- Healthy & High-protein Blueberry Chia Pudding Parfait💜 Chia seeds are a great source of omega 3s and fiber! Chia pudding combined with the fresh and creamy blueberry yogurt layer and crunchy granola is a perfect combo😍 The Greek yogurt I use contains 13g protein per 100g, so this whole parfait contains about 30g protein💪🏻

For the chia pudding:
2 tablespoons chia seeds
1/2 cup milk of choice, I used almond milk (120 ml)
1/2 - 1 teaspoon maple syrup
optional: 1/2 teaspoon vanilla extract
•
For the blueberry yogurt layer:
3/4 cup (lactose-free) low fat Greek yogurt (180 ml / about 200g)
1/4 cup blueberries, I used thawed frozen wild blueberries (60 ml / 40g)
•
Toppings:
a few tablespoons of homemade granola (recipe below)
•
1. Mix together all the ingredients for the chia pudding in a bowl or a jar
2. When the mixture is well combined, let it sit for 5 minutes and then mix again. Let set in the fridge for at least 2 hours (or overnight)
3. Once the chia pudding is ready to serve, make the yogurt layer and spoon on top of the chia pudding. Add the toppings and enjoy!

Recipe for the granola:
2 cups gluten-free oats or buckwheat flakes (480 ml)
1/4 cup melted coconut oil (60 ml)
3 tablespoons maple syrup or sweetener of choice
2 teaspoons vanilla extract
2 teaspoons cinnamon

1. Mix all the ingredients together.
2. Spread the mixture on a baking pan lined with parchment paper.
3. Bake at 180 Celsius degrees / 350 in Fahrenheit for 20-25 minutes (mixing in between)

I make big batches of chia seed pudding weekly. I alternate flavors between vanilla, coconut and chocolate.
It's the perfect snack and nutrient dense depending on the toppings. Being a busy vet, it gives me the energy I need
Do you just add coconut flakes or do you use coconut extract?

Thank you so much for the food & healthy drink recipes. However, I'm trying to get away from processed foods & dairy products. Are there any good substitutes??.
I use Ripple Original Unsweetened pea milk. (More calcium than dairy) Instead of dairy. Whole fat Greek yogurt is fermented so allowed in dairy free diets; low-fat is not on approved list for antii-inflammatory diets.
If you're not going to eat processed foods, don't substitute foods. Because that's exactly what you're doing with processed foods. Your substituting real food for fake ass food with foam in it, sodium, lead, etcetera
My mother told me to eat natural foods like fruits and vegetables.
Please do not look for substitutions for foods. This is why we have organic foods available.

You either grind them or let them soak. Grinding them is the prefered method for absorption but there's not that much of a difference.
