in the batter, your Okonomiyaki won't set properly. So, if you want to add, I suggest adding them on top of your Okonomiyaki. 😊
Your tip about mixing one portion at a time makes all the difference!
I mixed in the pickled ginger and shrimp, I do not eat pork.
I'm glad my tip helped. So happy to hear it turned out well.
Your version of Okonomiyaki sounds so delicious. I must try.😋
@@sushibykunihiro7534 I put shrimp in for the protein, fine without. Your okonomi sauce recipe is so much better than the bottled. I always make my own mayonnaise and did what you said to make it Japanese - saki and soy sauce.
My 31 yo son is gluten free. I use all purpose 1:1 GF flour, and rice crispies for the crunch
Rice crispies is a good idea. I never thought about them. I must try next time. 😁
It would be nice if you made more videos. More frequently
I'll try to make videos more frequently. Thank you so much for watching my new video..😊
@@sushibykunihiro7534 You’re really nice to watch. I truly enjoy them
I’m a new subscriber to your channel and was amaze how delicious and easy to make your recipes.
@@sushibykunihiro7534 thank you very much
Hi.. can u teach me more .. I am having a small japanese eatery place here to philippines.. yurushiku kudasai.
Thank you for watching the video. 😊 Flipping over part will be so much easier with a bigger turner.
Takoyaki and ramen, please
Yes, I will definitely. Thank you so much for your suggestions.😊🙏
is the addition of nagaimo regional or optional?

We don't have the sauce here in Tampa. Please, pretty please make a sauce recipe.
I mentioned alternatives to Okonomiyaki sauce and Japanese mayonnaise. Also please check the description below the video.😊
angie definitely click on the description found top right it's called a couple things like the three dot menu or the meatballs menu n well this is a cooking show sooo I thought the meatball menu was cute but nonetheless now you know what it is n where to find it.... I'm hungry again so I'll heat-up my homemade frozen dumpling-guys n the crunchy chili oil umami-bomb dipping sauce, recipes are great but tasting n creating a sauce you can't live without is priceless!!... (well for me n other's of us....)
Can i use beef here?
Yes, you can. Beef makes delicious okonomiyaki too.😊
Have you ever been told you sound similar to the voice actor of Francis from Cooking with the Dog?
Yes. So many times.🤣 But, I'm not him.
@@sushibykunihiro7534 now I know for sure! Thank you, I love watching your videos!
After seeing your recipe, I feel like eating food. Don't forget to put on the khal!
